3 lb yellow squash, sliced or diced
1/2 c diced Vidalia onion, optional
1 can(s) cream of mushroom or chicken soup, 10.5 oz.
1 c mayonaise
1 egg
8 oz shredded cheddar cheese (sharp is my favorite)
1 tsp salt
1/2 tsp fresh ground black pepper
TOPPING
2 sleeves of Ritz crackers, crushed
1 stick melted butter

Steps:

  • 1. Preheat oven to 350.
  • 2. Wash and slice squash into small medallions or dice into smaller pieces if the squash is large. I prefer smaller sized squash since it is tender. Put squash into a large bowl for mixing with the filling.
  • 3. In a separate bowl, mix together the soup, mayo, eggs, cheese, onions, salt, and pepper.
  • 4. Pour over squash.
  • 5. Stir until well mixed.
  • 6. Then pour into a casserole dish for baking.
  • 7. Crush crackers while in "tubes" (I usually wrap them in a dish towel to avoid a mess, and use a rolling pin or meat tenderizer) or place in a resealable plastic bag.
  • 8. Pour crushed crackers into a bowl. Melt butter in the microwave and stir into crackers until moist.
  • 9. Drizzle on top of casserole. (You can make more or less of the topping. More topping = more yummy!)
  • 10. Bake at 350 degrees until bubbly and brown on top (usually 45-50 minutes). Bake for 30 minutes covered. with foil to help prevent crackers from burning.
  • 11. Then uncover and bake an additional 20 minutes until golden brown on top.
  • 12. ***If you want, you can add a cup of chopped cooked chicken into casserole. Also, adding 2 cups of cooked rice into it makes a delish meal.

This recipe has been a family favorite as long as I can remember. No holiday meal for us is complete without this on the table! (I've also seen many guests try this and go from "I don't like squash, but I'll try it" to "Is there any more of that squash casserole?" in just a few bites.)

2 c cooked yellow squash, drained
1 c sour cream
1 can(s) cream of chicken soup, undiluted
1 large carrot, grated
1 small white onion, chopped
salt and pepper, to taste
herb seasoned bread crumbs
butter, cold

Steps:

  • 1. Mash cooked squash; add sour cream, soup, carrot, onion, and desired amount of salt and pepper.
  • 2. Sprinkle a layer of bread crumbs in a shallow casserole dish(I use a 12 inch square); spoon squash mixture over crumbs.
  • 3. Cover with additional crumbs and dot with fresh butter pats. Bake at 350F for 30-45 minutes. Allow to cool 10 minutes before serving.

3 cups mashed, cooked butternut squash
½ cup sweetened condensed milk
2 eggs, beaten
½ cup butter, softened
2 teaspoons vanilla extract
½ cup heavy whipping cream
1 cup white sugar
1 pinch brown sugar
⅓ dash all-purpose flour
⅓ cup butter, chilled and cut into small pieces
½ cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 2-quart casserole dish.
  • Blend together the butternut squash, sweetened condensed milk, eggs, butter, vanilla, whipping cream, and sugar.
  • Pour into prepared casserole dish. Prepare topping, if desired: combine brown sugar, flour, 1/3 cup butter, and chopped nuts. Mix together and sprinkle over squash.
  • Bake in preheated oven until set and edges begin to bubble, 30 to 45 minutes.

1 small onion, chopped

herb seasoned bread crumbs

Steps:

  • Mash cooked squash. Add sour cream, chicken soup, grated carrot, chopped onion, salt and pepper. Sprinkle a layer of herb-seasoned bread crumbs on bottom of shallow casserole dish.
  • Spoon squash mixture over crumbs, cover with additional herb-seasoned bread crumbs. Dot generously with butter. Bake in 350 degree oven for 30-45 minutes.
