A yummy crockpot recipe that we serve over rice. As usual make sure you cut the flank steak against the grain for the best results.

1 1/2 lbs flank steaks
1 onion, chopped
3 garlic cloves, minced
16 ounces chunky salsa
1/2 teaspoon dried oregano leaves
2 teaspoons chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
15 ounces black beans, drained and rinsed
1 red bell pepper, sliced
1 yellow bell pepper, sliced
3 cups hot cooked rice

Steps:

  • Trim excess fat from steak.
  • Place onions and garlic in bottom of 3-4 quart slow cooker and top with steak.
  • Mix salsa, oregano, chili powder, salt, and pepper in small bowl and pour over meat.
  • Top with drained black beans.
  • Cover slow cooker and cook on low for 7-9 hours until meat is tender.
  • Remove meat from slow cooker and slice into thin strips against the grain.
  • Turn heat to high and return beef to slow cooker along with sliced peppers.
  • Cover and cook on high for 30 minutes, until peppers are tender.
  • Serve with rice.

1 package (1 oz) Old El Paso™ taco seasoning mix
1 can (15.5 oz) red beans, drained, rinsed
1 can (15 oz) pinto beans, drained, rinsed
1 can (15 oz) crushed tomatoes, undrained
2 cans (4.5 oz each) Old El Paso™ chopped green chiles
1 cup Old El Paso™ Thick 'n Chunky salsa
1 1/2 cups Progresso™ chicken broth (from 32-oz carton)
1 1/2 cups frozen corn (from 12-oz bag), thawed
3/4 cup chopped yellow onion
1 teaspoon dried minced garlic
1/2 teaspoon salt
1/2 teaspoon pepper
Shredded Cheddar cheese
Chopped avocado
Tortilla chips

Steps:

  • In 10-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain.
  • Spray 3 1/2- to 4-quart slow cooker with cooking spray. In slow cooker, mix beef and remaining ingredients except toppings.
  • Cover; cook on Low heat setting 7 to 9 hours. Garnish individual servings with toppings.

This slow cooker recipe delivers a hearty dish of hamburger, bacon, and beans in a thick and sweet sauce.

1 pound hamburger
½ pound bacon
1 (28 ounce) can baked beans with pork
1 (15 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can lima beans, rinsed and drained
2 onions, chopped
1 cup ketchup
1 cup brown sugar
1 teaspoon prepared mustard

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir hamburger and bacon together in the hot skillet until hamburger is browned and crumbly, 7 to 10 minutes.
  • Stir cooked hamburger and bacon, baked beans with pork, kidney beans, lima beans, onions, ketchup, brown sugar, and mustard together in the bottom of your slow cooker.
  • Cook on Low until hot and thickened, at least 3 hours.
