- In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the beans, tomatoes, rice, water, green pepper and seasonings. Bring to a boil. Reduce heat; cover and simmer for 20 minutes, stirring occasionally. , Remove from the heat. Sprinkle with corn chips and cheese. Cover and let stand for 3 minutes or until cheese is melted.

- In 10-inch skillet, heat oil over medium-high heat. Cook chicken in oil 3 to 4 minutes, stirring occasionally, until no longer pink in center.
- Stir in vegetables, beans and salsa; reduce heat to medium. Cover and cook 6 to 8 minutes, stirring occasionally, until vegetables are crisp-tender.
- Sprinkle with tortilla strips and cheese. Cover and cook about 2 minutes or until cheese is melted.

SOUTHWEST SKILLET DINNER
A spicy macaroni skillet dinner that I found on Muellers. Although the recipe doesn't call for it, you could probably add ground beef (I just followed the original recipe).

Steps:
- 1. Cook and drain pasta according to package directions.
- 2. Heat oil in a large skillet over medium-high heat; add onion, green pepper, garlic, chili powder, cumin and salt; cook, stirring occasionally, for 4 minutes, or until vegetables are tender.
- 3. Add tomatoes, kidney beans and corn; bring to a boil.
- 4. Reduce heat; simmer, stirring occasionally, for 15 minutes.
- 5. Toss with hot macaroni; sprinkle with cheese.
