Thai Turkey Burgers with Crunchy Asian Slaw image

Thai Turkey Burgers infused with lemongrass, ginger and basil, served with a Crunchy Asian Slaw and Spicy Aioli. Serve this on a tasty bun, in a lettuce wrap or over grains and greens for healthy bowl.

1 lb ground turkey
3 tablespoons shallot, very finely diced ( or red onion)
1 ½ teaspoon fresh grated, or chopped ginger
2 garlic cloves- finely minced ( or 1 teaspoon granulated garlic)
1 tablespoon finely chopped lemongrass
2 tablespoons chopped Thai basil (or reg basil, cilantro, or mint)
1 teaspoon lime zest
1 scallion, chopped
½ - 1 jalapeño, seeded, finely chopped ( or substitute 1 Tablespoon sriracha sauce, or red chili sauce)
1 tablespoon fish sauce (or sub soy sauce)
1 teaspoon sugar
¼ teaspoon white pepper- optional
1 cup grated carrots
1 cup shredded purple cabbage
1 scallion, thinly sliced
2 tablespoons lime juice ( or rice wine vinegar)
1 tablespoon olive oil
1 teaspoon sugar
¼ teaspoon salt and pepper
1/4 cup mayo, vegan mayo or tarter sauce
1-2 tablespoons sriracha or chili garlic sauce

Steps:

  • Preheat grill to medium-high. ( see notes to pan-sear)
  • Combine all the burger ingredients in a medium bowl and mix well using hands. With wet hands, shape into 3 burgers, 1-inch thick. Place on a plate in the fridge.
  • Toss the slaw ingredients together in a medium bowl.
  • Mix the spicy aioli ingredients together in a small bowl.
  • Grill patties on a well-greased, pre-heated grill 4-5 minutes each side until golden and cooked through.
  • Toast or grill the buns.
  • Spread aioli on the bottom bun, top with the patty, then the slaw, cucumber ribbons (optional) , more aioli, then the top bun. Enjoy!!

1 1/2 lbs uncooked ground turkey
1/2 cup chopped scallion
1/4 cup breadcrumbs
2 tablespoons soy sauce
1 tablespoon grated fresh ginger
4 teaspoons finely chopped garlic
1 teaspoon olive oil
1/2 cup fresh orange juice
2 tablespoons fresh lemon juice
1 tablespoon dairy-free margarine
1/2 tablespoon grated fresh ginger
1 teaspoon chopped garlic
1/2 teaspoon chopped lemon basil

Steps:

  • In a bowl, combine ground turkey, scallions, bread crumbs, 1 TB of the soy sauce, ginger, and garlic. Season to taste with salt and pepper. Mix well.
  • Divide turkey mixture into 8 equal portion . Shape into patties.
  • Heat oil in a skillet over medium heat until hot.
  • For the sauce, in a small saucepan combine orange juice, lemon juice, and the remaining 1 TB soy sauce. Let bubble until reduced by half.
  • Add 4 of the patties and cook for 7 to 8 minutes. Turn patties over and cook another 8 minutes or until done (165 degrees F). Repeat with remaining 4 patties. Keep the first batch warm in a warm oven.
  • Whisk in the margarine & lemon basil to sauce. Pour over burgers.
  • Serve with rice.

1/2 red bell pepper, finely chopped
Coarse salt
2 tablespoons mild curry paste or a handful of curry powder (Preferred brand: Patak's Mild Curry Paste)
Drizzle extra-virgin olive oil
5 crusty rolls, split
Bib or leaf lettuce
Sliced vine-ripe tomatoes
Mango chutney (preferred brands: Major Grey's or Patak's Mango Chutney)
Serving Suggestions: Thai Slaw Salad, recipe follows and root vegetable chips (preferred brands: Terra Chips)
1 (16 ounces) prepared shredded cabbage (coleslaw mix) from produce department
1/4 European seedless cucumber, sliced into thin sticks
1 small red bell pepper, seeded and thinly sliced
3 scallions, thinly sliced on bias
20 leaves fresh basil, shredded

1/2 teaspoon crushed red pepper flakes
1 clove garlic, minced
1/4 cup white distilled or rice wine vinegar

Steps:

  • Toppings:
  • Combine first 8 ingredients and form into 5 patties.
  • Brush or drizzle patties with extra-virgin olive oil. Grill patties 6 minutes on each side on indoor electric grill or pan fry for same amount of time in a large nonstick skillet over medium high heat.
  • Pile patties on split crusty rolls with lettuce, tomato, and chutney spread liberally on roll tops as a condiment. Serve curry turkey burgers with Thai Slaw and root vegetable chips.
  • Garnish:
  • Combine vegetables in a bowl. Combine dressing ingredients in a small plastic container and shake vigorously for 1 minute. Drizzle sauce over vegetables and toss to coat evenly. Let stand 10 minutes and re-toss before serving and garnish with toasted sesame seeds.

