1/3 cup granulated sugar
1 teaspoon ground cinnamon
1 1/2 cups all-purpose flour
1 cup quick-cooking oats or 1 cup old fashioned oats, uncooked
1/2 cup granulated sugar
1 tablespoon baking powder
1 cup milk
1 egg, lightly beaten
4 tablespoons margarine or 4 tablespoons butter, melted
1 teaspoon vanilla

Steps:

  • Heat oven to 400°F Spray bottoms only of mini muffin pan cups with cooking spray.
  • For topping, combine sugar and cinnamon in small bowl; mix well and set aside.
  • For muffins, combine flour, oats, sugar and baking powder in large bowl; mix well. In small bowl, combine milk, egg, margarine and vanilla; blend well. Add to dry ingredients all at once; stir just until dry ingredients are moistened. (Do not overmix.)
  • Fill muffin cups two-thirds full. Sprinkle topping evenly over tops of muffins.
  • Bake 12 to 14 minutes or until light golden brown. Cool muffins in pan on wire rack 5 minutes; remove from pan. Serve warm.
  • Note: To prepare regular-size muffins, line 12 medium muffin pan cups with paper baking cups or spray bottoms only with cooking spray. Prepare muffin batter as directed above. Fill muffin cups almost full. Sprinkle with topping. Bake 18 to 22 minutes or until light golden brown. Cool muffins in pan on wire rack 5 minutes; remove from pan. Serve warm.

2 stick butter, unsalted
1 c sugar
2 tsp vanilla
2 eggs
3/4 tsp baking soda
3/4 tsp baking powder
3/4 tsp cream of tartar
3/4 tsp coursely grated nutmeg
1-1/4 c sour cream
2-1/4 c all purpose flour
1/2 c sugar and 1 tblsp. cinnamon mixed together for rolling

Steps:

  • 1. Cream the butter and sugar together until soft about 3 to 5 minutes. Add in the vanilla. Add in the eggs one at a time and mix until each is incorporated.
  • 2. In a separate bowl, mix together the flour, baking soda, baking powder, cream of tarter, and nutmeg.
  • 3. Add the flour mixture and the sour cream alternately to the egg-butter mixture in the additions. Start with the flour and end with the flour. Scrape the bowl occasionally.
  • 4. Using an ice cream scoop, scoop out muffin batter one at a time and drop into a shallow bowl filled with cinnamon sugar mixture. Roll the muffin around in the mixture until it is completely covered with the cinnamon sugar mixture. place muffin in muffin tin.   • For dipping your donut muffins, prepare the following: In a small bowl, •Melt 1/2 cup butter In a small bowl mix, •1/2 cup Sugar •1 1/2 teaspoons Ground Cinnamon Directions Preheat oven to 350 Degrees F. Spray mini muffin tin with non-stick cooking spray - be sure to spray the top of the pan too. In a large bowl, mix melted butter, sugar and vanilla - mix until smooth. Next pour milk over mixture, set aside, do not mix. In a medium size bowl, mix the remaining dry ingredients (flour, baking powder, cinnamon, cream of tartar and nutmeg). 1 -2 granny smith apple, peeled and diced
1/2 cup melted butter
1 cup sugar
1 teaspoon cinnamon

Steps:

  • Mix flour, sugar, salt and baking powder in a large bowl. Add melted butter, milk and egg. Stir together until mixed but still lumpy. Fold in diced apples.
  • Scoop into sprayed or lined muffin tins, filling 1/2 to 3/4 full. Bake at 425 degrees for 9-11 minutes. Do not over bake.

1 c oats

4 Tbsp butter

  • 2. Mix together egg, butter and vanilla and milk

  • 5. While baking mix the topping together, 1/3 cup of sugar and 1 teaspoon of cinnamon. once muffins are out put topping on muffins. If you prefer a lot of topping brush a little melted butter ontop of muffin to get more of the topping to stick.

1 cup sugar
2 large eggs
2 teaspoons vanilla extract
2 1/4 cups all-purpose flour
3/4 teaspoons baking powder
3/4 teaspoons baking soda
3/4 teaspoons cream of tartar
1/2 teaspoon Kosher salt
1 cup sour cream
1/4 cup buttermilk
topping:
2/3 cups sugar
2 tablespoons cinnamon

Steps:

  • 1. Preheat the oven to 350 degrees F. Line standard muffin tins with paper liners. 2. With an electric mixer on medium-high speed, cream butter and sugar until pale and fluffy. Add eggs, one at a time, beating until each is incorporated, scraping down sides of bowl as needed. Beat in vanilla. 3. In a separate bowl, combine the dry ingredients. Add half of the dry ingredients to the mixing bowl and stir to combine. Add the sour cream and buttermilk and mix to combine. Add the rest of the dry ingredients and mix until you have smooth batter, making sure not to over mix. 4. In a small bowl, combine the sugar and cinnamon for the topping. Use an ice cream scooper (I used a large 3 tablespoon one) and plop a scoop of batter into the bowl with the sugar and cinnamon. Gently roll the batter in the sugar and cinnamon. Place the ball into the muffin liner. 5. When you have completed all of the muffins, sprinkle the leftover cinnamon sugar onto the tops of all of the muffins. 6. Bake the muffins at 350 degrees F for about 15-18 minutes or until they are golden on top and just baked through.
