My 3-year-old loves these cookie bites, and so do most people who try them.

1 cup unsalted butter
½ cup packed light brown sugar
2 teaspoons vanilla extract
2 cups sifted all-purpose flour
2 cups finely chopped pecans
1 tablespoon sifted confectioners' sugar, or as needed

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease 4 baking sheets.
  • Beat butter and brown sugar together in a bowl using an electric mixer. Stir in vanilla extract. Stir in flour gradually; mixture will be crumbly. Add pecans and work into the dough.
  • Pinch off dough in teaspoons; roll in hands to form balls that are about 1/2-inch in diameter. Place onto the prepared baking sheets.
  • Bake in the preheated oven until firm and browned on bottoms, 15 to 18 minutes.
  • Remove from the oven and let cool slightly, about 5 minutes. Roll warm cookies in confectioners' sugar.

Gift the flavors of Christmas snowball cookies with our Snowball Cookie Layered Pancake Jars.

2 cups Original Bisquick™ mix
2 teaspoons baking powder
1/4 cup granulated sugar
3/4 cup powdered sugar
1 cup pecans, finely chopped
1 cup milk
1 egg
2 teaspoons vanilla
2 tablespoons butter, melted

Steps:

  • To make Cookie Pancake Mix, mix Bisquick mix, baking powder and granulated sugar in medium bowl.
  • In clean quart jar, add powdered sugar, followed by Bisquick mixture, and finally chopped pecans. Press each layer down with back of spoon to gently compact it before adding the next layer. Top the jar with a lid and ring.
  • To make the pancakes, dump Bisquick mixture and pecans into large bowl, reserving powdered sugar for topping. Add milk, egg, vanilla and butter, and stir until combined. Batter will be a little lumpy.
  • Pour by 1/3 cupfuls onto greased hot skillet. Cook until edges are dry and bubbles appear on the surface, about 3 minutes. Turn, and cook on other side 2 minutes. Repeat with remaining batter.
  • Serve pancakes with generous sprinkling of powdered sugar and, if desired, maple syrup.

I like to make these coconut-covered balls when the snow is flying outside. I've shared the candies with many of my friends and family members, an everyone loves them.

Number Of Ingredients 8

2 cups nonfat dry milk powder
1 cup chunky peanut butter
1 cup honey
1 teaspoon vanilla extract
8 ounces white candy coating, coarsely chopped
1/4 cup shortening
3 cups sweetened shredded coconut
Assorted food coloring, optional

Steps:

  • In a large bowl, combine the milk powder, peanut butter, honey and vanilla. Shape into 1-in. balls. Place on a waxed paper-lined baking sheet. Let stand, uncovered, for 30 minutes., In a microwave-safe bowl, melt candy coating and shortening at 70% power for 1-2 minutes; stir until smooth. If desired, tint some of the candy coating with food coloring. Dip balls into coating, then roll in coconut. Return to baking sheet; let stand until set. Store in an airtight container at room temperature.
