A great low-carb, paleo, clean eating recipe for shrimp scampi where noodles are substituted with spaghetti squash. If you prepare the spaghetti sqash in advance, it is ready in minutes.

6 tablespoons olive oil, divided
1 small spaghetti squash, halved and seeded
salt and ground black pepper to taste
4 cloves garlic, minced
1 pound uncooked medium shrimp, peeled and deveined
1 pinch red pepper flakes, or to taste
1 lemon, juiced
½ lemon, zested
2 tablespoons chopped fresh parsley

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet with 2 tablespoons olive oil. Season spaghetti squash with salt and pepper and place cut side down on the baking sheet.
  • Bake in the preheated oven until easily pierced with a fork, about 40 minutes. Remove from oven and cool until easily handled. Scrape insides of squash into spaghetti strands with a fork.
  • Heat 4 tablespoons olive oil in a large skillet over medium-high heat and cook garlic until fragrant, about 2 minutes. Add shrimp and season with salt, black pepper, and red pepper flakes. Saute shrimp until pink, tossing often to prevent burning, about 5 minutes. Remove from heat and add spaghetti squash strands. Mix in lemon juice and zest. Serve sprinkled with parsley.

½ spaghetti squash, halved vertically and seeded
1 tablespoon olive oil
2 cloves garlic, minced
½ teaspoon red pepper flakes
4 oz shrimp, peeled, deveined
¾ teaspoon salt
¼ teaspoon ground black pepper
1 lemon, zested
1 lemon, juiced
2 tablespoons fresh parsley, chopped

Steps:

  • Microwave squash on high until tender, about 10 minutes. Shred the flesh of the squash and discard the skin.
  • Heat olive oil in a pan over medium heat. Once the oil begins to shimmer, add the garlic, red pepper flakes, and shrimp, and cook until shrimp are pink and start to curl, about 2 minutes.
  • Add the lemon zest, salt, pepper, and lemon juice, and cook for 1 minute.
  • Remove from heat, add parsley and shredded squash, and stir to combine.
  • Enjoy!

1 spaghetti squash
1/2 teaspoon red pepper
3 garlic cloves
1 lb large raw shrimp
10 ounces spinach
1/2 teaspoon salt
1/4 cup white wine or 1/4 cup broth

Steps:

  • Preheat oven 375. Cut squash in rings, scoop out seeds. Arrange foil lined cooking sheet with cooking spray. Bake for 45 minute Cool slightly and scoop out strands.
  • Heat wine/broth in skillet add pepper & garlic, cook 30 sec. Add shrimp and sauté until done. Add spinach until it wilts. Add squash to pan and sprinkle with salt. Serve.
  • 2 cups = 349 cal, 20 protein, 24 carbs, 6 Fiber.

2 (3- to 3½-pound) spaghetti squashes
8 tablespoons butter, divided
1½ pounds peeled and deveined large fresh shrimp
2 large shallots, minced
3 cloves garlic, minced
1 cup dry white wine
½ cup chicken broth
½ cup heavy whipping cream
2 tablespoons capers
1 teaspoon Creole seasoning
¼ teaspoon crushed red pepper
¼ cup chopped fresh parsley

Steps:

  • Preheat oven to 375°. Line a baking sheet with aluminum foil.Prick squashes all over with a fork. Place on prepared baking sheet, and roast until tender, about 1 hour and 20 to 30 minutes. Let cool 15 minutes, then slice in half lengthwise. Use a fork to shred squash and place flesh in a large bowl, discarding seeds and skins.In a large skillet, melt 1 tablespoon butter over medium-high heat. Add shrimp and cook, turning occasionally, until pink and firm, about 5 minutes. Remove shrimp and set aside. Melt 1 tablespoon butter in skillet over medium-high heat. Add shallots and garlic; cook, stirring occasionally, 6 minutes. Add wine and broth, increase heat to high, and reduce liquid by two-thirds. Reduce heat to medium-low. Stir in remaining 6 tablespoons butter, cream, capers, Creole seasoning, and red pepper. Cook until butter has melted and sauce is smooth, about 3 minutes. Stir in squash, shrimp, and parsley. Serve immediately.
