SMOKED SAUSAGE SCRAMBLE
"I came up with this recipe one morning when we had smoked sausage leftover from the day before - and my husband loved it," relates Stephanie Leven of Warsaw, Missouri. The combination of spicy sausage, spinach, eggs, potato and cheese makes a hearty morning meal or a satisfying light supper.

- In a large skillet, cook potato and onion in oil until potato is tender; add spinach and sausage. , In a large bowl, whisk eggs and water. Pour over sausage mixture. Cook and stir over medium heat, until eggs are completely set. Sprinkle with cheese.

I love throwing breakfasts together that turn out so good! I used up some veggies that needed to go and got rid of some smoked sausage I stocked up on when on sale. This scramble was loaded with flavor and my family loved it! Enjoy!

Steps:
- 1. In a large skillet, over medium heat, add oil. To this add onion, garlic and sausage. Saute until sausage is browned.
- 2. To this add tomato, cayenne, peppers, black pepper and water. Simmer until water is mostly gone, but peppers aren't mushy. A little water left won't hurt before adding eggs.
- 3. Lower the heat and add the eggs. Stirring occasionally until cooked but not dry.
- 4. Serve immediately. I garnished with green onion and a sprinkle of Creole seasoning.
