Number Of Ingredients 19

3 eggs
1 1/2 cups oil
2 cups sugar
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons cinnamon
2 teaspoons vanilla
3 cups sliced apples
1 1/2 cups pecans, black walnuts, chopped
1 cup brown sugar
1/2 cup milk
1/2 cup butter
1 teaspoon vanilla
2 cups powdered sugar
1 teaspoon mayonnaise
1 teaspoon vanilla or 1 teaspoon rum extract
1 tablespoon milk
additional nuts (to garnish)

Steps:

  • Mix eggs, oil, and sugar. Blend well.
  • Sift flour, salt,soda and cinnamon.
  • Add to egg mixture.
  • Add vanilla, apples and nuts. Mix well.
  • Pour into a 9 inch bundt pan.
  • Bake for 1 to 1-1/2 hours at 350°F until cake is set in the middle and is golden brown.
  • Meanwhile combine brown sugar, milk, butter, and vanilla in a sauce pan and cook for 2 minutes.
  • Pour over cake while it is hot out of the oven (leave cake in the bundt pan).
  • When cooled completely remove cake to a serving plate.
  • For frosting, combine powdered sugar, mayonnaise, vanilla and milk until a smooth, slightly thick icing forms.
  • Once cake is cooled drizzle icing over entire cake.
  • Sprinkle with additional nuts and enjoy!
  • I have done several variations such as added raisins, mango, and even bananas with the apples they all have came out great!
  • Just play with the recipe and add your favorites and it sure to be a hit at any party or family gathering.

1 1/4 cups vegetable oil
1 2/3 cups sugar
1 1/2 cups pecans, chopped
3 cups tart apples, chopped
3 cups plain flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
1 cup brown sugar
4 tablespoons butter
1/4 cup milk

Steps:

  • Beat eggs and mix with sugar, oil and vanilla.
  • Combine flour, salt and baking soda and add to egg mixture.
  • Fold in apples and pecans. Pour into greased and floured tube cake pan.
  • Bake at 350 degrees for 1 hour.
  • For Frosting: Bring brown sugar, butter and milk to a boil. Boil only 2 1/2 minutes. Cool and spread on cake.

3 cups apples (diced)
3 cups all-purpose flour
2 cups sugar
1/2 cup brown sugar (packed)
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
2 teaspoons cinnamon (ground)
4 large eggs
2 teaspoons vanilla
1 1/2 cups applesauce
1/2 cup apple butter (homemade)
1/2 cup pecans (crushed) (optional)
1/4 cup powdered sugar

Steps:

  • Pre Heat oven to 350*.
  • Sift Flour,Baking Soda,Baking Powder,Salt and Cinnamon together and set aside.
  • Peel and dice Apples into a bowl of salty water ( so they don't turn brown ) and set aside.
  • Combined Sugars, Eggs, Vanilla, Apple- Sauce,Apple Butter ( I use homemade Smoky Mountain Apple Butter but any brand you like is fine ) and diced Apples.
  • Stir with a Sturdy Spoon. ( No need for a Mixer).
  • Next add the sifted Flour and stir together until thoroughly combined.
  • Last add crushed Pecans. ( Optional ).
  • Pour Mixture into a LARGE Bundt Pan or Use two Smaller ones.
  • Bake for 1 Hour until a toothpick inserted comes out clean.
  • Let cakes cool until slightly warm sprinkle with the Powdered Sugar and serve with a dollup of whip cream or even Vanilla Ice Cream. Enjoy!

My college roommate's grandmother used to send us slices of this delicious cake while we roomed together. I begged my roommate to get the recipe from her grandmother. I copied this recipe down during a long distance phone call to her grandmother. Since that day, I've made this many times over. My children today love this one and call it Mom's "college cake".

3 eggs
1 1/2 cups salad oil
2 cups sugar
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons vanilla extract
3 cups chopped apples (Granny Smith works well)
1 1/2 cups chopped pecans
1 cup brown sugar
1/4 cup milk
1/2 cup margarine or 1/2 cup butter

Steps:

  • Mix eggs, oil and sugar; blend well.
  • Add flour, salt and soda.
  • Mix well.
  • Fold in vanilla, chopped apples and nuts.
  • Place into a greased (Pam sprayed) 8-9" tube pan.
  • Bake at 350* for one hour.
  • Meanwhile, prepare the topping: Combine all topping ingredients in saucepan and cook for 2 1/2 minutes.
  • While cake is still in the tube pan and still hot, pour warm topping over it.
  • Let cake set in pan until cool, or room temperature.
  • Invert cake with topping onto serving dish.
  • Store covered.

I have had this recipe for years, but I have no idea where it came from or who gave it to me. On a whim, I tried it for a brunch buffet, and was glad I did. It's moist, rich, and delicious, and disappeared quickly.

3 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
2 cups sugar
1/2 cup vegetable oil
1/2 cup sour cream
1/2 cup unsweetened applesauce
3 eggs
1 teaspoon vanilla
3 cups apples, peeled & chopped
1 cup pecans, chopped (optional)
1 cup light brown sugar
1/4 cup water or 1/4 cup milk
1/2 cup butter

Steps:

  • Preheat oven to 325. Butter and flour a 10-inch tube pan.
  • Sift flour, baking soda, salt, cinammon, and nutmeg. Set aside.
  • Mix sugar, oil, sour cream, and applesauce until well blended. Add eggs and vanilla. Mix in dry ingredients. Stir in apples and nuts, if using.
  • Pour into prepared pan. Bake at 325 for approximately 1 hour, 10 minutes. Let cool for 10 minutes and remove to rack.
  • For icing, mix sugar, milk, and butter in saucepan. Let come to a boil and cook, stirring, for 5 minutes. Remove from heat and beat until smooth. Spoon over cake.
  • Store covered with a cake dome.
