SPECIAL FRIED RICE
Twist on the typical fried rice found at a typical Chinese restaurant. Any meat can be used, but goes best with shrimp, bacon, spam, ham, Chinese sausage, or pork. If each step is carefully followed, and the pan is always HOT when cooking, then this fried rice is sure to be a hit!

Steps:
- Heat 2 teaspoons canola oil in a large wok or skillet over high heat until smoking.
- Beat eggs and water together in a bowl until smooth. Pour beaten egg mixture into the skillet, let it cook in the oil briefly to begin to firm, and then scramble lightly with a wooden spoon until the eggs are cooked and shiny, 2 to 3 minutes. Remove cooked eggs to a plate.
- Pour 1 teaspoon sesame oil into the hot pan. Add enough canola oil to cover the cooking surface of the pan and heat to smoking. Saute onion and garlic in oil until fragrant, 1 to 2 minutes; add peas and carrots and cook until hot, 1 to 2 minutes more. Return cooked eggs to the pan.
- Gradually add rice to the skillet, breaking and tossing chunks to break into individual grains and mixing with vegetables; cook and stir until the rice starts to turn a slight brown color and is completely hot, 2 to 3 minutes.
- Stir soy sauce, fish sauce, sriracha sauce, sugar, salt, 1/2 teaspoon white pepper, and monosodium glutamate into the rice mixture; continue to cook and stir until the grains of rice are no longer sticking together, 2 to 3 minutes more. Remove pan from heat and sprinkle green onion and cilantro over the fried rice; toss to mix.
- Peel outside skin of cucumber with vegetable shredder to create a ragged design on the outside. Slice cucumber diagonally and arrange in a circle around the serving platter. Serve rice in middle of platter, topping with additional green onion and a dash of white pepper.

I am always trying to raise the bar on fried rice recipes. This one reminds me of some Vietnamese versions and has a hint of sweetness both from the lup cheong and the ketjap manis. With char siu it will taste more distinctively Chinese.

- Cook the eggs in a thin layer in a skillet and then chop and set aside.
- Cook onions in oil in a hot wok until they just begin to brown; add garlic and stir-fry until fragrant.
- Crumble the rice between your fingers so there are no clumps and add to the wok with additional oil if needed to keep from sticking, season it with salt and pepper, and stir-fry until it is nicely separated on the grains.
- Move the rice to one side and add the sausage/pork/shrimp/chicken mixture, cooking that part until the sausage/pork renders any fat and the shrimp turn opaque.
- Stir in the peas and carrots, scallions, bean sprouts, and chopped egg and stir-fry until the bean sprouts go limp or the carrot is tender, whichever way you want to test it.
- Stir in the soy sauce, sweet soy sauce, and sesame oil, mixing well, then serve.

This comes from the Peking House restaurant in Green Bay, Wisconsin. Easily adaptable to what you have on hand, including any meat you like, or use tofu. The cook times are approximate since none were given. It cooks fast, though, if you are using all leftover rice, eggs, and meat, which this recipe assumes. If you have to cook the meat, scramble eggs, etc. then it will take longer. It's best to use leftover rice.

- Heat 1 teaspoon of the vegetable oil in a wok over medium-high heat. Pour in the onions, and cook until just set; set aside. Increase the heat to high, and pour another 1 teaspoon of oil to the wok. - 1. First, a couple of hints.... 1. A wok would be great, but, not necessary! Use a large sauté or frying pan if you don't have a wok. 2. Heat your pan over medium high heat until it is very hot! 3. Have all your ingredients ready to go when you start cooking. The process goes very quickly! 4. *If at all possible, use cooled or refrigerated rice. The rice grains will be firmer and won't get mushy during the cooking process. 5. Keep things moving in your pan! Use a spatula or large spoon, but, keep stirring and tossing everything! 6. Let's get started!
- 2. Heat your wok or pan over medium high heat until very hot. Add oil, then your onions and carrots.
- 3. Keep the veggies moving, when the onions and carrots start to soften, add the garlic and cook for another 30 seconds.
- 4. Now, looking at your vegetable additions, decide which will take the longest to cook and add those vegetables to the pan first! For instance, broccoli, cabbage and asparagus will take the longest, put those in the pan first and let them cook for 2 - 3 minutes before adding mushrooms, peas or spinach.
- 5. Cook the veggies until crisp tender (maybe 5 - 6 minutes). Remember, keep everything moving!
- 6. Add in the rice, breaking up any clumps, keep everything moving and cook for 2 minutes to heat the rice.
- 7. Add in your protein and mix this all together, cook for 2 - 3 minutes to heat your protein.
- 8. Toss in scallions, mix and serve. Top with additional scallions and peanuts, if desired.

