SOUR CREAM RAISIN TARTS
My sister shared this recipe from her mother-in-law, we make this at Thanksgiving and Christmas traditionally...it's one of the many goodies we make from our collection of favorite recipes...it's quite rich but sinfully delicious...(sorry, I couldn't remove the calories), lol

- 1. In a saucepan, over medium heat, bring to a slow boil the following ingredients: 1 cup white sugar, 1 cup sour cream, 1 beaten egg, 1 TBSP flour, 1 TBSP vanilla, and 1 cup golden raisins (soaked in hot water and drained)...Stir constantly until thickened...
- 2. Pre-bake your favorite pie crust, (remember to prick the pie shells before baking), Bake @350 degrees for 9 minutes...let cool...then put a little of the filling in each shell and bake @400 degrees for 12 - 14 minutes...the shells will look like they won't hold anything, but they do, (just work with it)...these are to die for delicious, they are very rich....hope you enjoy them as much as we do....

This one was in my stash. I haven't tried them yet but they sound wonderful. I love anything lemon. Time does not include chilling.

Steps:
- Whisk sugar and cornstarch in a 1 quart saucepan to mix. Whisk in milk, egg yolks and lemon juice until smooth.
- Bring to a boil over medium heat, stirring gently with a rubber spatula. Boil, stirring constantly, 30 seconds or until translucent and thick. Remove from heat. Add lemon peel and butter; stir until butter melts. Cover surface directly with wax paper to prevent a skin from forming. Cool to room temperature.
- Fold in sour cream until well blended. Spoon about 1/3 cup into each crust. Cover loosely and refrigerate at least 4 hours until sest, or up to 2 days.
- To serve, garnish with whipped cream and lemon slices.

SOUR CREAM CHICKEN TARTS
This is a simple recipe that looks like you spent a lot of time on it. This recipe makes TWO tarts (9-inch pie plates). I've made this once for friends, and it was creamy & delicious, full of flavor. It's sort of quiche-like, but I found it more full-bodied and not as "eggy." Served with a spinach salad & artichoke dip with pita toasts. Yum. I also think this would be good with mushrooms added, or artichokes.

Steps:
- Preheat oven to 400 degrees.
- (If using pie shells in foil pans, place baking sheet in preheating oven.).
- In medium saucepan, fry bacon until almost crisp.
- Add onion and saute, stirring, about 1 minute.
- Stir in chopped chicken, green chilies and salt.
- Cook 2 minutes, stirring well.
- Take off heat, drain any excess drippings& set aside.
- Divide bacon/chicken mixture and spread evenly between pie shells.
- Mix cheese together, and spread over bacon/chicken mixture.
- In small mixing bowl, whisk 1/3 cup sour cream with 2 of the eggs, one at a time.
- Add 1/3 cup milk; whisk.
- Pour mixture over one pie pan.
- Repeat sour cream-egg-milk mixture for 2nd pie pan.
- (If using foil pie pans, place tarts on heated metal baking sheet.) Place in oven and bake 20 minutes.
- After 20 minutes, reduce heat to 350 degrees, and bake an additional 25 minutes.
- Remove from oven and let stand 5 minutes before slicing.
- Each tart yields 6 small slices.
LEMON SOUR CREAM TARTS

- Divide pie dough into quarters. Roll each quarter of dough separately into a circle and place into mini tarts pans {Mine were 4 inches x 3/4 inch}. Blind bake according to package directions. Remove from oven and wait to cool to room temp.
- Place sugar and cornstarch into a small stock pot and whisk. Stir in milk and lemon juice and place over medium high heat. Bring to boil to thicken then reduce heat to low. Temper egg yolks with thickened filling and then pour the entire mixture back into the pot. Let mixture bubble over medium heat for another 1 minute.
- Remove from heat and stir in butter, lemon zest and then finally sour cream. Divide between the baked shells evenly and smooth the tops. Refrigerate until you're ready to serve.
