2 cans (16 ounces each) kidney beans, rinsed and drained
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
2 cans (14-1/2 ounces each) Italian stewed tomatoes, drained and chopped
1 large onion, chopped
1/4 cup packed brown sugar
1/4 cup cider vinegar
2 tablespoons honey
2 teaspoons dried oregano
2 teaspoons ground cumin
2 teaspoons ground mustard
1-1/2 teaspoons ground ginger
1 teaspoon garlic powder
1 teaspoon chili powder
1/2 teaspoon salt

Steps:

  • In a large bowl, combine the beans, tomatoes and onion. Combine the remaining ingredients; stir into bean mixture. , Transfer to a 3-qt. baking dish coated with cooking spray. Cover and bake at 350° for 45 minutes; stir. Bake, uncovered, 15-30 minutes longer or until heated through.

4 cans (15 oz each) baked beans, drained
1 can (15 or 15.5 oz) dark red kidney beans, drained
1 can (15 oz) black-eyed peas, drained
1 box (9 oz) frozen baby lima beans
1 cup Old El Paso™ Thick 'n Chunky salsa
1 package (1 oz) Old El Paso™ taco seasoning mix

Steps:

  • Heat oven to 350°F. In 10-inch skillet, cook sausage over medium heat, stirring frequently, until no longer pink; drain.
  • In 3-quart casserole, combine sausage and remaining ingredients; stir.
  • Bake uncovered 60 to 70 minutes or until hot and bubbly.

1 tablespoon olive oil
1 medium onion, diced
4 cloves garlic, minced
4 teaspoons mustard powder
2 1/2 teaspoons chili powder
2 teaspoons ground cumin
1 can (14 1/2 ounces) whole tomatoes, with juice
1/4 to 1/3 cup packed light-brown sugar
4 cans (14 1/2 ounces each) pinto beans, drained and rinsed
1 tablespoon cider vinegar
Salt and pepper

Steps:

  • In a 5-quart saucepan, heat oil over medium-high. Cook onion until translucent, stirring often, 3 minutes. Add garlic, mustard and chili powders, cumin, tomatoes, brown sugar, beans, and 3 cups water.
  • Bring to a boil; reduce heat to medium-low. Cover; simmer, stirring occasionally, 50 minutes. Uncover; cook until thick, about 10 minutes more. Stir in vinegar; season with salt and pepper.

From Pepperfool.com. I'm always looking for something different to serve with my Tex-Mex casseroles and this is so good. I used 2 can of Great Northern Beans. Also brown my bacon in with onions, etc. I like my bacon cooked some. Wonderful smokey chipotles taste.

3 canned chipotle chiles in adobo, chopped, stems removed
2 teaspoons new mexico chile powder
2 tablespoons adobo sauce
1 large onion (chopped )
2 garlic cloves (chopped )
1 tablespoon vegetable oil
1/4 lb thick slab bacon, cut into 1/2 inch pieces
1/2 cup ketchup
1/2 cup beer or 1/2 cup water
1/4 cup dark brown sugar
1 teaspoon dry mustard
3 cups cooked great northern beans

Steps:

  • Sauté chipotles, onion, and garlic in oil until soft. (I cook bacon in with this).
  • Combine with other ingredients, and mix resulting sauce into the beans. Bake at 325F for 2 hours, adding water if beans get too dry.
