Souper simple! Macaroni with beef and tomatoes in an onion soup sauce topped with melted Mozzarella.

1 pound lean ground beef
1 (1 ounce) package dry onion soup mix
1 teaspoon dried oregano
1 (28 ounce) can whole peeled tomatoes, undrained and chopped
2 cups water
2 cups macaroni
⅓ cup grated Parmesan cheese
½ cup shredded mozzarella cheese

Steps:

  • In a skillet over medium heat, brown the ground beef until no pink shows; drain.
  • Stir in onion soup mix, oregano, tomatoes and water. Bring to boil; stir in macaroni. Simmer covered, stirring occasionally for 20 minutes or until macaroni is tender. Sprinkle in Parmesan cheese and top with Mozzarella cheese.

2 tablespoons vegetable or olive oil
1 medium onion, chopped
1 pound vegetables, cut into bite-size pieces
1 pound meat (boneless, skinless chicken thighs, etc.)
1 pound potatoes, cut into medium dice, or 2 cans beans
1 cup canned crushed tomatoes
2 cans (16 ounces each) low sodium canned chicken broth
Herbs, spice or flavoring of choice
Salt and ground black pepper

Steps:

  • Heat the oil in a Dutch oven or soup kettle. Add the onions; saute to soften slightly, about 2 minutes. Add remaining vegetables, meat of choice, starch of choice, tomatoes, chicken broth, and dried herb or spice of choice. Partially cover and simmer until vegetables are tender and flavors have blended, about 20 minutes. Add fresh herbs, season with salt and ground black pepper to taste.

1 (16 ounce) can crushed tomatoes with juice
1 package dry onion soup mix (such as Lipton's)
2 cups water
2 1/2 cups elbow macaroni or 2 1/2 cups shell pasta (uncooked)
1 cup shredded cheddar cheese
salt and pepper

Steps:

  • Brown ground beef and onion in a large pot, add onion soup mix, tomatoes, water and bring to a boil.
  • Stir in uncooked pasta, cover and simmer about 10-12 min until pasta cooks.
  • Stir in cheddar cheese and salt and pepper to taste.
  • Serve and top with more cheese if you like.
