2 3/4 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/4 cups butter
2 cups sugar
2 large eggs
2 teaspoons vanilla
colored crystal sugar (optional)

Steps:

  • Stir together flour, baking powder and salt; set aside.
  • In a large bowl, cream together butter and sugar until fluffy.
  • Beat in eggs one at a time, then beat in vanilla.
  • Gradually stir in dry mixture just until blended.
  • Roll the dough into walnut-sized balls then roll in colored sugar.
  • Refrigerate balls for at least 20 minutes or freeze until ready to bake.
  • Place cookies 2" apart on an un-greased cookie sheet and flatten slightly with the palm of your hand.
  • Bake in a 350°F oven for 8-10 minutes until lightly browned at the edges.
  • Cool on cookie sheet for 5 minutes, then remove to cool on a wire rack.

I make this sugar cookie recipe every Christmas with my family. My mom is a teacher, and she had a baker's daughter many years ago. The baker made these for a class party, and my mom loved them so much that she shared her recipe. The trick is not to overcook them. I always use almond extract because I think it gives a better flavor. I have also made them with royal icing, and they tasted equally delicious. It is all your personal preference. This recipe does make a lot of cookies, depending on how big you cut them, but they always go really fast. This recipe makes a soft, tender dough. The dough initially is sticky, so add flour as you roll them out- but remember, the more flour you add and the more you mix them, the tougher the dough. Enjoy them!

2 cups sugar
1 cup shortening
1 cup sour cream
3 eggs
1/2 teaspoon almond extract or 1 teaspoon vanilla
5 cups flour
1 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Cream sugar and shortning. Add sour cream, eggs, and almond/vanilla. Mix well.
  • In a separate bowl, mix flour, baking soda, and salt.
  • Add to creamed mixture until well blended. Remember, the more you mix, the tougher your dough will be.
  • Chill for a few hours (at least 3-4). The dough will be soft and slightly sticky.
  • Roll out (I use a floured pastry cloth), and cut with a cookie cutter. Flour cutter between each cookie to prevent sticking.
  • Bake at 350 degrees for 8-10 minutes. Cookies shouldn't be brown, just done to the touch.
  • FROSTING- See ingredients below.
  • 2 lbs. powdered sugar 1 cup shortening 1/2 cup water 1/2 teaspoon almond extract.
  • Just mix ingredients until smooth.

1/2 cup unsalted butter, softened (1 stick)
1/2 cup granulated sugar
1/2 cup light brown sugar, packed
1 large egg
2 tablespoons cream or milk
1 1/2 teaspoons vanilla extract
1 cup all-purpose flour
3/4 cup bread flour (all-purpose flour may be substituted and used exclusively; bread flour yields chewier cookies and is recommended)
1 teaspoon baking soda
1/4 teaspoon salt, optional and to taste

Steps:

  • To the bowl of a stand mixer fitted with the paddle attachment, beat the butter on low speed until smooth, 1 to 2 minutes. Add the sugars and beat on medium-high speed until creamed and well combined, 2 to 3 minutes. Stop, scrape down the sides of the bowl, and add the egg, cream, vanilla, and beat on medium-high speed until light and fluffy, 4 to 5 minutes. Stop, scrape down the sides of the bowl, and add the flours, baking soda, salt, and mix until just combined, about 1 minute. Transfer dough to an airtight container and refrigerate for at least 3 hours, up to 5 days. Notes regarding the flour - solely using all-purpose flour will work, the cookies will not be as chewy or rise as well because bread flour creates chewier results and gives greater rise. Also, I live in a dry climate and only need 1 3/4 cups flour total but if you are in more humidity or your dough is very moist or loose, adding up to 1/4 cup of additional flour, for 2 cups total, is possible. The more flour, the more the cookies will stay domed and puffed while baking. Preheat oven to 350°F, line a baking sheet with a Silpat Non-Stick Baking Mat, parchment, or spray with cooking spray. Using a 2-ounce cookie scoop, form heaping mounds weighing 2 1/4-ounces each (weighed on a scale, which is approximately a scant 1/4-cup measure) and place them on the baking sheet, spaced at least 2 inches apart. Bake for 8 to 10 minutes, or until pale golden and edges have just set, even if slightly undercooked in the center, as cookies will firm up as they cool (The cookies shown in the photos were baked for 9 minutes and have chewy edges with soft pillowy centers. For crunchier cookies, extend baking time by 1 to 3 minutes). Allow cookies to cool on the baking sheet for 10 minutes before removing. Store cookies in an airtight container at room temperature for up to 5 days or in the freezer for up to 3 months.

1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup butter, softened
1 1/2 cups white sugar
1 egg
1/2 teaspoon vanilla extract
1 - 1 1/2 teaspoons lemon extract (depending on how lemony you want them to be!)
1 tablespoon dried lemon peel
1/2 cup sugar for rolling cookies

Steps:

  • Preheat oven to 350 degrees. Line cookie sheets with parchment paper. In a small bowl, stir together flour, baking soda, baking powder and salt. Set aside. Using a mixer, beat together the butter and sugar until smooth and very fluffy. Beat in egg, vanilla extract, lemon extract and lemon peel. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and roll in sugar. Place on lined cookie sheets about 1 1/2 inches apart. Bake 8 to 10 minutes in the preheated oven, or until lightly browned. Let stand on cookie sheet two minutes before removing to cool on wire racks. One more thing: If you don't already do this, store your cookies in a conainer with some pieces of bread. Any mildly flavored bread will do. The cookies will suck the moisture out of the bread. The cookies will be soft. And wonderful. I only learned this trick a year or two ago and I now swear by it. If you want soft cookies, you must use the bread.

These cookies are a hybrid between a sugar cookie and a snickerdoodle, and are scented abundantly with vanilla. They have wonderfully chewy edges, thanks to the addition of bread flour, and soft, tender centers. The dough comes together very easily and quickly but needs to be refrigerated for at least 3 hours prior to baking so the cookies bake up thick, puffy, and chewy. The dough can be refrigerated for up to 5 days so you can bake off one or two cookies at a time, if preferred. This is a small-batch recipe and makes just one-dozen, perfect for times when more is not always better.
