6 slices bacon, chopped
1 1/2 lbs ground chicken breast
3 shallots
1 tablespoon hot sauce
2 tablespoons poultry seasoning
salt and pepper
1 avocado, peeled and pitted
1 1/2 cups Greek yogurt
1 lemon, juice of
1 (1 ounce) packet Hidden Valley Original Ranch Seasoning Mix
8 small slider buns or 8 small hawaiian rolls
butter, for buns
lettuce leaf, for serving
2 plum tomatoes or 2 vine-ripened tomatoes, thinly sliced

Steps:

  • Heat an outdoor grill or griddle pan to medium high. Place a skillet over medium-high heat. Add a drizzle of Olive oil and the bacon to the pan and cook until crisp, about 5 minutes. Drain on paper towels to cool, then dice.
  • While the bacon cooks, place the chicken in a large bowl. Grate the shallots on top of the chicken . Add the hot sauce, poultry seasoning, salt and lots of pepper. Stir in the cooked bacon, mix and form 8 slider patties, about 2- 1/2 to 3 inches wide. Drizzle with Olive Oil to coat lightly.
  • Cook on the grill or griddle, turning once, until cooked through, 8 to 10 minutes.
  • While the sliders cook, heat the broiler.
  • Place the avocado in a food processor. Add the yogurt, lemon juice, Ranch Seasoning Mix and process into a smooth, thick sauce.
  • Butter the buns and place on a baking sheet and toast under the broiler. Serve the Ranch Slider with the lettuce, tomatoes and avocado-ranch sauce between the toasted buns.

1 Tbsp. olive oil
3/4 lb. boneless skinless chicken breasts, cut into thin strips
1/2 cup KRAFT Classic Ranch Dressing
2 Tbsp. GREY POUPON Country Dijon Mustard
2 Tbsp. chopped fresh dill
1-1/2 cups chopped mixed green, red and yellow peppers

Steps:

  • Cook potatoes in boiling water in saucepan 15 min. or just until tender.
  • Meanwhile, heat oil in large skillet on medium-high heat. Add chicken; cook and stir 3 to 4 min. or until chicken is done. Place in large bowl; set aside. Mix dressing, mustard and dill until blended.
  • Drain potatoes. Add to chicken along with the peppers and dressing mixture; mix lightly.

500g bag new potato
2 large corn cobs
½ red onion , thinly sliced
juice 1 lime
2 tbsp olive oil
2 garlic cloves , crushed
½- 1 tsp sweet smoked paprika
4 skinless chicken breasts , each halved across the middle to make 2 thin escalopes
small bunch coriander , leaves roughly chopped
lime wedges, optional, to serve

Steps:

  • Bring to the boil a saucepan of water big enough to hold all the potatoes and corn. Cook the potatoes for 12 mins, adding the corn after 6 mins, until both are tender. Drain well.
  • Meanwhile, mix the sliced red onion with the lime juice and half the oil in a large salad bowl. Mix the remaining oil with the garlic, paprika and some seasoning in a shallow bowl, then toss in the chicken until thoroughly coated.
  • Heat a griddle pan, then griddle the chicken for 3 mins on each side until cooked through. Tip the potatoes into the bowl with the onions. Stand a corn cob on one end on a chopping board, then slice down the length, cutting off the kernels in strips. Mix into the potato salad with the coriander and seasoning, then serve alongside the smoky griddled chicken, with lime wedges, if using.

1 small iceberg lettuce, cored and cut into pieces
1 cup Baby Spinach, washed and spun dry
1 cup frozen corn, rinsed and drained (optional)
1 cup frozen peas, rinsed and drained
1 1/2 cups celery, thinly sliced
1 cup petite baby carrots, diced
1 cucumber, peeled, seeded and sliced
1/4 cup very thinly sliced red onion
6 ounces sharp cheddar cheese (add more to taste) or 6 ounces monterey jack pepper cheese, shredded
1/2 lb bacon, cooked nice and crisp crumbled into pieces
3/4 cup mayonnaise
1 tablespoon sugar (adjust to taste)
1 teaspoon minced chives
3/4 cup Greek yogurt
1 (1 ounce) package Hidden Valley Original Ranch Dips Mix
1 tablespoon white balsamic vinegar

Steps:

  • Layer first 8 ingredients, one at a time, in a large glass bowl so you can see each layer.
  • Mix the dressing ingredients together and pour evenly over the salad in the bowl.
  • Add a layer of cheese, then a layer of bacon.
  • Chill overnight.
  • To serve using tongs go straight down into the salad to get all the layers.
  • Optional:.
  • Make in individual margarita glasses. I would shred the lettuces for ease for eating out of the glass. It`s a nice way to use leftover ingredients from the main salad as well. This way you can bring the trifle to a pot luck and have two for home. ;).