2 TB soy sauce
1/2 Cup Scallions, chopped
2 garlic cloves, chopped
1/2 Cup Mayonnaise
2 tsp. or more to taste of good quality yellow curry powder
2 tsp. grated fresh ginger root
salt and pepper to taste
White or Wheat Hamburger Buns
Lettuce and Tomato for garnish

Steps:

  • Quick sautee chopped scallions and garlic with a tsp. of olive oil or cooking spray. Cook for about 1 minute. Add to ground turkey along with the soy sauce and salt and pepper to taste. Set aside to marinate while making the mayonnaise. Mix curry, ginger and mayonnaise together. Chill in the refridgerator while grilling burgers. Form burgers into 4 1/2 inch patties and grill (burgers can also be sauteed in a pan or broiled) until cooked through (about 5-10 minutes per side). Serve on buns with Ginger-Curry Mayonnaise and lettuce and tomato.

Steps:

  • In a large bowl, mix together the chicken, panko, egg, green onions, chopped cilantro, garlic, chili sauce, and salt. With oiled hands, form mixture into 4 patties. In a small bowl, mix together the teriyaki glaze and honey.
  • Heat oil in a large non-stick frying pan over medium-high heat. Add chicken patties and cook on both sides, brushing each side with the teriyaki-honey mixture, about 10 minutes, or until fully cooked through. Place burgers on toasted buns and top with lettuce, cucumber, and Ginger Mayonnaise. Garnish with cilantro sprigs and cucumber slices.

2 tablespoons neutral oil, such as safflower or grapeseed
4 garlic cloves, thinly sliced
1 (2-inch) knob ginger, cut into matchsticks

3 scallions, white and green parts separated, thinly sliced
1/4 teaspoon red-pepper flakes, plus more to taste
1 pound ground turkey, preferably dark meat (or use ground pork)

2/3 cup cilantro leaves and tender stems, for serving

Steps:

  • In a cold 12-inch skillet, combine oil, garlic and ginger. Place over medium heat until sizzling, then continue to cook, stirring frequently, until garlic and ginger are golden brown, 5 to 7 minutes. Transfer with a slotted spoon to a paper towel-lined plate and sprinkle lightly with salt.
  • Add coconut oil to pan, then stir in scallion whites and cook until starting to brown, about 2 minutes. Stir in red-pepper flakes and cook for 1 minute.
  • Stir in turkey, raise heat to medium-high, and cook, breaking up meat with a spoon, until golden and crisp, about 7 minutes. Don't stir the meat too much, so it can turn deep brown.
  • Remove pan from heat and stir in lime juice, fish sauce and soy sauce. Taste and add more lime juice, red-pepper flakes, soy sauce and sugar or honey if you like.
  • Gently mix about two-thirds of the fried garlic and ginger into the turkey. Serve turkey over rice, topped with cilantro, basil, scallion greens and fresh chile, and garnished with remaining fried ginger and garlic.

I found this in some random cookbook. One of the best turkey burgers ever. Full of flavor. Make an extra for lunch the next day, reheats beautifully.

3 tablespoons sesame seeds
2 tablespoons soy sauce
1/2 cup minced scallion, white and green parts both
2 -3 tablespoons minced cilantro
2 teaspoons pulverized garlic
2 tablespoons sesame oil
salt
3/4-1 1/4 cup breadcrumbs, depends on how moist the turkey is
fresh ground pepper
oil, if desired (for cooking)

Steps:

  • Mix togeter, gently. the turkey, sesame seeds, soy, scallions, cilantro, garlic, sesame oil, 1 teaspoon of salt, and bread crumbs.
  • Form into patties.
  • I usually mix all this together and make patties in the morning and leave in the refrigerator till I'm ready for them.
  • Sometimes that is the next day.
  • Brush with a little oil before grilling if desired.
  • Grill on the George Foreman, in a grill pan.
  • If you're using the outside grill increase the breadcrumbs a bit to insure they don't fall apart.
