Broccoli rabe can take whatever you throw at it and still shine. Its mild but distinctive bitterness dominates almost anything you cook it with - but what's wrong with that? So a pasta sauce that features it teamed with garlic and chili flakes is a natural. Add bread crumbs for crunch and the dish is a real winner. You can use the same pot for cooking the broccoli and the pasta; you can use the same skillet for toasting the bread crumbs and finishing the dish. The whole thing will be done within 20 or 30 minutes, and it will showcase broccoli rabe beautifully, as it deserves.

- Bring a large pot of water to a boil and salt it. Put 1/4 cup olive oil in a large skillet over medium-low heat. When oil is warm, cook garlic just until fragrant, 1 to 2 minutes. Add bread crumbs and red pepper flakes and cook until bread crumbs are golden, 5 minutes or so. Remove and set aside.
- Cook broccoli rabe in boiling water until it is soft, about 5 minutes. Remove with a slotted spoon, drain well and chop. Cook pasta in same pot.
- Meanwhile, add remaining oil to skillet over medium-low heat. Add broccoli rabe and toss well; sprinkle with salt and pepper. When it is warm add garlic and bread crumbs and mix well.
- When pasta is done, drain it, reserving a little cooking water. Toss pasta in skillet with broccoli rabe mixture, moistening with a little reserved water if necessary. Adjust seasonings and serve with freshly grated Parmesan.
SPAGHETTI WITH GARLICKY BREAD CRUMBS AND ANCHOVIES
This is a take on a classic dish from Southern Italy that tosses pasta with toasted, seasoned bread crumbs called pangrattatto. In this version, the bread crumbs are sautéed in olive oil with garlic and anchovies until golden and crisp, and the pasta is coated with egg yolks, hot sauce and Asian fish sauce for creaminess and depth. You can make the bread crumbs up to 3 hours ahead; longer than that and you risk letting them go soggy. Use good-quality bread crumbs here, either homemade or purchased from a bakery. The next best choice is panko, Japanese bread crumbs that you can find in large supermarkets. If you have any of the pangrattatto mixture left over, store it in the refrigerator and give it a brief sauté to revive it before using.

- Bring a large pot of salted water to a boil. Add the pasta and cook, stirring occasionally, until tender but still firm to the bite, about 8 minutes.
- Meanwhile, in a large saute pan, heat the oil over medium-high heat. Add the bread crumbs and 1/4 teaspoon each of the sea salt and pepper. Stirring constantly, cook the breadcrumbs until golden brown, about 2 minutes.
- Drain the pasta, reserving 1 cup of the pasta water. Stir the pasta into the bread crumb mixture. Remove the pan from the heat and add the black and green olives. Add the Parmesan cheese and 3 tablespoons of the parsley. Season the pasta with salt and pepper, to taste. Gently toss to coat, adding reserved pasta water, if needed, to loosen the pasta. Transfer to a large serving bowl and garnish with the remaining parsley.

- Preheat oven to 400 degrees F (200 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Transfer ground beef to a mixing bowl.
- Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, about 12 minutes. Drain. Transfer spaghetti to bowl with ground beef and mix in spaghetti sauce and Parmesan cheese.

A great hit at any gathering. Contain yourself, you'll want to eat the whole loaf. You'll need to plan ahead just a bit. This recipe calls for a thawed loaf of Rhodes bread dough & it takes 6-8 hours for the bread to thaw at room temp. You can make the bread dough yourself or buy another brand. - Pre heat oven to 350* F. Lay out a large sheet of parchment paper (Do it. Don't even bother trying to go sans the paper. I'm 99% sure you'll make a mess when trying to transfer) & roll your loaf out into a 12x16 rectangle. Cover with plastic wrap & let it rest while you get everything else ready (10 min or so).
- Cook your spaghetti (or angel hair) according to directions & drain. Mix in the tomato sauce & vegetarian Italian sausage/hamburger (or use real meat-optional) & let it cool slightly while you continue to prepare.
- Cut your block of mozzarella into chunks.
- Melt the butter in a microwave safe dish & stir in the minced garlic & a few pinches of basil. Uncover the dough & using a pastry brush, brush a little more than 1/2 of the butter mixture onto the dough.
- Now spoon the spaghetti lengthwise in a 4-inch strip down the center of the dough- top with the mozzarella chunks.
- Make cuts 1 1/2 inches apart on the long sides of the dough to within 1/2 inch of the filling.
- Start braiding by folding the strips towards the filling- braid left over right, right over left, etc etc- all the way down.
- Finish the ends by pulling the strips over & tucking under the braid.
- Then brush the remainder of the garlic butter all over the top of the bread. Sprinkle with the parmesan cheese, a little more basil & some garlic powder. Add smoked paprika to taste, a pinch or two. Sprinkle parsley over the top.
- Slide the parchment paper to a large baking sheet & bake in your pre heated oven for 30 minutes, until golden brown. Let it rest for about 5 minutes & then slice to serve.

