VANVOORST HAM CASSEROLE

This came from a long line of VanVoorst women from rural Illinois. It's a goodie to pass along and works great with leftover ham as well as ham steak! We serve it up with garlic bread and green beans or broccoli. You may also top with Parmesan cheese and Italian bread crumbs to change it up.

10 ounces uncooked spiral pasta
2 cups cubed fully cooked ham
1 cup sour cream
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup shredded mozzarella cheese
2 tablespoons prepared yellow mustard
1 tablespoon chopped fresh parsley
salt and pepper to taste
½ cup shredded mozzarella cheese
1 tablespoon chopped fresh parsley

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the pasta, and return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole dish.
  • Mix together the ham, sour cream, mushroom soup, 1/2 cup of mozzarella cheese, yellow mustard, and 1 tablespoon of parsley in a bowl until well combined. Fold in the cooked pasta, season to taste with salt and pepper, and spoon the mixture into the prepared casserole dish. Sprinkle top of casserole with 1/2 cup mozzarella cheese and 1 tablespoon of parsley.
  • Bake in the preheated oven until the casserole is hot and bubbling, and the cheese topping has melted and begun to brown, about 30 minutes. Allow to stand 5 to 10 minutes before serving.

2 tablespoons vegetable oil
1 cup sliced mushrooms
1 small onion, diced
8 ounces smoked lean ham
10 ounces frozen peas
1/2 teaspoon salt
1 medium garlic clove, minced
1 lb bow tie pasta
1 cup sour cream
1/2 teaspoon pepper
4 ounces monterey jack cheese

Steps:

  • Cook pasta according to directions.
  • Cook peas according to directions.
  • Heat oil, add onion and saute.
  • add mushrooms and saute.
  • add garlic and saute.
  • add ham and cook until heated.
  • Remove pan from heat.
  • Stir in sour cream, peas, salt and pepper.
  • Toss ham mixture, hot pasta and cheese in a large serving.

2 (10 ounce) packages frozen spinach, cooked and drained well
2 cups cornbread stuffing mix (I like Pepperidge Farm) or 2 cups seasoned stuffing mix (I like Pepperidge Farm)
2 cups sour cream
24 slices boiled ham, thinly sliced
8 tablespoons butter
8 tablespoons flour
3 1/2 cups milk
1/2 cup sharp cheddar cheese, grated
1/4 cup parmesan cheese, grated (can add more if you like)
paprika (optional)

Steps:

  • Preheat oven to 350 degrees; combine spinach, very well drained, stuffing, sour cream.
  • Spread mixture on ham slices and roll up with seam side down in baking dish.
  • Melt butter in saucepan.
  • Add flour and blend well.
  • Add milk and continue to stir over medium heat until thick.
  • Add cheddar cheese and remove from heat.
  • Stir until cheese is melted.
  • Pour sauce over ham rolls and sprinkle with parmesan cheese and paprika, if desired.
  • Cover with foil.
  • Bake 20 minutes covered and 20 minutes uncovered.

4 boneless fully cooked ham steaks (about 5 ounces each)
1/4 cup water
1/4 cup honey mustard
1/2 cup sour cream
1/4 cup thinly sliced green onions

Steps:

  • Place ham steaks in a large skillet. In a small bowl, combine water and mustard; pour over ham. Bring to a boil. Reduce heat; cover and simmer for 3-4 minutes on each side or until heated through. Remove from the heat; stir in sour cream and onions.
