SMOKY VEGAN CHEESE (THREE WAYS)

10-minute vegan cheese with smoky spices THREE ways: shakeable, spreadable, or pourable! Healthy, easy, fast, and surprisingly close to the real thing.

3/4 cup raw cashews
3 Tbsp nutritional yeast
1/2 tsp sea salt
1/4 tsp garlic powder
1/2 tsp cumin
1/4 tsp chili powder
1 1/2 cups raw cashews
3 Tbsp nutritional yeast
1/2 tsp sea salt
1/4 tsp garlic powder
1/2 tsp cumin
1 pinch chili powder
1 chipotle in adobo with a little sauce ((or sub salsa or your favorite hot sauce))
1 Tbsp olive or avocado oil ((for blending // optional))
1 cup of the spreadable + hot water

Steps:

  • To make the shakeable cheese, add all ingredients to a food processor and pulse until a fine meal is achieved (see photo). Store in a jar and refrigerate, and use on anything from tacos to salads to tofu scrambles.
  • To make the spreadable cheese, add raw cashews to a food processor and process into a butter, scraping down sides as needed. Add in spices and chipotle pepper and mix until until a spread is formed. You may need to add a little oil to help things blend together. Store in a jar and refrigerate to keep fresh, and use as a dip or spread.
  • To make the queso, simply scoop out desired portion of the spreadable cheese and add very hot water a little at a time and whisk until pourable. Use as a dip, tacos and salads. Store leftovers in a jar in the fridge to keep fresh.

1 package (4 ounces) smoked salmon or lox
3 tablespoons horseradish sauce
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce
1/4 teaspoon Creole seasoning
1/4 teaspoon coarsely ground pepper
Chopped walnuts and snipped fresh dill
Assorted crackers

Steps:

3/4 cup mayonnaise
1/4 cup finely chopped onion
1 tablespoon honey
1/2 teaspoon seasoned salt
1/8 teaspoon pepper

8 ounces extra-sharp cheddar cheese (freshly grated)
2/3 cup pecans (toasted and chopped)
4 ounces pimientos (drained well)
1/4 teaspoon onion powder (or to taste)
1/8 teaspoon garlic powder (or to taste)
1/4 teaspoon smoked paprika (or to taste)
2 ounces cream cheese (low fat okay)
1/4 cup mayonnaise

Steps:

  • Grate cheese into a medium sized bowl.
  • Toast pecans, then rough chop in a food processor.
  • Add drained pimentos, onion powder, garlic powder, smoked paprika, and cream cheese to the pecans in the food processor bowl. Process until as smooth as you'd like!
  • Add pimento pecan mixture to the grated cheese; add mayonnaise and stir until well combined.
  • Serve immediately, or chill for a better blend of flavors. Serve on crackers, celery sticks, or make into sandwiches!
  • NOTE: I prefer the stiffer pimento cheese spread (as written) for toasted/grilled sandwiches! For a softer consistency, add 1-2 ounces more cream cheese, or increase the mayonnaise by 1-2 tablespoons.

1 8-ounce package cream cheese, room temperature
3 tablespoons mayonnaise
1 cup coarsely chopped fully cooked smoked turkey (about 6 ounces)
1/2 cup plus 2 tablespoons chopped pecans
6 tablespoons chopped fresh parsley

Steps:

  • Combine cream cheese and mayonnaise in processor; blend until smooth. Add turkey and process, using on/off turns, until coarse paste forms. Transfer mixture to medium bowl. Mix in 1/2 cup pecans and 4 tablespoons parsley. Season to taste with salt and pepper. Spoon into small serving bowl. Sprinkle top with remaining 2 tablespoons pecans and 2 tablespoons parsley. 1 cup mayonnaise
1 small onion, grated

1 teaspoon onion powder
1/2 teaspoon garlic powder
2 large cloved garlic, minced
1 lb sharp cheddar cheese, grated
12 ounces hickory wood smoked bacon, fried crisp, and crumbled
1 small white onion, finely chopped and browned in a little of the bacon fat 1-2 Tbs
1/2 cup very hot water
