1 cup butter, softened
2 cups packed brown sugar
2 large eggs, room temperature
2 teaspoons vanilla extract
2-1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1/4 cup sugar
3 teaspoons ground cinnamon
2 cans (13.4 ounces each) dulce de leche
12 ounces white baking chocolate, chopped
1/3 cup heavy whipping cream
1 tablespoon light corn syrup

Steps:

  • Preheat oven to 350°. Line a 13x9-in. baking pan with parchment, letting ends extend over sides by 1 in., In a large bowl, cream butter and brown sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. In another bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture. Spread onto bottom of prepared pan., In a small bowl, mix sugar and cinnamon; sprinkle 2 tablespoons mixture over batter. Bake until edges are light brown, 25-30 minutes. Cool completely in pan on a wire rack., Spread dulce de leche over crust. In a small saucepan, combine white baking chocolate, cream and corn syrup; cook and stir over low heat until smooth. Cool slightly. Spread over dulce de leche. Sprinkle with remaining cinnamon sugar. Refrigerate, covered, at least 1 hour., Lifting with parchment, remove from pan. Cut into bars. Refrigerate leftovers.

Nonstick cooking spray
2 sticks (1 cup) unsalted butter, at room temperature
1 1/4 cups granulated sugar
3/4 cup packed light brown sugar
2 large eggs
1 1/2 teaspoons pure vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
3/4 teaspoon fine sea salt
2 teaspoons ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease a 9-by-13-inch baking pan with nonstick spray and line with parchment, leaving a 2-inch overhang on the long sides for lifting out the finished bars.
  • In the bowl of a stand mixer fitted with the paddle attachment (or in a large bowl with a handheld mixer), cream the butter with 1 cup of the granulated sugar and all of the brown sugar until light and fluffy, 4 to 5 minutes.
  • Scrape the bowl well with a rubber spatula, then add the eggs one at a time and mix on medium speed after each addition until well combined. Beat in the vanilla.
  • Add the flour, baking powder and salt and pulse until they start to combine, then scrape the bowl well and mix on low speed until the dough is uniformly combined.
  • Scoop the dough into the prepared pan and press into an even layer. Stir the remaining 1/4 cup granulated sugar with the cinnamon in a small bowl. Sprinkle the cinnamon sugar evenly over the bars.
  • Bake until the edges are golden and the center is set, 25 to 30 minutes.
  • Let cool completely in the pan, then run a small spatula around the edge. Use the parchment overhang to carefully lift the bars out of the pan. Cut into 16 equal bars.

Steps:

2 cups Corn Chex
1 cup Rice Chex
1 cup Whole Wheat Chex
1 1/2 cups bite size pretzels
1 cup air popped popcorn
1 cup mixed nuts (I used peanuts, cashews, pistachios and pecans)
1/4 cup salted butter, melted
1 teaspoon cinnamon
1 teaspoon vanilla extract
1 cup creamy peanut butter
1 cup karo syrup
1 cup brown sugar
2 to 3 cups semi-sweet chocolate chips (I like to use all 3 cups)

Steps:

  • In a large bowl combine the corn Chex, rice Chex, whole wheat Chex, pretzels, popcorn and nuts. Toss well. In a small bowl whisk together the melted butter, cinnamon and vanilla. Pour the butter mixture over the Chex mix and toss well with you hands until the butter and cinnamon has coated all of the Chex mix. Add the Karo syrup, peanut butter and brown sugar together in medium saucepan. Heat almost to a boil but be careful not to burn. Stir to combine the ingredients. Once the mixture begins to bubble around the edges, stir for 1 minute and then remove from the heat. Pour the peanut butter mixture over the Chex mix and toss well with a spatula. Spoon the mixture evenly among 24 cupcake mold, or one 9x13-inch pyrex dish, and lightly press the mixture together. Melt the chocolate chips in the microwave or over a double broiler. I like to microwave mine, heating on full power for 20 seconds, stir, 30 seconds again, and stir until melted. Spoon a tablespoon or so of melted chocolate over each bar. Place the trays in the fridge for 45 minutes or until ready serve. Once ready to serve use a butter knife to pop the bars up and out of their molds. To use these for Christmas add 1 cup of holiday M&M's, peanut M&M's, or regular M&M's!

