MEXICAN TACO PIZZA
This taco pizza is EASY and ready in 20 minutes! Taco-seasoned ground beef on top of refried beans with melted cheese and your favorite taco fixings!!

- Preheat oven to 425F and line one or two sheet pans with parchment paper or a Silpat; set aside.*
- To a large skillet, add the onion, beef, olive oil if necessary, and cook over medium-high heat for about 5 to 6 minutes, or until beef is cooked through and onions are soft and translucent; crumble beef as it cooks and stir frequently to ensure even cooking.
- Add the taco seasoning and stir to combine. Take skillet off the heat and set aside.
- Place the frozen pizza crusts directly from the freezer on either one or two sheet pans, depending on the exact size of your crusts and pans.
- Add an equal amount of the refried beans to both crusts, leaving a bare 1-inch margin from the edges.
- Add an equal amount of the beef mixture to both crusts.
- Add 3/4 cup mozzarella cheese to each crust.
- Add 1 cup cheddar cheese to each crust.
- Bake for about 12 minutes, or until cheese is melted and crusts are as cooked through as desired.
- Add an equal amount of tomato and cilantro as desired to both crusts and serve immediately. Pizza is best fresh but will keep airtight in the fridge for up to 5 days.

- Preheat oven to 350°. In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning and water. Bring to a boil; reduce heat. Simmer, uncovered, for 10 minutes; set aside. , Place crusts on ungreased pizza pans or baking sheets. Combine beans and salsa; spread over crusts. Top with beef mixture, chips and cheese. , Bake until heated through and cheese is melted, 13-16 minutes. If desired, sprinkle with lettuce and tomatoes.

- In a large bowl, combine the flour, cornmeal, sugar, baking powder, cayenne, chili powder and salt. Combine the milk, oil and egg; stir into dry ingredients just until moistened. Stir in the cheeses. , Spread into a greased 15x10x1-in. baking pan. Bake at 400° for 10-12 minutes or until a toothpick comes out clean., In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in water and one envelope of taco seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Set aside., In a small bowl, combine the sour cream and remaining taco seasoning; mix well. Spread over crust. Sprinkle with the beef mixture and half of the cheeses. , Combine the corn, beans and salsa; spoon over cheese. Sprinkle with remaining cheese. Broil 5-10 minutes or until cheese is melted.

SOUTHWESTERN TACO POT PIE
Steps:
- Preheat the oven to 400 degrees F.
- Brown ground beef in large skillet over medium-high heat for 8 to 10 minutes or until thoroughly cooked, stirring frequently. Drain. Add taco seasoning mix and water; mix until ground beef is well coated.
- Meanwhile, heat oil in large saucepan over medium high heat until hot. Add peppers and onions; cook 4 to 5 minutes or until tender, stirring occasionally. Remove from heat and drain excess liquid. Add garlic and onion powders, salt, pepper, corn, and salsa, stir well and set aside.
- Prepare pie crusts as directed on package for 2-crust pie using 9-inch glass or metal pie pan.
- Combine salsa and corn mixture with ground beef; mix well. Sprinkle 1/2 cup of cheese evenly in bottom of crust-lined pan. Spread 1/2 of beef mixture evenly in pan over cheese, pat down. Sprinkle 3/4 cup cheese in pan and spread evenly with remaining beef mixture, pat down, top with remaining 3/4 cup cheese. Top with second crust and flute; slit in several places.
- Bake for 30 minutes or until crust is golden brown. Cover edge of crust with strips of foil or a pie crust shield after 15 minutes of baking. Let stand 5 minutes before serving. Store in refrigerator.
- Garnish with a dollop of sour cream and a drizzle of taco sauce. Also recommended: guacamole, salsa, and diced green chiles.
GARTH'S TACO PIZZA

- Preheat the oven to 425 degrees F. Roll out the pizza dough and fit it onto a 15-inch pizza pan.
- Brown the ground beef in a medium skillet over medium heat, about 10 minutes. Stir in the taco seasoning. Set aside.
- In a medium bowl, mix together the refried beans and picante sauce until combined. Spread the mixture onto the crust. Scatter the olives over the crust, then top with the cheese and the browned beef. Bake for 20 minutes, or until the crust is lightly browned.
- While the crust is baking, lightly salt the tomatoes, then, in a medium bowl, toss them with the lettuce and sour cream. Once the pizza is out of the oven, top it with the cool lettuce mixture. Slice into eight pieces and serve.

Ready, Set, Cook! Hidden Valley Contest Entry. Pizza and tacos are my two favorite foods and often times I cant decide between the two - so I created this recipe to have both! This recipe is very adaptable, so add your favorite taco toppings if desired

- Preheat oven to 450. Place rack in low position and place a pizza stone.
- In bowl, combine yogurt, ranch, lemon juice and zest, chipotle tobacco and chives. Cover and refrigerate until ready to use. In large sauté or cast iron pan, add onions, poblano and jalapeno. Season with salt and pepper and cook on medium high, stirring often until softened - about 7 minutes. Add half of the garlic and all of the ground pork and continue cooking until pork is no longer pink - about 5 minutes. Drain any excess grease from pan. To pan, add chili powder, cumin, coriander, taco sauce and corn. Simmer 15 minutes. While sauce is simmering, prepare crust. Sprinkle pizza stone with cornmeal. Roll or stretch dough to 14". Brush olive oil and remaining garlic over surface. Transfer to pizza stone and bake 4-5 minutes. Add meat sauce, and cheese and continue baking 10-12 minutes or until cheese is browned and bubbly. Remove from oven and add lettuce, pico de guillo and olives. Drizzle with yogurt sauce. Slice pizza and enjoy!
- **NOTE - if you don't have a pizza stone, place dough on a baking sheet or pizza pan that has been dusted with cornmeal and prebake 4-5 minutes.

SOUTHWESTERN TACO PIZZA
My Mom told me I really messed up making this for her because she will never order another taco pizza again! This dish is time consuming to prepare but soooo good. The corn and Catalina give it just a touch of sweet with the savory, the flavors are multi dimensional. I prepared this for New Years Eve as appetizer and have made it for supper several times. Hope you all enjoy this!

- Brown ground chuck until no pink, drain, add 2 packets of taco seasoning and water called for on the packets. Prepare as directed on packets. Keep warm on low.
- *While preparing taco meat above* Spray large jelly roll pan with non-stick spray. Roll out crescents and press into pan, try and seal the seams best you can. Pierce dough every inch or so with a fork. Bake at temp and time on package.
- Combine refried beans and remaining packet of taco seasoning (no water)
- Assemble right before serving: On baked crescents, spread seasoned refried beans, top with hot taco meat, top with shredded cheese. Stop here if traveling with this dish (toppings to be added by individuals or added at event) or if everyones tastes are different. If not continue to top in this order lettuce, tomato, corn, black olives, green onions and tortilla chips. Drizzle with Catalina, then with Ranch. Cut in desired size pieces. Serve with sour cream.