- The easiest way to get the chicken and steak sliced into thin strips is to roll the thin piece of meat, then slice it.
- Season the shrimp, chicken and steak with salt.
- Heat a large nonstick wok or deep skillet over medium-high heat. When hot spritz with oil and add the steak, cook about 2 to 3 minutes turning halfway then set aside on a plate.
- Add the chicken, cook 2 to 3 minutes, stirring and set aside with the beef.
- Add the shrimp and cook 2 to 3 minutes, stirring. Set aside with the other meat.
- Heat 1 teaspoon of the oil in a large nonstick wok or deep skillet over medium- high.
- Add ginger, garlic and the scallion whites and cook, stirring, until fragrant, about 1 minute. Add the cauliflower and cook, stirring occasionally, until heated, 3 to 4 minutes. Push to one side.
- Add the remaining 1/2 tablespoon oil and swirl around the skillet to evenly transfer, add the cooked rice in an even layer.
- Cook, without stirring, 2 to 3 minutes, or until the bottom becomes slightly crispy.
- Continue to cook, stirring occasionally, 1 to 2 minutes, or until combined.
- With a spoon or spatula, push the rice to one side of the wok or skillet. Crack the eggs onto the other side.
- Cook, constantly stirring the egg, 30 to 60 seconds or until cooked through. Mix the rice and egg to thoroughly combine.
- Return the cauliflower, reserved shrimp, steak and chicken and scallion greens to the skillet and toss until warmed.
- Stir in the soy sauce, rice vinegar and sesame oil.
- Serve immediately. Serve with sriracha sauce, if desired.
CHINESE SPECIAL FRIED RICE
Steps:
- Cook rice according to package directions. While rice is cooking, heat a wok or large frying pan over medium-high heat. Pour in sesame oil and stir in onion. Fry until golden, then add garlic. When garlic is lightly browned, mix in prawns, ham and chicken. Lower heat to medium and stir in celery, carrot, green pepper and peas. Fry until vegetables are tender. Stir in beaten egg and cook just until egg is scrambled and firm. When rice is done, mix thoroughly with vegetables and stir in soy sauce. Adjust seasoning to your preference and serve immediately.
NASI GORENG ISTIMEWA (SPECIAL FRIED RICE)
Fried rice is a breakfast dish in Indonesia and I believe Holland too. It is often made from the boiled rice that has been left over from the previous night's meal. My grandmother says it got it's name because it was originally made to serve Hitler's troops. It was nutritional for the soldiers and easily made from leftovers the army cook had on hand. Hitler was evil but he did make sure his troups ate a nutritious breakfast.

- Slice your onion lengthwise.
- Heat the oil and fry the onion, garlic, chili and shrimp paste until the onion is soft.
- Add the rice and salt to taste. Mixing thoroughly while constantly stirring until every grain of rice is coated; then add the soya sauce and mix again until the colour is even throughout.
- The rice should take on a nice orange-red tint from the chili powder.
- Cooked meat or prawns can be added with the soya sauce. Onion crisps (Goreng Bawang) is used as a garnish.

This is my early morning easy fried rice. I make it for breakfast when I just don't know what I want to eat for breakfast but have just about everything lol. I also end up cooking up some other kind of meat to go along with it.

- First have or cook the 3 cups rice.
- In a large frying pan on low heat warm the rice, season with some of the pepper & soy sauce.
- In a small frying pan scramble the eggs till a soft scramble.
- Then add in the frozen vegetables & onions to the rice.
- Then add in the spam to the rice mixture.
- Then flip the eggs in & cut into the rice.
- Then use the rest of the season & some more soy sauce to season.
- Note: If you have to cook the rice first it will take longer then 10 mins. Uncooked rice takes anywhere up to 20 to 25 mins to cook.
