This has been a favorite of my family's for a long time. Don't expect any leftovers. Serve over sliced French bread.

1 (3 pound) beef pot roast
1 onion, diced
1 cup fresh mint leaves
2 cloves garlic, minced, or more to taste
2 teaspoons ground cinnamon
2 teaspoons ground allspice
2 bay leaves, or more to taste
salt and ground black pepper to taste
water to cover
1 head cabbage, quartered, or more to taste

Steps:

  • Place pot roast, onion, mint, garlic, cinnamon, allspice, and bay leaves in a large pot. Season with salt and pepper. Pour in enough water to cover the roast. Cook over medium heat until roast is tender, adding more water if needed, about 4 hours.
  • Stir cabbage wedges into the pot. Simmer until cabbage is tender, about 30 minutes.

1 1/2 pounds thinly sliced tender steak, Tri-tip or sirloin OR thinly sliced pork
1 pound large onions, sliced
2 tablespoons unsalted butter
6 garlic cloves
5 large ripe tomatoes, sliced
12 bay leaves
Handful parsley, chopped
Piri Piri (crushed red peppers, olive oil, garlic, salt pepper to taste)

Steps:

  • Melt butter in saute pan. Layer steak, onions, tomatoes, garlic and parsley with a few bay leaves on each layer. Repeat till all the steak is finished. Cook on med low heat for approximately 30 mins or until meat is done and tender. Serve with boiled potatoes or white rice.

This recipe is submitted for play in ZWT8 - Spain/Portugal. It is a recipe by Ana Patuleia Ortins This is a truly wonderful dish that is easy to make and loaded with vitamin A. It is unique because a straight forward puréed soup that does not require other ingredients to give it additional texture is unusual in Portuguese cooking. When entertaining, I dress this soup up with a drizzle of heavy cream.

4 tablespoons olive oil
1 onion, small, coarsely chopped
1/4 cup tomatoes, very ripe, peeled, seeded, coarsely chopped
1 garlic clove, left whole
1 lb carrot, peeled, coarsely chopped
1 sweet potato, medium, white, peeled, chopped into 1-inch pieces
1 cup turnip, yellow, peeled, roughly chopped (rutabaga)
4 cups water
1 tablespoon salt, coarse sea
1/8 teaspoon white pepper

Steps:

  • Heat 2 tbsp of the oil in a 4-quart stock pot over medium-high heat. Add and sauté the onion until a light golden color, then stir in the tomato and garlic.
  • Reduce the heat to medium-low, cover and continue cooking until the tomato is soft and partially dissolved, about 15 minutes.
  • Add in the carrots, sweet potato, and turnip, pour in the water, cover, and bring to a boil over medium-high heat.
  • Reduce the heat and simmer until the vegetables are very tender, about 30 to 40 minutes. Remove the pot from the heat and purée the soup (a hand-blender works well).
  • Stir in the remaining oil and season with salt and pepper. Bring the soup back to a boil, reduce the heat, and simmer for 2 more minutes, then serve.

I picked up a second hand book called Portuguese Cookery by Ursula Bourne, and want to post recipes that I have adapted so that I can make them soonest. If you make this before I do I would very much appreciate your feedback.

Number Of Ingredients 9

2 ounces fatty bacon, chopped
olive oil
1/4 lb onion, chopped
1 1/2 pints chicken stock
3 teaspoons vinegar
salt (to taste)
pepper (to taste)
4 eggs
2 1/2 ounces croutons

Steps:

  • Saute the bacon over a low heat until the fat begins to run out. Add a little olive oil and the onions and continue to saute gently until the onions are golden brown but not caramelized.
  • Pour in the chicken stock and add salt and pepper to taste and simmer for about 10 minutes.
  • In a seperate frying pan, add 2.5cm ( 1 inch of water, a little salt and the vinegar.Bring it to the boil and add each of the eggs, then poach until they are just cooked though.
  • Place one egg in the bottom of each soup plate and gently pour the onion soup mix over the egg.
  • Add the croutons to the top of the soup. Serve immediately.