- 1. Roll out loaf into 12x16 rectangle. Cover with plastic wrap and let rest for 10-15 minutes. I roll it out on a piece of parchment paper to make transferring it easier.
- 2. Cook spaghetti according to directions for al dente. Drain and let cool slightly. Mix with sauce.
- 3. Remove wrap from dough. Place spaghetti lengthwise in a 4-in strip down the center of dough. Top with cheese cubes. You can add 1/2 lb. Italian Sausage or ground beef (cooked) on top of this if you want.
- 4. Make cuts 1 1/2 inches apart on long sides of dough within 1/2 inch of fillings.
- 5. Begin braid by folding top and bottom strips toward filling. Then braid strips left over right, right over left, etc. Finish by pulling last strip over and tucking under bread.
- 6. Transfer to sprayed baking sheet or I just leave it on the parchment paper and transfer to sheet. Brush with egg white. Sprinkle with parm, parsley, and garlic.

- 1. Spray counter lightly with non-stick cooking spray (or use parchment paper). Roll loaf or combined dinner rolls into a 12x16-inch rectangle. Cover with plastic wrap and let rest for 10-15 minutes. (I found it easier to roll out; put dough on sprayed baking pan; cover for 15 - 20 minutes. Finish spreading out with greased fingers...then I didn't have to worry how I was going to get filled bread onto baking pan. This worked well for me.)

- 3. I made a quick spaghetti sauce, using ground beef, pepperoni, garlic, red bell pepper, and spices. Try to make sure sauce is thick. I used paste, sauce, and seasonings.

- 5. Place spaghetti lengthwise in a 4-inch strip down the center of dough. I topped with a little more sauce, then added the cheese.

- Fill a 6-quart pasta pot three fourths full with salted water and bring to a boil for pasta.
- Tear bread into pieces and in a blender or food processor pulse to make coarse crumbs. Finely chop onion. Mince garlic. Rinse anchovies and pat dry. In a sieve rinse and drain peppers and olives. Cut peppers into 1‚-inch-long strips and quarter olives.
- In a deep 12-inch heavy skillet heat 2 tablespoons oil over moderate heat until hot but not smoking and stir in bread crumbs. Toast bread crumbs, stirring constantly, until golden and crisp, about 2 minutes, and transfer to a plate to cool. Wipe skillet clean.
- In skillet heat remaining 4 tablespoons oil over moderately high heat until hot but not smoking and cook onion, stirring, until golden brown on edges. Remove skillet from heat and add garlic and anchovies. Cook mixture over moderately low heat, stirring until fillets are dissolved, about 2 minutes. Carefully pour wine down side of skillet and simmer, stirring occasionally, until liquid is reduced to about 2 tablespoons. Remove skillet from heat and stir in peppers, olives, and 1/4 cup parsley.
- Cook pasta in boiling water, stirring occasionally, until al dente and ladle out and reserve 1 cup pasta water. Drain pasta in a colander and add to sauce with 1/2 cup reserved pasta water and salt and pepper to taste. Heat mixture over low heat, gently tossing (and adding more pasta water as needed if mixture becomes dry), until just heated through. Sprinkle pasta with remaining 1/4 cup parsley and some bread crumbs and serve remaining bread crumbs on the side.

- 1. I used some leftover spaghetti squash from dinner the day before..to prepare the squash do the following: With a sharp knife pierce a small squash 2 or 3 times deep. Microwave for 6 minutes...let set until you can handle it;then cut it open, remove seeds then scrape squash halves with a fork to release the strands.(use only 2 cups)
- 2. Heat oven to 350^ and spray an 8-inch loaf pan then place a piece of wax paper on the bottom and spray that too; set aside.
- 3. Using you mixer combine the eggs, maple syrup and vegetable oil; blend well,1 minute. Stop mixer and add the flour and remaining 6 dry ingredients; turn mixer to low speed and blend lightly.
- 4. Remove bowl from mixer and stir in nuts and squash by hand using a spatula. Pour batter into prepared pan and bake for 55 minutes, or until toothpick test comes out clean.
- 5. Cool on wire rack 10 minutes. Remove from pan and peel off wax paper and cool completely before cutting. This did not cook over the pan, but to be on the safe side, I placed the pan on my small cookie sheet with sides.

- Prepare garlic bread: slice baguette in half lengthwise and slather in butter. Sprinkle minced garlic and garlic salt over both sides. Put halves together and wrap in aluminum foil.

