- Put a large skillet on the stove on Med High. Put oil in the pan and add the chopped onions and garlic. Peel and cube the potatoes. The smaller the cube the less cooking time. Add salt and pepper to season accordingly to your taste. Turn the potatoes every few minutes till they are browned on all sides. Slice the smoked sausage (I use the skinless with cheese inside) and add to the pan. Cover then stir every few minutes. We like the meat really browned so I turn up the heat to high till the sausage slices are the right color.
- Serve with a salad and some sweet tea, and you have the perfect midweek meal.
SMOKED SAUSAGE, GREEN BEANS, AND POTATOES
Simple, but very good. I think this may be a Midwest, US kind of thing. Super fast and easy too! We serve the potatoes to the side, with some butter on them. I don't recommend the low-fat varieties with this, they don't seem to boil well.

- In large pot, combine all ingredients.
- Add water to barely cover ingredients.
- Cook over medium heat until potatoes are done.
- Serve with a slotted spoon so the water can drain away, or drain the whole batch.

SAVORY SMOKED SAUSAGE AND POTATOES
My family loves this dish ! It makes its own sauce as it cooks . We love it just the way it is but you could always add in some broccoli or peas if you like . This is also very good started on the stove and then finished on the grill (or smoker) instead of the oven !

- 1. Preheat oven to 350 degrees (f). * or grill
- 2. Fine dice the onion and carrot and set aside. You may use a food processor for this if you want to.
- 3. Cut sausage about 1/2 in. - 3/4 inch slices . Set aside.
- 4. Cut potatoes into 1- 1 1/2 inch cubes. Set aside. (sometimes I will cut the potatoes while I'm browning the sausage)
- 5. Heat large pot. Add olive oil then brown sausage. Remove from pot with a slotted spoon and set aside. You want to leave as much oil as possible in the pot.
- 6. Add the diced carrot and onion to the pot and cook for just a minute.
- 7. Now add back the sausage and add potatoes, along with the garlic powder, celery seed, parsley and salt and pepper. Give it a good mix then add the flour and stir to coat everything.
- 8. Add chicken stock and stir well remembering to scrape the bottom to loosen the yummy bits. Spray a 9x13 in. baking dish . Pour mixture into the pan,cover with foil and bake for 40 minutes to an hour or till potatoes are tender. Let sit for 5 minutes so the liquid will thicken before serving.
- 9. * You can skip the oven all together and put it on the grill or smoker. Keep it over indirect heat. Check it and give it a stir every so often.... Very good !

- Preheat oven to 400 degrees.
- In a 9x13 pan place chopped potatoes.
- Pour melted butter on potatoes, stir until well coated.
- Sprinkle with salt, pepper, and garlic powder to taste and stir.
- Place the remaining butter on top.
- Cover with foil and bake for 30 minutes.
- While potatoes are cooking saute onion and green pepper in pan.
- After 30 mins are up add sausage and onion/green peppers to potatoes.
- Stir to coat and replace foil.
- Bake an additional 30 minutes or until potatoes are tender.
- Remove from oven and add cheese, place in oven for about 5 minutes or until cheese is melted.
- Stir and Serve.

Great warm comfort food. I found the recipe on the internet and made some changes to make it even better. Easy and you can make it ahead of time and bake it later on.

- In a saucepan or in the microwave, melt the margarine. Add the salt, pepper, and flour. Stir until smooth, then gradually add the milk with a wire whisk. The mixture doesn't have to get thick, it does that as it cooks in the oven, you're just mixing it all together uniformly at this point.
- Add a layer of sliced potatoes to a thinly greased 13X9 pan. You can use the wrapper on the margarine or butter to lightly grease the pan if you like. It doesn't need much.
- Then add 1/2 of the cabbage as the next layer, sprinkle with 1/2 of the onions, and then add 1/2 of the smoked sausage or kielbasa.
- Then layer it all again, starting with potatoes, then cabbage, then onions, then smoked sausage, and top it all off with the remaining potatoes.
- Sprinkle the cheese on top. Stir up the sauce and pour it over the top of all uniformly.
- Cover your pan with aluminum foil tightly and bake in a 350 degree oven for about 1 hour, until potatoes are tender. Then remove the foil and bake another 15 minutes at 400 to brown the top slightly or place under the broiler until lightly browned.

OVEN ROASTED SMOKED SAUSAGE AND POTATOES

- Preheat the oven to 200*C/400*F/ gas mark 6. Line a large baking tray (with sides) with several sheets of foil, and drizzle with a bit of oil. Spread the oil out over the pan. Set aside. Put the sausage rounds, onions and potatoes into a large bowl. Drizzle with a couple TBS of olive oil and season to taste with salt, pepper, paprika and dried thyme. Toss together with your hands until everything is evenly distributed. Pour this out onto the baking tray, and spread it out as much as you can. Place into the heated oven and roast for 45 minutes to an hour, stirring every 15 minutes or so, until the potatoes are golden brown and tender. Turn off the oven. Scatter the cheese over top of the cooked meat and potatoes, Pop back into the oven a few minutes to melt the cheese. Serve immediately.

- 1. Slice kielbasa..chop onion Place sausage, onion, and oil in a large skillet. Sauté for a few minutes, until onion begins to soften. Peel potatoes and cut into bite-sized pieces.
- 2. Add potatoes to skillet. Add stock (use water if you don't have stock handy). Cover and simmer until potatoes are done. (How long this will take depends on how small you considered "bite-sized." Smaller dice will of course be done quicker. Allow about 15-20 min. but be flexible.) In a small bowl, make a paste of flour and milk. Stir into potatoes and sausage. Cook over medium heat until thickened.
- 3. I just serve this with a tossed salad, and nice crusty bread..

- 1. Peel and slice potatoes and onion. Make layers in slow cooker or crockpot as such: Potatoes, onion, smoked sausage (wedges of cabbage and/or mushrooms are great in this, too). Pour cream of mushroom soup over this. Add 1/2 soup can of water. Turn crockpot on low for all day cooking (about 6 hours); slow cooker on medium for about 3 - 4 hours. NOTE: It's fine to put smoked sausage in frozen, too.
