2 eggs
2 tablespoons nonfat milk
3 slices thin-sliced smoked lunch meat ham, chopped
1 teaspoon green onion, thinly sliced
1 dash black pepper
1/4 cup shredded reduced-fat cheddar cheese

Steps:

  • Beat eggs and milk in small bowl with fork until blended. Add ham, onion, and pepper; mix well.
  • Spray an 8-in. nonstick skillet with cooking spray.
  • Pour egg mixture into skillet; cover. Cook on medium heat 6 minutes or until egg mixture is set but top is still moist.
  • Sprinkle cheese evenly onto half of omelet. Using spatula, fold egg mixture over filling; cover.
  • Remove from heat; let stand 1 minute.
  • Cut in half to serve.

4 ounces prosciutto or 4 ounces Canadian bacon, chopped
1/2 teaspoon dried rosemary

I found this in the "South Beach Diet Book".. even if you're not dieting... it's great. Just substitute real sour cream for the fat-free for a to die for experience. It's quick, simple and uses on hand ingredients.

1 tablespoon olive oil
1 garlic clove, minced
1/4 cup lemon juice
2 tablespoons capers
1 teaspoon lemon-pepper seasoning
1/2 cup fat free sour cream
1 1/2 lbs salmon fillets

Steps:

  • Preheat the oven to 350°F.
  • Coat a baking sheet with cooking spray.
  • Heat the oil in a small saucepan over medium heat.
  • Add the garlic and cook for one minute.
  • Reduce heat to low; stir in the lemon juice, capers and lemon-pepper seasoning and cook for 5 minutes.
  • Add the sour cream and cook for 5 minutes or until heated though.
  • Meanwhile, place the salmon on the prepared baking sheet.
  • Bake for 20 minutes or until the fish is just opaque.
  • Serve with the sauce.

This big pancake can be eaten during Phase II of the diet and is very filling. You can use a low sugar syrup if you would like; I prefer it with just a few spritzes of trans free margarine spray and a few sprinkles of Splenda. This recipe is courtesy of The South Beach Diet book.

4 egg whites
1/4 cup low fat cottage cheese (tofu can be used) or 1/4 cup fat-free cottage cheese (tofu can be used)
1/2 cup old-fashioned oatmeal, uncooked
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon nutmeg

Steps:

  • In a blender or a food processor, blend together all ingredients until smooth.
  • Spray a medium sized skillet with cooking spray and set heat to medium.
  • Add the pancake batter to skillet and cook until sides are lightly browned.
  • Top with a low sugar syrup, trans free butter and/or a few sprinkles of a sugar substitute and serve with fresh fruit; blueberries or strawberries are allowed and would go nicely.

Found this on another low-carb diet website but it works perfect for my South Beach Diet! A wonderful bread substitute! Used it this morning to make french toast and if I didn't know it was wheat free I never would have guessed!

3 eggs
3 tablespoons low-fat ricotta cheese
1/4 teaspoon cream of tartar
1 teaspoon Splenda sugar substitute
1 pinch salt

Steps:

  • Pre-heat oven to 300°F.
  • Beat egg whites to soft peaks.
  • Add cream of tarter and peak to stiff peaks.
  • Meanwhile whisk together egg yolks, ricotta cheese and Splenda and a pinch of salt.
  • Take one third of the egg white mixture and and fold into the egg yolk mixture.
  • Then fold egg yolk mixture into egg white mixture carefully til just blended.
  • On a parchment lined baking sheet form six piles of the mixture.
  • Bake at 300°F for one hour.