  • To make Snickerdoodle layer: Sift together flour, baking powder and salt and set aside. In large bowl, beat together butter, sugar, egg and vanilla until smooth.Stir in the flour mixture until well blended. Spread evenly in prepared pan.
  • To make Pumpkin layer: In a mixer bowl, mix together all ingredients until well combined. This layer will be less thick and more pourable. Pour over the snickerdoodle layer, smoothing out the top.

  • Bake for 33-40 minutes or until a toothpick inserted into the center of the pan comes out clean. Let the bars cool completely. They will deflate a bit and remain a bit pie-like on the top layer. The bars that are closer to the edges of the pan will be more firm, but are still equally as good.
  • To make drizzle: After the bars are completely cool, place the chopped white chocolate into a bowl or zip-lock bag and melt on low power. When it's completely melted, add the pumpkin pie spice and mix. Use a spoon or cut a small corner off the bag and drizzle the melted chocolate over the top of the bars and let it cool and harden.
  • Use the parchment paper to lift the bars out of the pan. Place on a cutting board and cut into bars.

3 tablespoons Gold Medal™ all-purpose flour
1 cup butter, melted
2 eggs
1/2 cup heavy whipping cream
1 package (8 oz) cream cheese, softened
1/2 cup sugar
1/2 teaspoon vanilla
1/2 cup white vanilla baking chips, melted
1 bag (11 oz) caramels, unwrapped
1/3 cup heavy whipping cream

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
  • In large bowl, beat cookie mixes, 1 packet of the cinnamon-sugar mixture (from cookie mix), the flour, melted butter and eggs. Spread in pan. (Save other packet for another use.)
  • Bake 30 to 35 minutes or until edges are golden and center is set. Cool completely, about 1 hour, or refrigerate 30 minutes.

1/4 c sugar
4 tsp cinnamon

  • 1. Preheat oven to 350* Cut sugar cookie tube in 1/2, Press 1/2 into the bottom of and 8x8 or 9x9 inch pan.
  • 2. Mix together the sugar and cinnamon. Sprinkle 1/2 over the cookie bottom.

3 c all purpose flour
2 tsp baking powder
1 tsp salt
2 c packed brown sugar
1 c butter, room temperature
2 eggs, room temperature

PUMPKIN LAYER
1 c all purpose flour
1 c white sugar
1/2 c butter, room temperature
1 tsp salt
1 tsp pumpkin pie spices
2 eggs, room temperature
1 1/2 canned pumpkin
TOPPING
2 Tbsp white sugar
2 tsp ground cinnamon
DRIZZLE
1 oz white chocolate, chopped
2 tsp ground cinnamon

  • 1. pre heat oven to 350. lightly grease a 9x13 inch baking pan and lay a piece parchment paper acroos the pan, so it extends the pan slightly. this will make it easy to get bars out of pan.
  • 2. to make snickerdoodle layer. sift flour,baking powder and salt, set aside. in a large bowl beat, butter, sugar, egg and vanilla until smooth. stir in the flour mixture and mix until well blended.spread evenly in prpared pan. mixture will be thick and cookie batterish.
  • 3. to make pumpkin pie filling. in a mixer bowl, beat sugar and butter. add the rest of the filling ingredients and mix until well blended. pour over the snickerdoodle layer, smoothing out the top.
  • 4. the topping layer; combine the sugar and cinnamon in a small bowl. evenly sprinkle over top of filling.
  • 5. bake for 33-40 minutes. do toothpick test, if it comes out clean it is done. let bars cool completely, about an hour. they will deflate a bit and remain a bit pie like on the top layer.
  • 6. after bars are cooled, place the chocolate into a bowl and melt on low power, when completely melted add pumpkin pie spice and mix. use a spoon to drizzle over top of bars and let harden. use parchment paper to lift bars out of pan, place on cutting board and cut into bars.

Take small amounts of the remaining cookie dough, flatten it slightly and place over the pie filling. It will not cover the pie filling completely. Sprinkle with the remaining cinnamon sugar mixture. Bake in a 350* oven until the cookie dough is baked - mine took about 35-40 minutes. Allow bars to cool and cut into squares.

