Does anyone hate S'Mores? Here's a lunch-bag, picnic, hiking version of an all-time favorite. I found this in "The King Arthur Flour Baker's Companion"

6 tablespoons unsalted butter
1/4 cup firmly packed light brown sugar
6 tablespoons golden syrup, maple syrup or 6 tablespoons dark corn syrup
2 1/4 cups rolled oats
1/2 cup unbleached flour
1/2 teaspoon salt
1 cup graham cracker crumbs
1 cup semi-sweet chocolate chips
1 1/4 cups mini marshmallows

Steps:

  • In a medium-sized saucepan set over medium heat, melt and stir together the butter, sugar and syrup, cooking until the sugar has dissolved; stir in the oats, flour, salt and graham cracker crumbs.
  • Press slightly more than half of the mixture into a lightly greased 9x9-inch pan, let cool completely.
  • Preheat oven to 350°.
  • Sprinkle the chocolate chips evenly over the top, then top with the marshmallows; top with remaining crust mixture.
  • Bake the bars for 15-20 minutes; remove from the oven and let them rest for 20 minutes, then cut into squares while still slightly warm.

This dessert granola tastes just like the campfire treat. It's great eaten on its own, by the handful.

4 tablespoons unsalted butter, melted
3 tablespoons packed light brown sugar
3 tablespoons honey
1 teaspoon pure vanilla extract
1/2 teaspoon kosher salt
1 3/4 cups old-fashioned rolled oats
1 1/2 cups graham-flavored cereal, such as Golden Grahams
1 cup mini marshmallows
1/2 cup semisweet chocolate chips

Steps:

  • Position an oven rack in the center of the oven, and preheat to 325 degrees F. Whisk together the butter, brown sugar, honey, vanilla and salt in a large bowl. Add the oats and cereal, and toss until evenly coated. Spread out on a rimmed baking sheet.
  • Bake the oat mixture until golden and toasted, 25 to 30 minutes, stirring about halfway through. Let cool completely on the baking sheet. Stir in the marshmallows and chocolate chips. (The granola can be stored in an airtight container at room temperature for up to 5 days.)

2 cups rolled oats
½ cup shredded coconut
½ cup honey
2 tablespoons creamy peanut butter
1 teaspoon vanilla extract
⅛ teaspoon salt

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9-inch square baking dish.
  • Spread the oats and coconut evenly across a baking sheet.
  • Toast oats and coconut in preheated oven until browned, about 10 minutes; transfer to a large mixing bowl.
  • Mix honey, peanut butter, vanilla extract, and salt in a saucepan over medium-low heat. Cook and stir until smooth. Pour the honey mixture over the oats and coconut; stir to coat. Spread the mixture evenly into the prepared baking dish.
  • Bake in preheated oven until beginning to dry, about 15 minutes for crunchy granola bars, less if you like them chewy. Cool completely before cutting.
