SMOKED SALMON FRITTATA
I don't eat seafood anymore, but this was one of my favourite breakfast recipes when I did. I adapted this from one of my parents' South Beach Diet books.

Steps:
- Boil 1 inch of water in a large skillet. Add the asparagus and cook, uncovered, until tender-crisp.
- Grease an oven-proof 8-inch skillet and place over medium-low heat until hot. Add the olive oil and saute the onion until soft. Add the asparagus and sun-dried tomatoes. Add the smoked salmon and remove from the heat.
- Preheat the broiler.
- Combine the eggs, water, dry milk, marjoram, and pepper, mixing well with a whisk or fork. Pour over the salmon mixture. Cover and cook over medium-low heat for 7 minutes or until the bottom is set and the top is slightly wet.
- Place the skillet under the broiler 4-6 inches from the heat source until the top of the frittata is puffed and set, 2-3 minutes. Top with sour cream, salmon roe, marjoram, and chives, if desired.
- Slice into wedges and serve immediately.

SOUTH BEACH FRIENDLY SALMON PATTIES
I grew up eating salmon patties with corn meal, flour and egg as a binder. When I started the South Beach Diet I needed a cheap high protein meal without the cornmeal and flour.

Steps:
- In a large bowl, crumble the canned salmon and if you prefer remove the skin and bones.
- Add the vegetables and mix well.
- Add the spices to the mixture and mix again.
- Heat olive oil in a skillet over a med high heat.
- Finally, add egg to mixture and mix well until the whole mixture is moist and sticks together when pressed.
- form the mixture into 3" patties about 1/2" thick.
- Place patties in heated skillet and cook until a brown crust forms, then flip and cook until the other side is brown (3-5 minutes per side).
- Makes 5 - 6 patties.

- Preheat oven to 350°F Coat in 2-qt baking dish with cooking spray.
- In a large bowl, beat the eggs and egg whites until frothy. Stir in remaining ingredients. Pour into prepared baking dish.
- Bake for 45 minutes, or until golden and knife inserted in center comes out clean.
GRILLED SALMON WITH ROSEMARY (SOUTH BEACH PHASE I)

Steps:
- Cut the fish into 4 equal-size portions. Combine the olive oil, lemon juice, salt, pepper, garlic, and rosemary in a bowl. Brush the mixture onto the fish.
- To grill, arrange the fish on a grill rack or use a grill basket sprayed with olive oil cooking spray. Grill over medium-hot coals until the fish flakes easily (allow 4-6 minutes per 1/2" of thickness). If the fish is more than 1" thick, gently turn it halfway through grilling.
- To broil, spray the rack of a broiler pan with olive oil cooking spray and arrange the fish on it. Broil 4" from the heat for 4-6 minutes per 1/2" thickness. If the fish is more than 1" thick, gently turn it through broiling.
- To serve, top the fish with capers, if using, and garnish with rosemary sprigs, if desired.

SPICY DILL MAYO SALMON (SOUTH BEACH DIET FRIENDLY)
Spicy Dijon and Mayo with Dill. Try with different types of fish (or shrimp, chicken, etc.) I used low-fat mayonnaise to make it South Beach Diet friendly. Note: for a quicker recipe nix the thyme, oregano, basil, even garlic. Note: for a better presentation, hold dill until the end and sprinkle over the top rather than mixing into sauce. Note: I've used regular jarred spices rather than fresh and they work just fine.

- Preheat oven to 375°F.
- Stir together mayonnaise and mustard.
- Add spices (withhold dill and sprinkle on top later for a more professional presentation).
- Arrange salmon on a baking sheet or pan.
- Coat with sauce (add dill here if you've withheld it).
- Bake for 30-40 minutes (salmon flakes when done).
- Optional: When serving, spoon remaining sauce back over fish for a saucier version.
