SWEET AND SMOKY BARBEQUE SAUCE

Use this toward the end of cooking as you would for any BBQ meat such as pork, ribs, or chicken. I have even used it on beef and hamburgers, sausages, hot dogs, or anything you want, for the most part. I use it on everything from ribs to roasts to hamburgers to hot dogs. Even goes good with a good old classic grilled cheese sandwich. This is a great all-round BBQ sauce. Use right away or cool to room temperature, transfer to jars or containers, and refrigerate. The sauce will keep for several months in the fridge.

½ cup apple cider vinegar
6 tablespoons packed brown sugar
¼ cup molasses
¼ cup honey
¼ cup Worcestershire sauce
2 tablespoons rum
2 tablespoons prepared yellow mustard
1 tablespoon liquid smoke flavoring
1 tablespoon ground red chile pepper
2 tablespoons freshly ground black pepper
2 tablespoons garlic powder
1 teaspoon ground allspice
4 cups ketchup

Steps:

  • Mix vinegar, brown sugar, molasses, honey, Worcestershire sauce, rum, mustard, liquid smoke, ground chile, black pepper, garlic powder, and allspice together in a heavy saucepan over medium heat. Bring to a boil, reduce heat, and simmer until sauce is smooth and brown sugar is dissolved, about 5 minutes.
  • Stir ketchup into sauce and bring to a boil. Reduce heat and simmer, stirring occasionally, until sauce is dark and thickened, about 30 minutes.

Another great recipe from my little red book--Fireman's Fire house Cook book. I have used this barbecue sauce for everything--even take a bottle with us on vacation. It tastes great on everything--any meat--you will love this one. You also can make it as mild or hot as you like--a wonderful sauce.

1 cup prepared mustard
1 cup white vinegar or 1 cup apple cider vinegar
1 tablespoon ReaLemon juice
3 tablespoons Worcestershire sauce
1 teaspoon salt
2 tablespoons dark brown sugar
1/2 teaspoon onion powder
1/2 teaspoon celery salt
6 beef bouillon cubes
1/2 teaspoon chili powder
Tabasco sauce
1/2 teaspoon black pepper

Steps:

  • In saucepan add mustard and slowly add vinegar with a whisk keeping mustard from being lumpy.
  • Then add rest of ingredients, stirring until smooth; let simmer for 2 hours stirring often.
  • To thicken sauce you can add cornstarch.
  • Tou can store sauce in a clean mustard bottle and put in frig.
  • Will keep about a year in frig.

12 lb tomato, peeled- (about 5 quarts)
3 cups onion, finely chopped
4 cloves garlic, chopped
1 ½ cups apple cider vinegar
½ cup bourbon
2 cups dark brown sugar, packed
1 tablespoon garlic powder
1 tablespoon mustard powder
2 tablespoons smoked paprika
1 teaspoon cayenne pepper
2 teaspoons chili flakes,
2 tablespoons salt

Steps:

  • Combine tomatoes, onion, and garlic in a large stock pot and bring to a boil; lower heat and simmer 30 minutes or until vegetables are very soft. Working in batches, puree vegetables until smooth with Harvest Pro food mill or in the bowl of a food processor.
  • Return tomato mixture to the pot and add remaining ingredients, bring to a boil over high heat, stirring frequently. Lower heat and simmer until thickened and darker in color, about 1½-2 hours, stirring occasionally to prevent scorching.
  • Prepare boiling water canner while sauce is cooking. Heat jars in simmering water until ready to use. Do not boil. Wash lids in warm soapy water and set aside with bands.
  • Ladle hot BBQ sauce into a hot jar leaving a ½-inch headspace. Remove air bubbles. Wipe jar rim. Center lid on jar and apply band; adjust to fingertip tight. Place jar in boiling water canner. Repeat until all jars are filled.
  • Process jars for 20 minutes, adjusting for altitude. Turn off heat, remove lid, let jars stand 5 minutes. Remove jars and cool 12-24 hours. Check lids for seal. They should not flex when center is pressed.

I usually don't measure anything, so if it is too tangy add more ketchup. If it isn't sweet enough add more brown sugar. If it doesn't have the bite you want add a little more Worcestershire sauce, but just a note ketchup will always calm it down , Worcestershire will always give it bite & brown sugar will always sweeten it up for you. Make it your own.

1/2 teaspoon mustard
1/4 cup brown sugar, packed

  • If brown sugar is hard you can put it over low heat until mixed.
