Number Of Ingredients 8

1 pound ground beef
1 small onion, chopped
1 small green pepper, chopped
2 packages (8-1/2 ounces each) cornbread/muffin mix
1 can (14-3/4 ounces) cream-style corn
2 large eggs
4 cups shredded cheddar cheese, divided
1 cup picante sauce

Steps:

  • In a skillet, cook beef, onion and green pepper over medium heat until meat is no longer pink; drain and set aside. In a bowl, combine cornbread mixes, corn and eggs; mix well. Spread half into a greased 13x9-in. baking dish. Top with the meat mixture, 3 cups of cheese and the picante sauce. Spread with remaining cornbread mixture; sprinkle with remaining cheese. Bake, uncovered, at 350— for 35-40 minutes or until a knife inserted in the center comes out clean. Let stand 5 minutes before serving.

10 large eggs, beaten
1 1/2 cups milk
1 pkg (6 oz.) OSCAR MAYER Louis Rich Southwestern Chicken Strips, cut into small pieces
1 can (4 oz.) diced green chilies, drained
1 cup KRAFT shredded Monterey Jack cheese
1/2 tsp salt
1/2 tsp pepper
4 slices white bread, toasted and cubed
Topping:
8 slices OSCAR MAYER Bacon, fried and crumbled
1/2 cup KRAFT Shredded Cheddar Cheese

Steps:

  • Combine beaten eggs, milk, small chicken pieces, drained chilies, Monterey Jack cheese, salt, pepper, and toasted cubed bread in a bowl. Stir until mixed together.
  • Grease a 9 by 13 inch glass pan. Pour ingredients into pan and bake at 350 degrees F for 30 to 40 minutes, or until center is set.
  • Remove from oven and sprinkle with fried crumbled bacon and cheddar cheese. Return to oven. Bake for an additional 5 or 10 minutes. Remove from oven and cool for 5 minutes. Cut into squares.

1 lb. ground beef
1/2 c. chopped onion
1/2 c. hot ketchup
1 tbsp. chili powder
1 tsp. salt
1 (16 oz.) can kidney beans, with juice
1/2 c. chopped olives
1/2 c. chopped onions
1 c. sharp cheese, shredded

Steps:

  • Brown ground beef, add onions and cook until tender. Then add ketchup, chili powder, salt. Mash beans with juice and add to beef mixture. Heat through. Put into a flat baking dish. Garnish with onion, green olives and sharp cheese. Bake 20 minutes at 350 degrees. Serve with fritos or crackers --------------------------------------------------------------------------------

This recipe is from the La Fiesta cookbook put out by the Junior League of McAllen, Texas. It is an absolute favorite of my family. It goes great with a few crackers and nice green salad.

2 lb ground beef
1 onion, chopped
1 can(s) red kidney beans
24 oz chunky picante sauce
1 lb cheddar cheese, shredded
2 pkg corn muffin mix
2 eggs
1 - 1 1/3 c milk, depending upon the instructions on your corn muffin mix

Steps:

  • 1. Preheat the oven to whatever temperature your corn muffin mix is to be baked.
  • 2. Brown the ground meat & onion together.
  • 3. While the meat is browning, mix the cornbread mix with the eggs & milk and set aside. Also, drain & rinse the kidney beans until the liquid runs clear.
  • 4. When the meat is done, drain off any fat. Then mix it with the picante sauce and the kidney beans.
  • 5. Pour the meat mixture into the bottom of an UNGREASED 9' x 13" casserole dish.
  • 6. Sprinkle the cheese evenly over the meat.
  • 7. Spoon the corn muffin mix over all and carefully spread evenly.
  • 8. Bake according to corn muffin directions - until a pick inserted in the middle comes out clean.
  • 9. I like to spread a little butter over the top of it. My husband likes to add additional picante sauce to the top of his serving.