2 large skinless, boneless chicken breasts (about 1 1/2 pounds)
1/4 cup extra-virgin olive oil
1/2 teaspoon smoked paprika
Kosher salt and freshly ground pepper
1 clove garlic
3 jarred piquillo peppers (2 whole, 1 thinly sliced)
1/3 cup mayonnaise
Juice of 1/2 lemon
3 tablespoons chopped fresh cilantro
16 small Bibb or romaine lettuce leaves
2 stalks celery, thinly sliced
3 tablespoons salted Marcona almonds, roughly chopped

Steps:

  • Preheat a grill to high. Toss the chicken with 1 tablespoon olive oil, the paprika, 1/2 teaspoon salt and a few grinds of pepper in a medium bowl. Grill the chicken until marked and cooked through, about 7 minutes per side. Let cool slightly, then thinly slice.
  • Meanwhile, make the dressing Combine the garlic and the remaining 3 tablespoons olive oil in a small microwave-safe bowl; microwave until the garlic is softened, about 1 minute. Transfer the garlic and oil to a blender; add the 2 whole piquillo peppers and puree until smooth. Transfer to a bowl and whisk in the mayonnaise, lemon juice and 2 tablespoons cilantro; season with salt and pepper.

Steps:

  • Light Kingsford® charcoal according to package directions and arrange your coals for direct and indirect cooking- build a fire in the grill leaving one side free of coals. When the coals are covered with gray ash and the temperature is medium (you can hold your hand over it from 5-7 seconds), the grill is ready.
  • While the grill is heating, rub olive oil all over the chicken pieces and season with the ranch seasoning mix and smoked paprika.
  • Place the chicken pieces on the grill directly over the coals and cook for about 12-15 minutes, turning occasionally, until the skin starts to crisp and darken. Transfer the chicken pieces to the cooler side of the grill and let them cook for 15 to 20 minutes more, until the temperature is 155°F and no longer pink inside.

Using a variation in the type of potatoes and onions I usually use to prepare this dish, I developed this recipe based on my choices listed in the rules. I tend to use Hidden Valley products often in my recipes, therefore it was easy to experiment and come up with this "scrumptious" tasting potato casserole. I do substitute low-calorie and add vegetables when I can, to get my family to eat more vegetables.

8 -12 red potatoes, rinsed and diced
2 shallots, bulbs chopped small
10 fresh spinach leaves, chiffonade cut
1/2 cup frozen corn
4 minced garlic cloves
1 1/2 cups Hidden Valley® Original Ranch® Dressing
1/2 cup sour cream
1 1/2 cups shredded cheddar cheese
1/4 cup breadcrumbs
1 cup crushed potato chips
2 tablespoons chives, chopped

Steps:

  • In 8 quart pot, boil water then add the diced potatoes, cooking for 10 minutes. Do not overcook them. (Prepare your other ingredients while the potatoes are cooking). Drain the potatoes and add the shallots, spinach, corn, garlic, Hidden Valley Ranch Dressing and sour cream, tossing gently to mix into the potatoes. Spread the potato mix in an 8" x 13" greased cake pan. Sprinkle the last 4 ingredients, in order, over the potatoes. Bake 350 F for 35-45 minute, until the potatoes are tender.

4 celery ribs, washed and sliced thin
1 large bell pepper, seeded and sliced into short sticks
1/2 red onion, chopped fine

1/3 cup of your favorite prepared barbecue sauce (I like Jack Daniel's)

Steps:

  • Heat oven to 400 degrees F. In a large bowl, combine the potatoes, carrots and shallots. Sprinkle with the Hidden Valley Original Ranch Seasoning and 3 tablespoons of the oil. Toss gently, with hands, to make sure all pieces are coated with oil and seasoning. Transfer to a non-stick rimmed baking sheet, spreading vegetables to make a single layer. Roast for 30-40 minutes or until tender and golden brown.

2 shallots, minced

6 cups low sodium chicken broth

1 1/2 cups shredded cooked boneless skinless chicken breasts
2 teaspoons lemon juice

Steps:

  • Peel and cut the potatoes into 1/2-inch cubes, place into a large stockpot. Add in the shallot, garlic and chicken broth. Bring to a boil over high heat, lower heat to medium and cook until potatoes are tender, approximately 15 minutes.
  • Remove pot from heat. Using a large mesh strainer or slotted spoon, remove about half of the potatoes/shallots/garlic from the pot and place onto a large plate; set aside. 2 lbs red potatoes, cut into bite size pieces
1/2 teaspoon freshly cracked black pepper
1 teaspoon salt
3 slices thick-cut bacon, cut into a small dice
1 shallot, cut into thin rings
1/2 lb chicken breast
2 ears corn
2 tablespoons canola oil
1 cup Hidden Valley® Original Ranch® Dressing

Steps:

  • Preheat oven to 450 degrees F.
  • In a small saute pan place 1/2 tablespoon of canola oil over medium heat, add bacon. Render all the fat from the bacon until crispy then remove the bacon from pan using a slotted spoon, leave rendered bacon fat in pan, then add shallots and cook over low heat to sweat, once shallots have become soft, remove from pan and set aside, once again reserving the fat in the pan.
  • In a large bowl place potatoes, add reserved bacon fat and toss potatoes.
  • Place potatoes on a sheet tray, into the oven and bake for 20 minutes or until golden brown and cooked through, stir occasionally.
  • Preheat a grill or a grill pan, season chicken with salt and pepper, brush with canola oil, grill until cooked thoroughly. Let rest for 10 minutes before dicing into 1/4 inch pieces, set aside.
  • While grill is still hot grill corn until cooked through and kernels are soft, once cool using a knife cut the corn kernels off the cob, set aside.
  • Once potatoes are finished in a large bowl combine potatoes, diced grilled chicken, rendered bacon, sauteed shallots, grilled corn kernels and 1 cup of hidden valley ranch dressing. Toss and serve.
