Found @ Cooks.com when I went searching for recipes to use a nearly full 2 lt bottle of Club Soda guests left for us (Time does not include chilling time under refrigeration). *Enjoy* !

1 (46 ounce) can pineapple juice (Well-chilled)
1 (16 ounce) can cream of coconut
1 quart vanilla ice cream
1 (28 ounce) bottle club soda (Well-chilled)

Steps:

  • In a container you can easily refrigerate, combine pineapple juice & cream of coconut.
  • Mix well, cover & refrigerate.
  • To serve: Stir mixture well & transfer to your punch bowl. Spoon ice cream into the mixture & slowly pour in Club Soda.

5 cups pineapple juice
1 liter 7-Up soda
1 (15 ounce) can real cream of coconut
2 limes
1 1/2 cups light rum (optional)

Steps:

  • Chill all ingredients first.
  • Mix 2 cups of the pineapple juice with cream of coconut in a blender.
  • Now add this mixture with the remaining pineapple juice, 7-up soda, juice of 1 lime and the rum if you desire.
  • Garnish cups with cut lime slices.
  • Serve over ice cubes or crushed ice.

Wow, what a delicious punch. I'm a big fan of pina colada's so I knew I had to try this. It's sweet, creamy and hits the spot. It makes you feel like you're sitting on a beach on a deserted island. This would be great served at any party or just on a hot day. A great summertime drink!

1 can(s) frozen pina colada mix; thawed
1 can(s) cream of coconut, 8.5 oz.
1 small can crushed pineapple; 8 oz.
1/2 gal pineapple sherbet
1/2 gal vanilla ice cream
1 2-litre Sprite

Steps:

  • 1. Mix first 3 ingredients (pina colada mix, cream of coconut and pineapple) together.
  • 2. Add the final 3 ingredients (sherbet, ice cream, and Sprite) just before serving. Mmmmm... My sweet tooth is wishing for some right now!!

Number Of Ingredients 5

8 ounces (1 cup) well-stirred canned cream of coconut
2 1/2 cups unsweetened pineapple juice
1 1/2 cups light rum
2 cups ice cubes, or to taste
a wedge of fresh pineapple with its leaves for garnish plus additional small, thin wedges for garnishing the drinks

Steps:

  • In a blender blend together, in batches if necessary, the cream of coconut, the pineapple juice, and the rum and transfer the punch to a large pitcher. Stir in the ice cubes and garnish the punch with the pineapple wedge. Garnish each drink with a pineapple wedge.
