A prize winning chocolate cranberry cake made with a sourdough starter.

Number Of Ingredients 13

½ cup sourdough starter
1 cup water
1 ½ cups all-purpose flour
¼ cup dry milk powder
1 cup white sugar
½ cup vegetable oil
½ teaspoon salt
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 ½ teaspoons baking soda
2 eggs
3 (1 ounce) squares semisweet chocolate
1 (16 ounce) can whole cranberry sauce

Steps:

  • In a large, non-metallic bowl, combine sourdough starter, water, flour and powdered milk. Let ferment uncovered, for 2 to 3 hours in a warm place until bubbly and a clear sour milk odor develops.
  • Preheat oven to 350 degrees F (175 degrees C). Coat a 9x13 inch pan with cooking spray and, using a small sieve or shaker, dust lightly with cocoa powder.
  • In a separate large bowl, mix together sugar, oil, salt, vanilla, cinnamon and baking soda. Add eggs, melted semi-sweet baking chocolate, and cranberry sauce.
  • Combine the mixtures together and stir until well blended.
  • Pour into a 9x13 inch baking pan. Bake in a preheated oven at 350 degrees F (175 degrees C) for 30 to 35 minutes, or until knife inserted into center comes out clean. Cool at least 10 minutes before serving, excellent served slightly warm.
  • Garnish by sifting powdered sugar onto a paper doily or just dollop spoonfuls of whole berry cranberry sauce on top of each serving of cake.
  • This cake can also be baked in 2 - 8 inch round layer cake pans, baking time is decreased to 20 to 25 minutes or until knife inserted comes out clean. Another can of whole berry cranberry sauce can be spread generously between and on top of the unfrosted layered cake rounds for an impressive look during the holidays!

Another way to use your sourdough starter. Don't worry it won't have a sour taste, just a rich chocolate flavor! Found this recipe on King Arthur's site. Time indicated does not include proofing time for the starter. Note: Because starters vary in thickness, the amount of flour and milk may vary slightly.

1 cup sourdough starter (proofed)
1 cup whole milk
2 cups unbleached all-purpose flour (8 1/2 ounces)
1 1/2 cups granulated sugar
1 cup vegetable oil
2 teaspoons vanilla extract
1 teaspoon salt
1 1/2 teaspoons baking soda
3/4 cup natural cocoa powder (not Dutch process)
2 large eggs
6 cups confectioners' sugar
3/4 cup butter
1/2 cup buttermilk or 1/2 cup plain yogurt
1 1/2 teaspoons espresso powder
1 tablespoon hot water
1/3 cup semi-sweet chocolate chips
1 tablespoon milk
1 tablespoon corn syrup
1/2 cup chopped walnuts (optional) or 1/2 cup pecans (optional)

Steps:

  • Combine the "fed" starter, milk, and flour in a large mixing bowl. Cover and let rest at room temperature for 2 to 3 hours. It won't necessarily bubble, but it may have expanded a bit.
  • Preheat the oven to 350°F Lightly grease a 9" x 13" pan.
  • In a separate bowl, beat together the sugar, oil, vanilla, salt, baking soda, and cocoa. The mixture will be grainy.
  • Add the eggs one at a time, beating well after each addition.
  • Gently combine the chocolate mixture with the starter-flour-milk mixture, stirring till smooth. This will be a gloppy process at first, but the batter will smooth out as you continue to beat gently.
  • Pour the batter into the prepared pan.
  • Bake the cake for 30 to 40 minutes, until it springs back when lightly pressed in the center, and a cake tester inserted into the center comes out clean.
  • Remove the cake from the oven, and cool on a rack while you make the icing.
  • Sift the confectioners' sugar into a large mixing bowl, and set it aside.
  • In a small saucepan set over medium heat, melt the butter and add the buttermilk or yogurt. Dissolve the espresso powder in the hot water, add to the pan, and bring the mixture just to a boil.
  • Immediately pour the simmering liquid over the confectioners' sugar in the bowl, and beat till smooth.
  • Pour the warm frosting over the cake.
  • Combine the chocolate chips, milk, and corn syrup in a microwave-safe cup. Microwave till the chips soften, then stir till smooth.
  • Drizzle the chocolate over the icing. (This can be done immediately or you can wait until the cake is cooled.).
  • If desired sprinkle chopped nuts on top.

The sourdough cake recipe did not come with an icing recipe, so I used a tried and true old fashioned cooked icing...

FOR THE CAKE:
1 c sourdough starter
1 c sugar
1/2 c cooking oil
2 eggs
1 c milk
2 tsp vanilla
3 squares, chocolate (melted)
1/4 c cocoa powder
1/2 tsp salt
1 tsp soda
1 tsp baking powder
1 c ****flour (if the starter is too thin
FOR THE ICING:
1 1/2 c sugar
1/2 c butter
3 1/2 Tbsp cocoa powder
1/2 c water
1 tsp vanilla ***add after cooking the icing

Steps:

  • 1. Preheat oven to 350 F. Grease 2 9" aluminum tins. To sourdough starter, min in sugar, oil and eggs.
  • 2. Add milk and vanilla. Add melted chocolate and cocoa powder. Stir well but do not beat.
  • 3. Add salt, soda and baking powder last. ***IF NEEDED: Add flour to get a cake batter consistency.
  • 4. Bake cake 30-50 minutes (until cake comes out clean when tested).
  • 5. While cake is baking, make the icing.
  • 6. Bring the sugar, butter, cocoa powder and water to a boil. Boil 5 minutes or until icing is at the soft ball stage. Remove from heat and stir in vanilla.
  • 7. Pour or spoon over cake.

¾ cup cold water
1 teaspoon vanilla extract

Steps:

  • Sift together flour, cocoa, soda, baking powder, and salt.
  • Cream shortening, sugar, and eggs. Blend in sourdough starter. Add sifted ingredients slowly to creamed mixture, beating until smooth. Stir in water and vanilla, and mix well. Pour batter into greased and floured 9 x 13 inch pan.
  • Bake at 350 degrees F (175 degrees C) for 35 minutes, or until done.

  • Prepare chocolate mixture by placing chocolate in a small pan and adding hot water.

1/2 cup thick sourdough starter
1 cup water
1 1/2 cups flour
1/4 cup nonfat dry milk

Steps:

  • 1. Mix and let ferment 2 to 3 hours in a warm place until bubbly and there is a clear sour milk odor. Add: 1 cup granulated sugar 1/2 cup vegetable oil 1/2 teaspoon salt 1 teaspoon vanilla extract 1 teaspoon cinnamon 1 1/2 teaspoons baking soda 2 eggs 3 (1 ounce) squares chocolate, melted
  • 2. Cream, sugar, oil, salt, flavorings and baking soda. Add eggs, one at a time, beating well after each addition. Combine creamed mixture and melted chocolate with sourdough mixture. Stir 300 strokes or mix at low speed until blended. Pour into 2 layer pans or 1 large cake pan. Bake at 350 degrees F for 25 to 30 minutes. Cool and frost with your favorite icing.
