300g/10 oz spaghetti
2 tbsp / 30g unsalted butter
3 garlic cloves (, minced)
½ onion (, finely chopped)
1 cup / 250 ml tomato passata (/ tomato puree (Note 1))
3/4 cup / 185 ml heavy / thickened cream ((Note 2 for subs))
1/2 cup / 125 ml milk (, low fat)
3/4 cup / 30g parmesan (, finely freshly grated (Note 3))
1 tsp dried basil, or other herb of choice
1 tsp chicken or vegetable stock powder (, or 1 bouillon cube, crumbled (Note 4))
Finely ground pepper + salt

Steps:

  • Cook pasta in a big pot of boiling water for time per packet MINUS 2 minutes. Just before draining, scoop out a mugful of pasta cooking water.
  • Melt butter in large skillet over medium heat. Add garlic and onion, cook until translucent - about 2 minutes.
  • Add remaining ingredients. Stir until parmesan is melted. Turn heat up slightly and simmer for 2 minutes. Adjust salt to taste.
  • Add pasta. Toss for 1 to 2 minutes or until sauce thickens and is clinging to pasta instead of swimming on the base of the skillet (video shows this well). Use reserved pasta cooking water if required to thin the sauce out if it gets too thick.
  • Serve immediately, garnished with more parmesan and parsley if desired.

2 eggs
1/2 teaspoon kosher salt
2 cups all-purpose flour
2 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
1 teaspoon minced garlic
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh marjoram
Kosher salt and freshly ground black pepper
1/4 cup white wine
Parmesan, grated, for garnish

Steps:

  • In a large bowl combine 3/4 cup water, the eggs, salt and flour. Whisk well, until the dough is soft and sticky.
  • Heat the butter and oil in a large saute pan over medium-high heat, stirring constantly. When the butter begins to foam, add the garlic, chives, parsley and marjoram. Cook until the butter begins to brown, about 1 minute. Add the white wine and allow to reduce for a minute. Keep warm.
  • Bring a large pot of well-salted water to a boil. Transfer the spaetzle batter to a colander with small holes. Set the colander above the boiling water and, using a spatula or bench scraper, press the batter through the holes and directly into the water. Cook for 1 to 2 minutes, or until the spaetzle float to the surface. Drain and immediately add the spaetzle to the pan with the butter sauce. Over high heat, toss the spaetzle and the sauce together for 30 to 40 seconds, or until the spaetzle sizzles. Sprinkle with some grated Parmesan and serve.

1 1/2 cups all-purpose flour
Kosher salt
2 eggs
1/2 cup milk
1/2 cup mixed chopped herbs (parsley, chives, marjoram, oregano or dill are great)
Extra-virgin olive oil

Steps:

  • Bring a large pot of well salted water to a boil over medium heat.
  • In a small bowl whisk together the eggs and milk until they are a homogeneous mixture.
  • In a large bowl, add flour and make a hole in the flour. Add a pinch of salt and using a fork, gradually combine the milk/egg mixture with the flour. Mix until they are just combined. Stir in 1/4 cup of the herbs.
  • Place the batter in a colander over the boiling water. Using a rubber spatula or a spaetzle maker, push the batter through a colander into the boiling water. Boil the spaetzle for 2 to 3 minutes or until firm. Drain the spaetzle and place in a medium bowl. Add some olive oil and the remaining 1/4 cup of herbs. Toss to coat evenly and serve immediately.

Spaetzle in a mushroom-and-cream sauce is a fall or winter recipe from Northern Italy featuring the traditional German pasta.

4 tablespoons (1/2 stick) unsalted butter (divided)
1 small clove garlic (peeled and finely minced)
1 small shallot (peeled and finely minced)
1-pint mushrooms (cleaned and sliced)
1 tablespoon coarse sea salt
9 ounces/250 grams dried spaetzle/spätzle, or any other dried egg noodles
1 cup light cream
Fine sea salt and freshly ground black pepper, to taste
Garnish: 2 tablespoons finely minced parsley or chives

Steps:

  • Gather the ingredients. Set a large pot of water, covered, to boil over high heat for the pasta.
  • In a large pan over medium-low heat, melt 2 tablespoons of the butter. Add the minced garlic and shallot, lower the heat to low, and sauté until softened and transparent, about 1 to 2 minutes.
  • Add the mushrooms , raise the heat to medium-low, and sauté until softened and slightly browned, about 3 minutes. Transfer the mushrooms to a bowl, cover with a lid or inverted plate to keep warm, and set aside.
  • When the water is boiling, add about 1 tablespoon of coarse sea salt. When the water returns to a full rolling boil, add the pasta. Cook for 2 minutes less than package instructions (or until it is somewhat tender but there is still a white core when you take a bite of a test piece). Drain it and rinse quickly in cold water, then drain again thoroughly.
  • Melt the remaining 2 teaspoons of butter in the pan used to cook the mushrooms over low heat and add the spaetzle. Add the mushrooms mixture, raise the heat to medium, and cook, stirring with a wooden spoon or spatula, until the spaetzle is slightly browned, about 2 minutes.
  • Add the cream, lower the heat to low, and cook just until heated through and the cream starts to thicken, about 1 minute. Season to taste with salt and pepper.
  • Transfer to a serving platter or bowl and garnish with the finely minced parsley and/or chives, if using. Serve immediately.

Large pinch of freshly grated nutmeg
1 cup sour cream
1 cup seltzer
3 large eggs
1/3 cup chopped fresh dill and/or parsley
1 tablespoon whole-grain mustard (optional)
2 tablespoons plus 2 teaspoons extra-virgin olive oil
4 tablespoons unsalted butter

Steps:

  • Bring a pot of salted water to a bare simmer. Combine the flour, 2 teaspoons salt, a pinch of pepper and the nutmeg in a large bowl. Whisk the sour cream, seltzer, eggs, herbs and mustard in another bowl, then stir into the flour mixture.
  • Fill a large bowl with ice water. Working over the simmering water, place about 1 cup dough in a colander and push the dough through with a rubber spatula. Cook the spaetzle for 1 minute after they float to the surface, then remove with a slotted spoon and transfer to the ice water. Repeat with the remaining dough, letting the water return to a bare simmer between batches. Drain the spaetzle, spread out on a baking sheet and pat dry with paper towels. Toss with 2 teaspoons olive oil.
  • Heat 2 tablespoons butter and 1 tablespoon olive oil in a large skillet over medium-high heat. Increase the heat to high and add half of the spaetzle in an even layer. Cook, undisturbed, until golden brown on the bottom, about 5 minutes. Shake the pan and loosen the spaetzle with a spatula; continue cooking until heated through, about 1 more minute. Season with salt and pepper. Repeat with the remaining butter, oil and spaetzle.

1 onion, diced

1 (14.5 ounce) can Italian-style diced tomatoes, undrained
1 tablespoon dried basil leaves
¾ teaspoon white sugar

¼ teaspoon salt
⅛ teaspoon ground black pepper
½ cup heavy cream
1 tablespoon butter

Steps:

  • In a saucepan, saute onion and garlic in olive oil over medium heat. Make sure it doesn't burn. Add tomatoes, basil, sugar, oregano, salt and pepper.
