My family loves French fries and with 4 children the bag fries from the store just weren't enough and became too expensive. So I tried batter - after all it makes chicken, shrimp, and onion rings crispy so why not potatoes. Now even my husband can't get enough of these French fries. They even stay crispy when you reheat in the microwave.

2 ½ pounds russet potatoes, peeled
1 cup all-purpose flour
1 teaspoon garlic salt
1 teaspoon onion salt
1 teaspoon salt
1 teaspoon paprika
½ cup water, or as needed
1 cup vegetable oil for frying

Steps:

  • Slice potatoes into French fries, and place into cold water so they won't turn brown while you prepare the oil.
  • Heat oil in a large skillet over medium-high heat. While the oil is heating, sift the flour, garlic salt, onion salt, (regular) salt, and paprika into a large bowl. Gradually stir in enough water so that the mixture can be drizzled from a spoon.
  • Dip potato slices into the batter one at a time, and place in the hot oil so they are not touching at first. The fries must be placed into the skillet one at a time, or they will clump together. Fry until golden brown and crispy. Remove and drain on paper towels.

2 lbs potatoes (about 4 large, cut as you desire)
1 egg, beaten
1 1/2 tablespoons flour (unbleached or all-purpose)
2 teaspoons paprika
1/4 teaspoon cayenne
1/8 teaspoon garlic powder
1/8 teaspoon onion powder

Steps:

  • Cut fries as desired.
  • Soak COVERED with cold water for 2-3 hrs (more won't hurt - this dispenses with the starch that keeps them from browning nicely).
  • Blot dry.
  • First fry - in batches AT *300* degrees until just tender (yes, this is a lower temp than you would think).
  • When all are done with first fry, toss gently, but well, with seasonings.
  • Second fry - Increase oil temp to *400* degrees, frying until golden & beautiful.
  • ALTERNATIVE TO FRYING:.
  • In boiling water, place fries in & boil 3 minutes - no longer!
  • Set aside to cool, toss with seasonings.
  • On baking sheet sprayed with light mist of oil, place potatoes so they are not touching each other.
  • Spray them lightly with oil.
  • Bake in preheated 450 degree oven for 18 - 24 minutes until golden & crunchy.

1/2 cup grated Parmesan cheese
2 teaspoons Italian seasoning

Steps:

  • Place potatoes on a foil-lined baking sheet. Bake at 450° for 8 minutes. Combine remaining ingredients; sprinkle over potatoes and mix gently. Bake until the potatoes are browned and crisp, 4-5 minutes longer.

1 bag frozen plain French fries
flour
1 cup boxed pancake mix
2 cups club soda
1/2 teaspoon pepper
1/2 teaspoon ground ginger
1/4 teaspoon dry mustard
1 1/2 tablespoons seasoning salt

Steps:

  • Prepare batter.
  • Combine seasoning mixture and store in a tightly covered container.
  • Allow 1 tsp seasoning for each cup of prepared batter.
  • Potatoes: Without thawing, open bag of fries and dust them lightly but evenly in flour, letting them dry on waxed paper lined cookie sheet for a few minutes.
  • Coat the floured French fries evenly in the batter and fry in small portions at a time in 385 F oil (at least 2" deep) in an electric fry pan.
  • Turn fries once to brown evenly.
  • Remove with tongs to drain on paper towels.
  • Serve at once.
  • The batter can be repeated as needed to coat the frozen fries.
  • Fajita Fries: Add 1/2 ts ground cumin in each cup of prepared batter that includes the seasoning mix given above.

These country-style home fries are a wonderful accompaniment to any breakfast, brunch or (in my family's case) breakfast for dinner. They turn out buttery and savory with a crispy brown outer coating. I like to serve these home fries when I make breakfast for dinner for my family. We enjoy them with a juicy, smokey ham steak cooked in my cast iron skillet with a side of baby peas. Yum!

2 tablespoons butter
3 large potatoes, diced, unpeeled (white or red)
1 medium onions, chopped or 1 cup chopped onion
1/2 teaspoon ground paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Place diced potatoes, onion, paprika, garlic powder, salt and black pepper in a medium mixing bowl. Toss to evenly coat the potatoes.
  • In a large, non-stick skillet over medium heat, melt butter.
  • Increase skillet heat to medium-high and add potato mixture. Toss to coat evenly with butter.
  • Cover skillet and cook for 10-12 minutes, turning and scraping the potatoes to prevent burning.

2 tablespoons celery, salt

1 1/2 teaspoons garlic powder

6 medium (about 2 pounds) russet potatoes, cleaned
2 tablespoons grapeseed oil
2 tablespoons freshly chopped rosemary
1 tablespoon freshly chopped thyme leaves
3 tablespoons chopped garlic
2 tablespoons Big Daddy Seasoning, recipe follows
Freshly chopped parsley leaves, for garnish
1/2 cup smokey paprika
1/4 cup granulated onion powder
1/4 cup granulated garlic powder
3 tablespoons seasoned salt
1/4 cup fresh cracked pepper
1/2 cup kosher salt

Steps:

  • Preheat oven to 400 degrees F.
  • Cut potatoes with a mandoline.
  • In a large bowl, combine cut potatoes and grapeseed oil. Add rosemary, thyme, garlic and Big Daddy Seasoning. Toss to coat.
  • Place in a single layer on a greased baking sheet. Bake uncovered for 20 to 25 minutes or until tender, turning once. Remove from oven and toss with chopped parsley.
  • In a large bowl, mix ingredients together.
