Before I retired, this all-in-one skillet dish was constantly requested at office brunches. I'd leave out the eggs, double or triple the recipe and wrap servings of the zippy pork mixture in warm corn tortillas. -Barbara Beasley, Beaumont, Texas

1-1/2 pounds pork steak, cubed
1 teaspoon vegetable oil
1 large potato, peeled and cubed
1 medium onion, chopped
1 garlic clove, minced
1/2 cup chopped green pepper
1 can (10 ounces) diced tomatoes and green chilies, undrained
1 beef bouillon cube
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper
4 eggs
3/4 cup shredded cheddar cheese
4 corn tortillas (6 inches), warmed

Steps:

  • In a 10-in. ovenproof skillet, cook pork in oil until browned, about 4 minutes. Add potato, onion, garlic and green pepper; cook and stir for 4 minutes. Stir in tomatoes, bouillon, cumin, salt, pepper and cayenne. Cover and cook over low heat for 30 minutes or until potatoes are tender, stirring occasionally. Make four wells in the hash; break an egg into each. Bake, uncovered, at 350° for 10-12 minutes or until the eggs are completely set. Sprinkle with cheese; cover and let stand for 5 minutes. Serve over tortillas.

Delicious breakfast casserole that can be made a day in advance and that serves a crowd! This Southwestern Breakfast Casserole is made with eggs, hash brown potatoes, sausage, black beans, bell pepper, chili peppers and Southwestern spices. Gluten free.

1 lb pork sausage
1 onion (, finely chopped)
1 red bell pepper (large, chopped)
15 oz black beans (from the can, drained)
4 oz green chili peppers (, diced, from the can)
1 1/2 cups cheddar cheese (, shredded)
1/2 cup Mozzarella cheese (, shredded)
3 cups hash browns (, frozen, raw, uncooked, completely defrosted)
6 eggs
1/2 cup heavy cream
1 teaspoon chili powder
1 teaspoon ground cumin
1 tablespoon butter (melted)

Steps:

  • Preheat oven to 375 F.
  • In a large skillet, cook pork sausage together with finely chopped onions on medium heat until the sausage is cooked through and is no longer pink. Add chopped red bell pepper, black beans, and diced green chili peppers. Add half the spices (1/2 teaspoon of chili powder and 1/2 teaspoon of cumin) and mix everything up.
  • Add shredded cheddar cheese, shredded mozzarella cheese, and hash browns to the sausage mixture and mix them in.
  • In a small bowl, whisk eggs, heavy cream, and the remaining half of spices (1/2 teaspoon of chili powder and 1/2 teaspoon of cumin).
  • Use 2.8 L (3 quarts) rectangular baking dish - 11 inches long x 8.5 inches wide x 3 inches deep. Brush the bottom and the sides of the baking pan with 1 tablespoon of melted butter.
  • Add half the sausage mixture to the baking pan, and pour half of the egg mixture over the sausage mixture, carefully and evenly. Add the remaining half of the sausage mixture on top, and pour the remaining half of the egg mixture evenly over the sausage mixture.
  • Bake, uncovered for about 40-50 minutes. The casserole is ready when the eggs are set and no longer liquid in the center. Let the dish cool for about 30 minutes before slicing it.

Sometimes it is all about the Southwestern culture. I love the smokey cumin, cilantro and chorizo zing first thing on a Sunday morning... and I hope you do too.

12-16 slice sourdough bread, cut in 1" cubes - stale is best
2 c cheddar cheese, grated
1 c monterey jack cheese, grated
12 eggs, whipped to a froth
2 c milk
7 oz canned green chiles, diced
1 can(s) tomatoes and chiles (small)
2 Tbsp dried cilantro
1 Tbsp cumin
1/4 tsp black pepper
1 Tbsp chipotle chili powder (smokey works best)
1/2 tsp salt
1 c chorizo (mexican sausage, mild or medium), fried and drained of grease
fresh cilantro - garnish
sour crean

Steps:

