SWEET ONION CASSEROLE

This wonderful combination of sweet onions, Swiss cheese, and rice is a tasty side dish for anything from grilled meats to roasted poultry. It is a favorite in our home, and you'll get rave reviews every time you serve it.

¾ cup uncooked basmati rice
5 cups water
¼ cup butter
3 pounds sweet onions, coarsely chopped
1 cup half-and-half cream
1 ½ teaspoons salt
2 cups shredded Swiss cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 2-quart baking dish.
  • Bring water to a boil in a large saucepan, and sprinkle in the rice. Stir, reduce heat to low, and simmer the rice until it is half-cooked, about 5 minutes. Drain the rice, and set aside.
  • Melt the butter in a large skillet over medium heat, and cook and stir the onions until translucent but not browned, about 8 minutes. Mix the cooked onions and the butter from the skillet with the rice, and stir in the half-and-half, salt, and 1 3/4 cup of the Swiss cheese. Transfer the mixture to the prepared baking dish, and sprinkle the remaining 1/4 cup of Swiss cheese over the top.
  • Bake uncovered in the preheated oven until the rice is tender and the top is lightly browned, about 1 hour.

A solo side dish of moist, and flavorful rice. Substituting 1/4 teaspoon of your favorite curry powder in place of the garlic will give the rice a rich glow and a more subtle flavor. Cooking is a Creative Sport.

2 tablespoons olive oil (optional)
1 clove garlic, diced
1/3 cup onion, diced
1/3 cup uncooked rice (, not instant)
2/3 cup chicken stock

Steps:

  • Heat the olive oil in a small sauce pan that has a tight fitting cover.
  • Add garlic and onion, and stir until the onion becomes transparent, but stop before the garlic starts to turn brown.
  • Add rice and continue to sir until all the grains are coated in the olive oil.
  • Add the chicken stock, lower the heat to barely on, and cover with a tight fitting lid.
  • Keep pan over the low heat for exactly 15 minutes.
  • Remove from the heat but Do NOT peek, and let the pan sit for another 10 minutes.

1 red onion, chopped
1 cup long-grain white rice
1 teaspoon ground black pepper
2 cups chicken broth

Steps:

  • Heat the oil in a saucepan over medium heat. Stir in the onion, and cook until almost tender. Stir in rice, and continue cooking until coated with oil. When onion is tender and rice begins to brown lightly, season with pepper, and pour in the broth. Bring to a boil. Reduce heat to low, cover, and simmer 20 minutes.

Easy Buttered Onion Rice is my version of a recipe that I first saw in a local cookbook while living in the Pascagoula-Gautier area of the Missiissippi Gulf Coast in the '70s! Using butter was considered bad then, but today we consider it better than the old substitutions. Easy dish and enjoyed by all.

1 cup rice (wash before assembling)
1 (1 1/4 ounce) envelope onion soup mix
2 1/2 cups boiling water

  • Stir to mix and dissolve.
  • Add rice.
  • Cover tightly.
  • Cook at 350 degrees for one hour.

2 cups cooked rice
1 onion, sliced
2 tablespoons vegetable oil
1/2 teaspoon mustard seeds
1 teaspoon garlic, chopped
1 green chili pepper, chopped
1 teaspoon cilantro (fresh coriander)
2 teaspoons lime juice
salt and pepper

Steps:

  • Heat the oil in a wok or skillet. Add the mustard seeds and chilis and when it sputters, add the sliced onions. Saute until the onions are golden. Add the rice and salt and pepper to taste. Mix well and heat the rice. Remove from the stove and stir in the lime juice. Sprinkle with the cilantro and serve.

1 cup white rice (cook as directed with 1 tsp. salt)
7 cups vidalia onions, medium diced (Seems like a lot, but it cooks down)
4 tablespoons butter or 4 tablespoons margarine
1 1/2 cups half-and-half or 1 1/2 cups 2% low-fat milk
1 1/2 cups swiss cheese, grated (1/2 pound)

Steps:

  • Sauate onions in butter til soft.
  • Combine ingredients and place in 9 x 13 baking dish.
  • Bake at 350 degrees for 50 minutes.
  • Can be made a day ahead. Tastes even better the next day.
  • Makes great leftovers.
