BEEF STUFFED SOPAIPILLAS

2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
1/2 cup water
1/4 cup evaporated milk
1 1/2 teaspoons vegetable oil
1 lb ground beef
3/4 cup chopped onion
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1 (10 3/4 ounce) can condensed cream of chicken soup, undiluted
1/2 cup chicken broth
1 (4 ounce) can chopped green chilies
1/2 teaspoon onion powder
2 cups cheddar cheese, shredded

Steps:

  • SOPAIPILLAS:.
  • In a bowl, combine the flour, salt and baking powder.
  • Stir in water, milk and oil with a fork until a ball forms.
  • Gently knead dough on a lightly floured surface for 2-3 minutes.
  • Cover bowl and let stand for 15 minutes.
  • Divide into four portions and roll each into a 6 1/2" circle.
  • Fry each circle, one at a time in oil heated to 375 degrees for 2-3 minutes on each side or until golden brown.
  • Drain on paper towels.
  • FILLING:.
  • In a skillet, cook beef and onion over medium heat until meat is brown and crumbly.
  • Drain any oil.
  • Stir in the salt, garlic powder and pepper.
  • SAUCE:.
  • In a separate saucepan, combine soup, broth, chilies and onion powder.
  • Cook for 10 minutes or until heated through.
  • ASSEMBLY:.
  • Cut a slit in the side of each sopaipilla.
  • Fill with 1/2 cup meat mixture.
  • Sprinkle with cheese.
  • Serve with sauce.

This is a tasty treat that my boyfriend loves. I think its great in the winter when its hot out of the oven, but also a reminder of boardwalk food in the summer. It can not only be eaten as a snack or dessert but even a breakfast. Enjoy!

1/2 of a 17 . 3-ounce package pepperidge farm puff pastry sheet, thawed (1 sheet)
3/4 cup sugar
1 tablespoon ground cinnamon
honey (optional)

Steps:

  • Heat the oven to 400°F
  • Unfold the pastry sheet on a lightly floured surface.
  • Cut the pastry sheet into 25 (2-inch) squares.
  • Place the sugar and cinnamon into a paper bag and shake to combine.
  • Bake for 15 minutes or until the pastries are golden brown.
  • Add the hot pastries in batches to the bag and shake until coated with the sugar mixture.
  • Drizzle the pastries with the honey if desired before serving.

2 teaspoons baking powder
1 teaspoon salt
4 tablespoons shortening
1 ½ cups warm water
2 quarts oil for frying

Steps:

  • In a large bowl, stir together flour, baking powder, salt and shortening. Stir in water; mix until dough is smooth. Cover and let stand for 20 minutes.
  • Roll out on floured board until 1/8 to 1/4 inch thick. Cut into 3 inch squares. Heat oil in deep-fryer to 375 degrees F (190 degrees C). Fry until golden brown on both sides. Drain on paper towels and serve hot.
