2 ripe pears, peeled, cored and quartered
3 tablespoons poire william eau de vie (pear, or brandy of your choice)
1 tablespoon sugar
2 eggs
120 g sugar
140 g flour
10 g dry yeast (1 1/2 packet)
30 g hazelnuts, finely ground (or walnuts)
1 pinch salt
200 ml cream

Steps:

  • Put the pears in a bowl with poire (pear) William eau de vie and sugar. Set aside.
  • Meanwhile, beat the eggs with sugar for 2 - 3 minutes. Add flour, dry yeast, ground hazelnuts powder and a pinch of salt. Mix and combine.
  • Add the cream, mix well to combine the ingredients.
  • Drain the pears but keep the eau de vie and stir it into the cake dough.
  • Pour the dough into the round buttered 25 cm springform. Arrange the pear quarters by pressing them slightly into the dough. Bake the cake in the oven at 180°C for about 45 minutes.

This is a recipe of my great-great grandmother's. It is wonderfully sweet and fresh. It's so delicious, it never lasts long!

4 fresh pears
1 cup white sugar
1 cup packed brown sugar
1 cup chopped pecans
1 cup vegetable oil
2 eggs
3 cups all-purpose flour
½ teaspoon salt
2 teaspoons baking soda
1 teaspoon vanilla extract

Steps:

  • Peel and slice pears thin. Mix sliced pears with white sugar, brown sugar, and nuts and let sit for one hour. After sitting puree pear mixture in a blender.
  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 13x9 inch pan.
  • By hand stir in until just blended; the flour, salt, and baking soda. Add dry ingredients to pear mixture and add oil, vanilla and eggs. Pour batter into prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 1 hour and 15 minutes.
