1/2 cup extra virgin olive oil
2 large green bell peppers, seeded and sliced
1 medium onion, sliced and separated into rings
6 garlic cloves, finely chopped
2 1/4 lbs boneless stewing beef, trimmed of large pieces of fat and cut into irregular shapes
1 1/4 lbs boiling potatoes, peeled and cut into 1 1/2 inch chunks
1 tablespoon salt
1 teaspoon fresh ground black pepper
1/4 teaspoon freshly ground clove
1 bay leaf
1 pinch saffron thread, crumbled in a mortar
1 cup dry white wine

Steps:

  • Put the olive oil, bell peppers, onion, garlic, and beef in the stew pot, in that order.
  • Layer the potatoes on top of the beef.
  • Add the salt, pepper, cloves, bay leaf, and saffron.
  • Pour the wine over and add enough water to cover.
  • Bring to a boil, reduce the heat to low, cover, and cook until the meat is very tender, about 2 hours.
  • Makes 4 servings.
  • Serve immediately Real Stew.

This is a delicious and easy recipe. I got it from a Publix store cooking demonstrator that they always had in the store(Publix is the only thing I miss from Florida). I love it with a loaded green salad. Uses a refrigerated Pot Roast package, but you can't tell.

1 1/2 cups water
2 tablespoons olive oil, divided
1/4 teaspoon salt
1 tablespoon roasted garlic
17 ounces fully cooked beef roast (like Hormel or Tyson)
8 ounces tomato sauce (like Goya)
1 tablespoon minced onion
2 tablespoons green olives, sliced
1 tablespoon capers
4 drops hot pepper

Steps:

  • Preheat large sauce on medium heat for 2-3 minutes.
  • Place 1 tablespoon oil and garlic in pan.
  • Cook and stir for 1 minute or until heated and fragrant.
  • Stir in all remaining ingredients and cook and stir for 5 minutes or until thoroughly heated.
  • Remove beef from heat and shred meat using 2 forks.

I got this recipe out of an Uncle Ben's Rice cookbook about 17 years ago, and it's always been one of my kids' favorites. Very inexpensive and easy to make. I like this because it's got a lighter and tangier flavour than most Spanish rice recipes and the fresh tomatoes make it wonderful.

1 lb lean ground beef
1 cup uncle ben's brand converted rice (or converted rice of your choice)
1 medium onion, chopped
1 garlic clove, minced
2 1/2 cups tomato juice (I always just mix equal amounts of tomato sauce and water)
1/4 cup good quality red wine vinegar
1/2 teaspoon salt
1/2 teaspoon Tabasco sauce
1/4 teaspoon black pepper
1 green pepper, chopped
1 tomatoes, chopped

Steps:

  • In large skillet, brown the beef and drain.
  • Add the rice, onion, garlic, tomato juice, vinegar, salt, pepper and Tabasco, stir well.
  • Bring to a boil, reduce heat to low and cover tightly.
  • Simmer for 20 - 30 minutes or until the rice is done.
  • Remove from heat, stir in the fresh green pepper and tomato, cover and heat for 5 minutes or till the green pepper is tender-crisp.

1 lb sirloin tip steak, trimmed and cut into 1 inch cubes
1/2 teaspoon sweet paprika
1 green pepper, chopped
1 cup canned whole tomatoes, chopped
1 onion, chopped
2 tablespoons olive oil
1 bay leaf
3 medium potatoes, peeled & cut in 1 1/2 inch chunks
2 garlic cloves, minced
pimientos (to garnish) or roasted red pepper, strips (to garnish)
cooked green peas (to garnish)

Steps:

  • Preheat oven to 350°F Brown the beef tips in oil. When half cooked, add green pepper, onion, bay leaf, garlic and paprika.Cook with tomatoes over medium heat for 15 minutes.
  • Place potatoes with meat and tomato mixture in casserole dish and bake for 40 minutes. Decorate with peas and pimento strips.