  • 1. Coat a 9" baking dish with cooking spray.
  • 2. In a mixing bowl, beat eggs, milk and seasonings together; set aside.
  • 3. Trim crust from bread.
  • 4. Pour just enough egg mixture to cover the bottom of the prepared baking dish.
  • 5. Line dish with half of the bread.
  • 6. Spread half of each cheese, half of the chorizo and half the chilies over the bread layer.
  • 7. Add another bread layer and the remaining cheese, corizo and chilies.
  • 8. Pour remaining egg mixture over the dish.
  • 9. Cover with foil.
  • 10. Refrigerate overnight.
  • 11. Bake in 350 degree F. oven for 50 to 55 minutes or until liquid is set to custard.
  • 12. Garnish with fresh cilantro and serve with a dollop of sour cream.

1 1/2 cups spinach, chopped
1/2 cup part-skim ricotta cheese
1 cup cooked chicken (I used 1 chicken breast, see note in description)

Steps:

  • Whisk together ingredients in a bowl.
  • Spray skillet with Pam and heat of medium.
  • Pour egg mixture into skillet and cook, stirring until done.
  • Note: I also think this will work as an omelet, cooking until done and folding in half.

1 1/4 cups Egg Beaters egg substitute
1/4 cup chopped red bell pepper
1/4 cup chopped green bell pepper
1/4 cup chopped onion
1/4 cup chopped mushroom
1 tablespoon seeded and finely chopped jalapeno pepper
fresh ground black pepper, to taste
kosher salt, to taste
2 English muffins
1 tablespoon unsalted butter, softened
2 -3 drops frank's redhot original cayenne pepper sauce, to taste
4 slices American cheese

Steps:

  • In a small bowl, combine egg mixture ingredients.
  • Spray a medium size skillet with cooking spray, then heat to medium. Pour egg mixture into skillet, cook, turning mixture occasionally until mixture is set but not dry, about 3 minutes.
  • Split and toast english muffins.
  • Combine softened butter with drops of cayenne pepper sauce to taste. Lightly spread on muffin halves. Spoon egg mixture onto muffin halves; top with cheese slices.
  • Broil just until cheese starts to melt. Serve immediately.

1 pkg jimmy dean sage sausage crumbled
6 medium russet potatoes cubed
1 large onion diced
1/.2 c diced red, green and yellow or orange peppers
1/2 qt better-n=eggs southwestern style eggs
optional tomatoes, cut up drained-jalapeno for those who like it hot
optional sprinkle plate servings with shredded cheddar cheese before serving

Steps:

  • 1. Veggies may be cut up ahead and refrigerated to save prep time when making except for potatoes and tomatoes Tomatoes need to drain and will be added to cooked food last. Potatoes will turn black if left too long in the air once peeled. Note: if using jalapeno peppers, I would keep seperate until ready to add veggies to pan. You could also buy the onions and peppers already cut up in your freezer area of your stores to save even more of your time.
  • 2. Spray large chicken fryer pan with tall sides with pan soray. Peel/or not..well washed and dried potatoes. . Then drizzle small amount of oil in pan. Add about two tablespoons butter. Mix well until melted Add cubed potatoes and start on high heat until they start browning nicely. Turn heat to low and cover. Cook until ready to add veggies. Remove cover and leave heat on low. You want to keep them warm only while adding other veggies.
  • 3. Add cut up veggies. Mix well. Continue cooking uncovered until veggies are tender. Turn often to evenly cook all veggies. While veggies are cooking on low heat take a small fry pan and spray with pan spray and cook sausage. Crumble as it cooks. When no longer pink anywhere, remove from heat and add all (yes even the grease) to potatoes and veggies. mix well. Using same pan as sausage, Re-spray pan and pour Better-n-Eggs into pan and scramble until all are done. Add this to Potato pan. Mixing gently so you don't mash the potatoes. If using tomatoes, now would be the time to add them. Continue to heat until all is heated through and veggies are all cooked and tender. NOTE: i ADD SHREDDED CHEDDAR CHEESE ON TOP JUST BEFORE SERVING.
