MONTEREY CHICKEN SPAGHETTI CASSEROLE
Monterey Chicken Spaghetti Casserole - my whole family went crazy over this easy chicken casserole!! Even our super picky eaters! Chicken, spaghetti, sour cream, cream of chicken, spinach, Monterey Jack Cheese, and french fried onions. Makes a great freezer meal! - Preheat oven to 350ºF. Lightly spray a 9x13-inch pan with cooking spray.
- Cook spaghetti according to package directions. Drain.
- In a large bowl, combine cooked chicken, cream of chicken soup, sour cream, drained spinach, 1 cup cheese, garlic and 1/2 can of French's French Fried Onions.
- Stir in cooked spaghetti. Pour into prepared pan.
- Sprinkle remaining shredded cheese and onions on top of pasta mixture.
- Bake, uncovered, for 40 to 50 minutes.

- Cook spaghetti according to package directions. Meanwhile, in a large bowl, beat egg. Add sour cream, Parmesan cheese and garlic powder. Drain spaghetti; add to egg mixture with Monterey Jack cheese, spinach and half of the onions. Pour into a greased 2-qt. baking dish. Cover and bake at 350° for 30 minutes or until heated though. Top with remaining onions; return to the oven for 5 minutes or until onions are golden brown.

- Preheat oven to 350 degrees F (175 degrees C). Grease a deep 9x13 inch baking dish.
- Bring a large pot of salted water to a boil over high heat. Stir in the spaghetti. Boil the pasta until cooked through but still firm to the bite, 8 to 10 minutes. Drain well.
- Brown ground beef and onion in a large skillet over high heat; drain fat. Stir in the spaghetti sauce, sour cream, and 1 cup of the mozzarella. Mix in the cooked pasta. Transfer pasta mixture to prepared baking dish. Top with remaining 1 cup of mozzarella and the Parmesan cheese. Cover pan with aluminum foil.
- Bake in preheated oven until hot and bubbly, about 30 minutes.

CHICKEN SPAGHETTI WITH FRENCH FRIED ONION TOPPING
This is not "Italian style" - no tomatoes or Italian seasonings. It's really delicious...creamy and cheesy with a cruncy topping. My husband's ex-wife gave this recipe to me and I've thanked her many times!

- Preheat oven to 375.
- Cook spaghetti in a pot of boiling water until just tender, about 7 - 8 minutes. Drain in colander.
- Heat oil in skillet over medium high heat.
- Add onions, chicken pieces and garlic.
- Sautee until chicken is lightly browned on all sides. Remove from heat.
- Mix all three soups together, along with a cup of water. Add spaghetti and chicken (make sure to scrape the pan and get all those juicy pieces).
- Pour into a 13" x 9" casserole dish.
- Top with mozzarella cheese.
- Cook 30 - 35 minutes, or until bubbly.
- Add onion rings and cook another 10 minutes, or until lightly browned and crunchy.

- Cook spaghetti according to package directions; drain. Meanwhile, in a large skillet, cook the beef, onion and garlic over medium heat until beef is no longer pink, 6-8 minutes, breaking up beef into crumbles; drain. Stir in the spaghetti sauce, salt and pepper; bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes, stirring occasionally., In a small bowl, mix cream cheese and sour cream until blended; stir in green onions.
