3 medium peaches, halved
1 tablespoon honey
1 can (11.3 ounces) peach nectar, chilled
2 bottles (750 ml each) champagne or sparkling grape juice, chilled

Steps:

  • Line a baking sheet with a large piece of heavy-duty foil (about 18x12 in.). Place peach halves, cut sides up, on foil; drizzle with honey. Fold foil over peaches and seal. , Bake at 375° for 25-30 minutes or until tender. Cool completely; remove and discard peels. In a food processor, process peaches until smooth., Transfer peach puree to a pitcher. Add the nectar and 1 bottle of champagne; stir until combined. Pour into 12 champagne flutes or wine glasses; top with remaining champagne. Serve immediately.

2 ripe peaches, seeded and diced
1 tablespoon freshly squeezed lemon juice
1 teaspoon sugar
1 bottle chilled prosecco sparkling wine

Steps:

  • Place the peaches, lemon juice, and sugar in the bowl of a food processor fitted with a steel blade and process until smooth. Press the mixture through a sieve and discard the peach solids in the sieve. Place 2 tablespoons of the peach puree into each Champagne glass and fill with cold prosecco. Serve immediately.

California White Peach and Sparkling Wine Cocktail (aka Bellini) image

1/2 cup sugar
1/2 vanilla bean, split and seeds scraped
2 ripe white peaches, peeled, halved, pitted and chopped, plus 1 cut into thin slices
Very cold California sparkling rose wine, as needed
Fresh mint sprigs, for garnish

Steps:

  • Combine the sugar, 1/2 cup water, vanilla bean and seeds in a small saucepan. Bring to a boil and cook until the sugar is melted. Remove the vanilla bean, transfer to a bowl, cover and refrigerate until cold, about 1 hour.
  • Combine the vanilla sugar syrup and chopped peaches in food processor and process until smooth. Put some of the puree into the bottom of 4 Champagne flutes, or a pitcher. Top with cold sparkling wine and garnish with sliced peaches and mint sprigs.

1/4 c. fresh or frozen strawberries, plus more for garnish
1/2 c. peach schnapps
1 bottle Prosecco or sparkling white wine

Steps:

  • Add the peaches, strawberries, and peach schnapps to the pitcher of a blender. Cover tightly with the lid, and blend at high speed until smooth.
  • Divide the peach mixture among six glasses. Garnish each glass with more peaches or strawberries, if you like. Fill each glass half full with prosecco; stir, and add more prosecco, if you like.
