1 package (8 ounces) cream cheese, softened
2 tablespoons chopped jalapeno peppers
1 teaspoon pepper
1/4 teaspoon salt
4 flour tortillas (8 inches), room temperature
3/4 cup shredded lettuce
1/2 cup chopped tomato
10 ounces sliced deli smoked turkey
1 medium ripe avocado, peeled and chopped
1/4 cup chopped red onion

Steps:

  • In a small bowl, combine the cream cheese, jalapenos, pepper and salt until blended; spread over one side of each tortilla. Layer with the lettuce, tomato, turkey, avocado and onion. Roll up tightly. Serve immediately.

4 large flour or corn tortillas
4 ounces Jalapeno Cream Cheese, recipe follows
8 ounces Romaine lettuce, shredded
8 ounces tomatoes, seeded and diced
4 ounces red onions, diced
16 ounces smoked turkey, julienned
8 ounces avocado spread (such as guacamole)
1 1/2 jalapeno peppers, seeded and minced
8 ounces cream cheese, softened
2 1/2 teaspoons ground black pepper
1/4 teaspoon salt

Steps:

  • Lay tortilla out flat. Spread the cream cheese on the tortilla. Sprinkle lettuce, tomatoes, and onions in the center of the tortilla. Place the turkey all over. Top with avocado spread. Roll burrito style, making sure the ends are tucked in. Slice in half on the bias and serve.
  • Jalapeno Cream Cheese: Mix the jalapenoes into the cream cheese. Season with salt and pepper. Refrigerate until needed.

1 large lime
1/4 cup light mayonnaise
3 tablespoons mango chutney, chopped
1/2 teaspoon curry powder
1/8 teaspoon paprika
1 lahvash bread, softened (or use 4 8-10 inch flour tortillas)
1 medium cucumber, peeled and thinly sliced
8 ounces thinly sliced smoked turkey breast
1 medium mango, peeled and finely chopped
6 leaves green leaf lettuce

Steps:

  • Grate 1/4 tsp lime peel and squeeze 1 TBS juice.
  • In small bowl, mix peel, juice, mayo, chutney, curry and paprika.
  • Unfold lavash and spread with mayo mixture.
  • Top with cuke slices, turkey, mango and lettuce.
  • Roll up jelly roll fashion.
  • Wrap lavash in plastic and refrigerate 2-4 hours, flavor will develop and bread with soften.
  • To serve cut into 4 pieces.

3 plum tomatoes, thinly sliced
1/2 cup julienned roasted sweet red peppers
4 green onions, thinly sliced
1/2 cup olive oil vinaigrette
1 package (8 ounces) cream cheese, softened
1/4 cup chutney
1/2 teaspoon curry powder
1-1/4 pounds turkey breast cutlets, cut into 1/2-inch strips
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon pepper
4 flour tortillas (10 inches), warmed
4 lettuce leaves

Steps:

  • In a small bowl, combine tomatoes, red peppers and green onions; add vinaigrette and toss to coat. In another bowl, beat cream cheese, chutney and curry powder until blended., In a small bowl, combine turkey, oil and seasonings; toss to coat. In a large skillet, add turkey mixture in batches; cook and stir 1-2 minutes or until no longer pink. Remove from heat; keep warm., Spread 1/4 cup cream cheese mixture over each tortilla. I created these wraps because as I progress thru chemo I have lost the taste for foods I once normally loved. I am still a picky eater but need certain complex flavors as I can barely taste salt. Both dressings were VERY tasty but loved the tangy dijon best.

WRAPS
4 medium flour tortillas
1 oz cream cheese, divided
4 romaine lettuce leaves
2 - 8 tomato slices or chunky salsa
SMOKED TURKEY FILLING
1 c diced cooked turkey
1 Tbsp diced onion, more to taste
1 Tbsp dehydrated celery leaves
3 drops liquid smoke
PARMESAN RANCH DRESSING
1/4 c ranch dressing
1 Tbsp mayonnaise
1 Tbsp parmesan cheese
1 tsp worcestershire sauce
CREAMY DIJON AND RED WINE VINAGRETTE
1 Tbsp mayonnaise
1 tsp dijon mustard
1 tsp red wine vinegar

Steps:

  • 1. dressings: For each dressing, measure the ingredients into a small bowl and combine well. Can be made in advance, covered and refrigerated.
  • 2. turkey salad: In a bowl, combine diced turkey, celery flakes and onion. Stir to combine. Shake on 3 drops liquid smoke and using a fork, mash and stir the ingredients until the turkey shreds and the liquid smoke is well distributed. Can be made in advance, covered and refrigerated until it's time to assemble your wrap.
  • 3. Wraps: Place 1 tortilla on a paper towel in microwave and heat to make it pliable 4 - 10 seconds depending on wattage of microwave. Transfer tortilla to a serving dish and spread with ΒΌ ounce cream cheese, covering to the edge.
  • 4. Lay 1 romaine leaf cut into quarters on top of the cream cheese.
  • 5. Top the lettuce with 1-2 tomato slices or 1-2 tablespoons salsa.
  • 6. Scoop 1/4th of the Turkey Salad on top of the lettuce.
  • 7. Drizzle with 1 or 2 teaspoons of either Parmesean Ranch dressing or Creamy Dijon and red Wine Vinagrette.
  • 8. Roll up, and skewer with 2 toothpicks.
  • 9. Cut on the diagonal and serve. Continue on with the rest of tortillas making 4 wraps. Remove toothpicks before eating.

This is an easy to make recipe. I've tried numerous others using colas, fancy pans, etc., but none come out near as good as this. Keeping it simple is the best way. Be sure to use a high-quality charcoal, so that it will burn for a long time. Turkey will be moist tender and smoky!

1 (12 pound) whole turkey, neck and giblets removed
1 (20 pound) bag high quality charcoal briquettes
hickory chips or chunks

Steps:

  • Place the charcoal into the bottom pan of the smoker. Light the coals and wait for the temperature of the smoker to come to 240 degrees F (115 degrees C). Lightly oil grate.
  • Rinse turkey under cold water, and pat dry. Place hickory chips into a pan with water to cover.
  • Place turkey onto the prepared grate. Add 2 handfuls damp chips at start of cooking, then a handful every couple of hours during the cooking process. Leave the lid on - DO NOT keep looking at the turkey, or you will let the heat out! Continue smoking until the internal temperature of the turkey reaches 165 degrees F (74 degrees C), or keep going until the coals die out.

1 cup cream cheese, room temperature
2 tablespoons basil pesto
2 (10 inch) burrito-size flour tortillas, warmed
4 thin slices smoked turkey breast
2 cups shredded romaine lettuce
1 cup chopped tomato
1/4 cup thinly sliced red onions or 1/4 cup alfalfa sprout

Steps:

  • Combine cream cheese and pesto in small bowl; stir well. Spread evenly over each tortilla. Place turkey slices, lettuce, tomatoes and red onion or alfalfa sprouts over bottom third of tortillas, making sure ingredients don't touch edges.
  • Fold the bottom edge of tortilla toward the center and gently roll until tortilla is completely wrapped around the filling. Wrap tightly in plastic wrap. Refrigerate for 15 minutes. Cut in half and serve.