- Bring a large pot of salted water with a wedge or two of lemon to a boil. Add the broccoli rabe to simmer for about five minutes; until the stems become tender. Drain the water and set aside the broccoli rabe. Heat a large frying pan with the olive oil; add the chopped garlic, wedge of lemon, red pepper flakes, salt and black pepper and the broccoli rabe and sauté on low while preparing the spaghetti; do not burn the garlic. Add the cup of chicken broth to the pan and simmer on low. Prepare the spaghetti as directed. In a food processor add the cubed bread and all of the other ingredients. Process until bread crumbs are formed. Heat a large frying pan with the olive oil and add the bread crumbs to get a slight golden color and crispness. In a serving platter drizzle a little olive oil. - Pierce spaghetti squash with a fork 10 times and place whole in a slow cooker. Cook on Low until very soft, about 4 hours. Halve squash and remove seeds.

- 1. Take dough and cut into 6 pieces. Roll out to about 8 inches in diameter.
- 2. Take 1 extra large muffin tin tray and flip upside down. Spray outside of cavity wells with cooking spray.

- 4. Start to boil water in large pan for spaghetti. Drain.
- 5. Mix spaghetti with favorite tomato sauce.
- 6. Remove bread bowl from cavities, brush with egg wash or butter. Sprinkle with salt to season.
- 7. Fill bottom of bowl with meatball, mozzarella ball or candy. (or other surprise treat). Add spaghetti to fill bowl. Garnish with parsley. Serve
SPAGHETTI WITH ANCHOVIES AND BREAD CRUMBS (SPAGHETTI CON ACCIUGHE E MOLLICA)
Steps:
- 1. If using salt-packed anchovies, rinse them under cold water. With your fingers, pry them open along the back and lift out backbone to yield 2 fillets. Rinse fillets again to remove any fine bones; pat dry on paper towels. If using anchovy fillets in olive oil, lift out of jar or tin, leaving oil behind (no need to rinse oil-packed fillets). Finely chop 6 fillets; set aside. Cut remaining 5 fillets into 4-5 pieces each; set aside. 2. In a 8-qt pot, bring 5 qts. well-salted water to a boil over high heat. Add pasta and cook, stirring occasionally, until tender to the bite, about 10 mins. 3. Meanwhile, put olive oil, garlic, finely chopped anchovies, and chilies in a deep 12-in. frying pan (with at least 2-in. sides) or wide pot and cook over low heat, stirring, until anchovies dissolve. Stir in parsley and remaining anchovies; turn off heat. 4. When pasta is almost done, set aside. 1 cup of the cooking water, then drain pasta and transfer to pan of anchovy sauce. Toss quickly until all the strands are well coated. Add some reserved cooking water if pasta seems dry. Set aside 2 tbsp. of bread crumbs, then add remainder to pasta and toss again. 5. Divide pasta among 8 warm bowls and sprinkle each serving with some reserved bread crumbs. Serve immediately.

Steps:
- Dissolve yeast in warm water.
- Add sugar, salt, cheese, seasoning, oil and flour.
- Stir & add additional flour as needed to form a soft dough.
- Turn onto a floured surface & knead until smooth & elastic.
- Place in a greased bowl, turning once to grease all sides of dough.
- Cover & let rise until double.
- Punch down and turn onto floured surface.
- Shape into loaf & place in a greased 5x9x3" loaf pan.
- Cover & let rise until double.
- Bake @350 (preheated) for 35-40 minutes.
- Cooking time includes the rising of the dough.
SPAGHETTI STUFFED GARLIC BREAD
I adapted this recipe from Rhodesbread.com. It's the perfect comfort food - spaghetti and garlic bread all in one.

Steps:
- 1. Completely thaw frozen bread loaf. Easiest method is to place loaf on lightly greased cookie sheet and stick in a cold oven for 8 hours.
- 2. Spray work area lightly with non-stick cooking spray as well as rolling pin. Roll loaf into a 12 x 16 rectangle. Cover with plastic wrap for 15 minutes.
- 3. Combine sauce and meat. Season to your taste. My preference is to add some Texas Pete, minced onions, and garlic powder.
- 4. Preheat oven to 350.
- 5. Remove wrap from dough. Place spaghetti lengthwise in a 4-inch strip down center of dough. Make cuts 1 1/2-inches apart on long sides of dough to within 1/2-inch of spaghetti.
- 6. Top spaghetti with meat sauce. Top meat with cubed cheese.
- 7. Begin braid by folding top and bottom strips toward filling. Then braid strips left over right, right over left. Finish by pulling last strip over and tucking under braid. You can watch the video on how to make the braid at http://youtu.be/jIZhBvwW5yw
- 8. Lift the braid onto a baking sheet. I normally use foil for easy clean up.
- 9. Brush finished braid with egg white. Sprinkle on garlic powder, Parmesan cheese, and parsley flakes.
- 10. Bake for approximately 30 minutes at 350 degrees, until bread is a medium brown color. Allow to cool for 5 minutes before slicing.
- 11. Extra - I normally make extra meat sauce to pour on top of my serving. Enjoy!
