This is a wonderful, healthy side dish for summertime. Only make when the grape tomatoes are in season, their flavor is key! Great in the oven or on the grill.

1 pound grape tomatoes, halved
1 tablespoon olive oil
2 cloves garlic, minced
5 fresh basil leaves, chopped
1 teaspoon chopped fresh thyme
salt to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place tomatoes onto a large square of aluminum foil. Drizzle olive oil over tomatoes and top with garlic, basil, thyme, and salt. Wrap the foil around tomato mixture sealing tightly to keep juices inside.
  • Bake in the preheated oven until tomatoes are tender, about 30 minutes. Cool slightly.

This recipe for Roasted Grape Tomatoes is easy and versatile. It's quick to prepare and can be put in the oven while you prepare the remainder of your meal.

4 cups grape tomatoes (can use cherry and plum tomatoes as well)
3 tbsp. extra virgin olive oil
2 tbsp. balsamic vinegar
3/4 tsp. salt
1/2 tsp. pepper

Steps:

  • Position a rack in the center of the oven and pre-heat the oven to 425°F.
  • Rinse the grape tomatoes, place them on a baking sheet, add olive oil, balsamic vinegar, salt and pepper. Toss them well to make sure the tomatoes are well coated. Arrange the tomatoes in a single layer.
  • Bake in the oven for 20 minutes, stirring once after 10 minutes. Tomatoes are ready when they burst and become caramelized.

4 cups grape tomatoes
3 garlic cloves, peeled
3 tablespoons extra-virgin olive oil
2 teaspoons coarse kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 400 degrees F. In a medium bowl add the grape tomatoes and 3 garlic cloves. Drizzle with 3 tablespoons of olive oil and sprinkle with salt, pepper.
  • In a 9 by 13-inch glass baking dish, place the tomatoes and garlic cloves, ensuring they are in just 1 layer. Roast for 20 minutes, and then stir. Add 2 to 3 tablespoons of hot water, if too dry in appearance. Return to the oven and cook for 20 to 30 more minutes.
  • When ready, the tomatoes will have begun to shrivel and the liquid in the dish should have thickened. Serve hot from oven.