1 c butter, softened
2 c packed brown sugar
2 eggs
2 tsp pure vanilla extract
2-1/2 c all purpose flour
2 tsp baking powder
1 tsp salt
1/4 c sugar
3 tsp ground cinnamon
2 can(s) (13.4 oz.ea.) dulce de leche
12 oz white baking chocolate, chopped
1/3 c heavy whipping cream
1 Tbsp light corn syrup

Steps:

  • 1. Line a 13x9-in. baking pan with parchment paper, letting end extend over sides by 1 inch.
  • 2. In a large bowl, cream butter and brown sugar until fluffy. Beat in eggs and vanilla. In another bowl, whisk flour, baking powder and salt; gradually add into creamed mixture. Spread onto bottom of prepared pan.
  • 3. In a small bowl, mix sugar and cinnamon; sprinkle 2 Tbsp. mixture over batter in pan. Bake in a preheated 350º oven for 25-30 minutes or until edges are light brown. Cool completely in pan on a wire rack.
  • 4. Spread dulce de leche over crust. In a small saucepan, combine white baking chocolate, cream and corn syrup; cook and stir over low heat until smooth. Cool slightly. Spread over dulce de leche. Sprinkle with remaining cinnamon-sugar and refrigerate, covered, for at least 1 hour.
  • 5. To serve, remove from pan, lifting with parchment paper. Cut into bars and refrigerate leftovers.
  • 6. NOTE: This recipe uses Nestle La Lechera dulce de leche, which can be found in the International foods section of your store. You may use Eagle Brand dulce de leche (caramel flavored sauce); thicken it according to package directions before using.

1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup unsalted butter, softened to room temperature

1 teaspoon vanilla extract
nonstick cooking spray
2/3 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
8 large eggs
2 cups sugar
1 tablespoon lemon zest
2/3 cup lemon juice
1/2 cup confectioners' sugar, for topping

Steps:

  • Preheat oven to 350 degrees F. Spray a 9x13-inch baking dish with nonstick spray, line with parchment paper, leaving overhang. Spray the parchment.
  • To make the Snickerdoodle crust, in a medium bowl, whisk to combine the flour, cinnamon and salt. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and sugar on medium speed until light and well blended. Reduce the speed to low and add the flour mixture, stirring until just combined, then stir in the vanilla extract.
  • Press the dough in an even layer into the prepared baking dish and refrigerate for 20 minutes. Dock the dough with a fork, then bake for about 20 minutes until the edges are starting to turn golden. Remove and let cool while you make the filling.
  • To make the filling, in a small bowl, whisk to combine the flour, baking powder and salt. In a medium bowl, whisk to combine the eggs, sugar, lemon zest and lemon juice. Add the flour and whisk to combine.
  • Pour the filling over the crust and bake until set, about 28-30 minutes. Transfer to a wire rack and let cool completely, then refrigerate until completely set, about 1 hour and up to overnight.
  • Use the edges of the parchment paper to lift the lemon bars from the pan. Place 8-10 long wooden skewers randomly over the top and dust over confectioners sugar. Cut into 2-inch squares and serve.

1 Tbsp. plus 1/8 tsp. ground cinnamon, divided

2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 Tbsp. vanilla
1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream
2 eggs

Steps:

  • Heat oven to 325°F.
  • Line 8-inch square baking dish with foil, leaving ends of foil hanging over sides of dish. Combine flour, 1/4 cup sugar and 1 Tbsp. cinnamon in medium bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs.
  • Reserve 1/2 cup crumb mixture for later use; press remaining crumb mixture onto bottom and 1/2 inch up side of prepared dish. Bake 25 min. or until lightly browned.
  • Meanwhile, beat cream cheese, vanilla and 1/2 cup of the remaining sugar in large bowl with mixer until blended. Add sour cream; mix well. Add eggs, one at a time, mixing on low speed after each just until blended. Set aside. Combine remaining 2 tsp. sugar and 1/8 tsp. cinnamon.

3/4 cup unsalted butter, softened
1 1/2 cup granulated sugar

  • Line a 13x9 baking dish with parchment paper. Set aside. Preheat oven to 350°F. In a food processor, pulse graham crackers with pecans and sugar until fine crumbs. Add in melted butter and pulse until combined. Press crumbs into bottom of prepared baking dish. Using palm of your hand (or bottom of a cup) press crumbs firmly until they are pressed into the bottom of the pan. For the cheesecake filling, beat cream cheese with sugar, eggs, vanilla and cinnamon using the whisk attachment of an electric mixer. Beat until fluffy and smooth (about 3-4 minutes). Bake for 30 to 35 minutes, middle may still "jiggle." That's okay. You want the cookie layer to be completely cooked and browned. Remove from oven and cool completely. Once cooled, cover with foil and refrigerate for 4 hours, or overnight. Cut into squares and enjoy. Keep leftover bars in an airtight container in the refrigerator for up to 5 days.
