BOURBON BEEF TENDERLOIN

A marinated and tender piece of beef that's great for dinner.

Number Of Ingredients 10

3 to 4 sprigs chopped fresh thyme
2 cups water
1 tablespoon Worcestershire sauce
1/2 cup lemon juice
1 bunch chopped fresh cilantro
1 cup brown sugar
2/3 cup soy sauce
1 cup bourbon
1 (5 lb) silver connective tissue removed beef tenderloin
to brush on grill oil

Steps:

  • Preheat grill or oven to 350 °F.
  • Prepare marinade by combining the bourbon, brown sugar, soy sauce, cilantro, lemon juice, Worcestershire sauce, water and thyme in a bowl. Make sure the tenderloin has been cleaned and the tissues has been removed. Fold the tail end of the beef back underneath itself so that it is of uniform thickness and secure with butcher's string. Place meat in a dish and pour marinade over meat, cover, and refrigerate for approximately 8 to 12 hours turning meat over several times.

  • When grill is ready, place meat on oiled surface and reserve the liquid from the marinade. Cook over high heat with lid closed, turning meat often and occasionally basting. The tenderloin will cook to rare in approximately 30 to 45 minutes.
  • Serve with horseradish cream on the side.

Bourbon is an excellent match for beef. Marinate your favorite roast with this bourbon marinade to make a delightful meal for your guests.

Number Of Ingredients 10

1/4 cup Bourbon whiskey
1/4 cup brown sugar
1/3 cup soy sauce
1 tablespoon minced fresh ginger (optional)
1 tablespoon Lea & Perrins® Worcestershire Sauce
2 tablespoons Dijon mustard
2 tablespoons minced garlic
3 tablespoons olive oil
2 tablespoons red wine vinegar
2 teaspoons freshly ground black pepper

Steps:

  • Combine all ingredients and place in a zipper-locking plastic bag with selected Certified Angus Beef® brand cut. Close bag, removing air. Marinate in refrigerator 6 to 8 hours or overnight. Remove selected cut from bourbon marinade and discard marinade.

4 lbs Eye of Round ((or use another lean beef cut suitable for roasting like Bottom Round or Top Round))
2 tbsp olive oil ((extra virgin or use Worcestershire sauce))
1 tbsp sea salt
1 tsp black pepper
1 tbsp paprika
1 tsp garlic powder
1 tsp onion powder

Steps:

  • Brush olive oil (or use Worcestershire sauce) to coat your beef roast cut.
  • In a small bowl or a plastic storage bag, combine the seasoning ingredients including salt, pepper, paprika, garlic powder, and onion powder. Apply the seasoning to your beef, massaging the blend into the meat. *Allow the meat to come to room temperature, try to give the beef at least an hour to warm before smoking.
  • Load the pellet hopper or chip basket with your desired wood chips. Preheat your smoker to 225 degrees F (107 degrees C).
  • Place seasoned beef into your preheated smoker directly onto the grill. If you have a meat probe to monitor the internal temperature, insert the probe into the middle of the roast. *See notes for proper placement of meat probe.
  • Smoke for approximately 2 hours at 225 degrees F (107 degrees C), or 30 minutes per pound. Internal temperature should be 120-125 degrees F (49-52 degrees C) for RARE, 125-135 degrees F (54-57 degrees C) for MEDIUM RARE, and 135-140 degrees F (57-60 degrees C) for MEDIUM.
  • Remove from your smoker and loosely cover with aluminum foil for about 30 minutes to rest the smoked beef roast.
  • Once rested remove the foil, slice against the grain, and serve.

1 cup red wine vinegar
1 cup olive oil
1 cup bourbon
1 beef tenderloin
Cooked asparagus, as an accompaniment

Steps:

  • Preheat oven to 500 degrees F.
  • Combine red wine vinegar, olive oil, and bourbon. Massage mixture into the beef with your hands. Marinate the beef tenderloin in the refrigerator for 1 hour. Place marinated beef tenderloin in a roasting pan, place in oven and cook for 30 minutes (if you like rare beef, cook longer if you prefer your beef more well done). Let stand for about 1 hour. Place on serving platter and serve with fresh asparagus.
