1 (8 ounce) package cream cheese, softened
1 tablespoon mayonnaise
garlic salt
1 tomatoes, peeled and chopped
6 -8 slices bacon

Steps:

  • Blend cream cheese with mayonnaise until smooth.
  • Add garlic salt and tomato.
  • Cook bacon until crispy; drain and crumble.
  • Add bacon to cream cheese mixture when ready to serve.
  • Serve as spread with party rye rounds or as a dip.
  • Thin with a little milk if necessary.

½ pound smoked bacon
2 pounds ripe tomatoes, chopped
1 yellow sweet onion, finely diced
1 cup white sugar
2 ½ tablespoons apple cider vinegar
1 ½ teaspoons salt
¼ teaspoon black pepper
1 dash hot pepper sauce (such as Tabasco®)

Steps:

  • Cook the bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels. Crumble bacon when cool.
  • Stir tomatoes, sweet onion, sugar, apple cider vinegar, salt, black pepper, and hot sauce together in a saucepan and bring to a boil, stirring constantly to dissolve sugar. Stir in crumbled bacon and cook over medium heat, stirring often, until the spread is very thick, about 1 hour. Adjust salt and black pepper.
  • Cool and spoon into a 1-pint glass jar with a lid; keeps refrigerated for 1 week or frozen for 2 months. If freezing, put spread into small jars and let jars thaw in refrigerator overnight before using.

Super delicious and so pretty for a get-together. I use 3 Roma tomatoes or 1 large vine-ripened (in the summer). Feel free to add other layers or switch ingredients. (chopped olives would be nice. :smile:) Note: Cooking time is refrigeration time. Enjoy--

1/2 cup sour cream, light is fine
1/2 cup real mayonnaise
4 ounces cream cheese, room temp (1/3 less fat is fine)
1 1/2 teaspoons garlic, minced
Tabasco sauce, to taste
1/2 cup cheddar cheese, shredded
1 large tomatoes or 3 roma tomatoes, seeded and diced
1/2 lb bacon, cooked crispy and crumbled
3 green onions, diced (white and green)

Steps:

  • In food processor, combine cream cheese, sour cream, mayo, 1/4 cup shredded cheese, Tabasco (to taste) and garlic.
  • Blend to mix completely.
  • Spread in bottom of pie plate and smooth equally.
  • Layer with diced tomato, then crumbled bacon, and then green onions.
  • Sprinkle remaining 1/4 cup Cheddar cheese over top.
  • Cover with plastic wrap and refrigerate until served, at least 30 minutes.
  • Serve with crackers, baguettes or sturdy tortilla chips.
