2 (29 ounce) cans sweet potatoes, drained and mashed
⅓ cup butter, melted
2 tablespoons white sugar
2 tablespoons brown sugar
1 tablespoon orange juice
2 eggs, beaten
½ cup milk
⅓ cup chopped pecans
⅓ cup brown sugar
2 tablespoons all-purpose flour
2 teaspoons butter, melted

Steps:

  • Lightly grease a slow cooker.
  • In a large bowl, blend sweet potatoes, 1/3 cup butter, white sugar and 2 tablespoons brown sugar. Beat in orange juice, eggs and milk. Transfer this mixture to the prepared slow cooker.
  • In a small bowl, combine pecans, 1/3 cup brown sugar, flour and 2 tablespoons butter. Spread the mixture over the sweet potatoes. Cover the slow cooker and cook on HIGH for 3 to 4 hours.

My niece is allergic to cinnamon, so I came up with this variation of a classic sweet potato casserole with pecans recipe. This recipe is for a 3-quart slow cooker, but it can be easily doubled for a 6-quart slow cooker. I prefer to use fresh mashed sweet potatoes as it makes the recipe less sweet, but canned will also work.

4 cups mashed sweet potatoes
½ cup white sugar
⅓ cup butter, melted
3 tablespoons light brown sugar
2 large eggs, lightly beaten
1 teaspoon vanilla extract
¼ teaspoon ground nutmeg
¼ teaspoon ground allspice
¼ teaspoon ground ginger
⅛ teaspoon ground cardamom
⅓ cup heavy whipping cream
¾ cup chopped pecans
¾ cup firmly packed light brown sugar
¼ cup all-purpose flour
2 tablespoons butter, melted

Steps:

  • Lightly grease a 3-quart slow cooker with cooking spray.
  • Combine potatoes, white sugar, 1/3 cup butter, 3 tablespoons brown sugar, eggs, vanilla extract, nutmeg, allspice, ginger, and cardamom in a large bowl. Beat using an electric mixer at medium speed until smooth. Add whipping cream and stir well. Pour into the prepared slow cooker.
  • Combine pecans, 3/4 cup brown sugar, flour, and 2 tablespoons butter in a small bowl. Sprinkle over sweet potato mixture.

1 (20 ounce) can pineapple chunks, drained with juice reserved
1 (15 ounce) can mandarin oranges, drained
½ cup flaked coconut
2 tablespoons margarine
¾ cup packed brown sugar
1 tablespoon vanilla extract
2 tablespoons pumpkin pie spice, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat a 9x13-inch casserole dish with cooking spray.
  • Place sweet potatoes, pineapple, and mandarin oranges in 9x13-inch baking dish, sprinkle coconut on top.
  • Melt margarine in a small bowl in the microwave, about 10 seconds. Combine melted margarine, brown sugar, vanilla extract, 1 tablespoon pumpkin pie spice, and enough reserved pineapple juice to make 1 cup. Stir sauce until brown sugar is dissolved, about 1 minute. I'm finding a lot of really great recipes in my mother's nice little 80 page pocket sized Crock-Pot Cook Book -- which appears to have come with the appliance she bought in the 70's. Not like the dozen recipes you get now-a-days. This one sounds really good... I have not tried it, but I think I may in the not distant future....

6 to 8 pork chops
to taste salt and pepper
2 medium sweet potatoes, peeled and sliced, (can use white potatoes if prefer)
1 large onion, sliced
1 large green bell pepper, sliced
1/2 tsp leaf oregano
1/4 tsp whole thyme
1 1 lb-can of tomatoes

Steps:

  • 1. Trim visible fat from the pork chops, season with salt and pepper and brown in skillet to remove excess fat. Drain and place in slow cooker.
  • 2. NOTE: From reading the guidelines in the slow cooker cook book, you do not have to brown the meat before adding to the pot -- a time saver -- but you will need to remove the excess grease from the pot, later, after it is cooked.
  • 3. Add remaining ingredients in order listed.
  • 4. Cover and cook on low 8 to 10 hours (High: 3 to 4 hours) Adjust seasonings to taste before serving.
  • 5. Alternatives: You can also cut the pork into 1.5-inch pieces and cube the sweet potatoes if you like
  • 6. Flavor Alternatives: You may substitute below for above spices: 1/2 Cup unsweetened orange juice 2 shallots, green ends chopped 1 tsp cumin seed 1 1/2 Tbsp fresh lime juice 2 tbsp fresh coriander, chopped

1 olive oil, extra light spray (3 second spray)
4 large lean lamb, leg chop (600g)
2 medium onions, chopped
2 garlic cloves, crushed
1 teaspoon coriander powder
8 whole whole cardamom pods (pods)
1 medium sweet potato (600g)
2 whole stock cube dissolved in 2 cups hot water

Steps:

  • Place lamb, onions, garlic, coriander, cardamom, sweet potato and stock in a 5-litre capacity slow cooker. Season well with salt and pepper. Cover and cook on a low setting for 7 hours. Make sure to split cardamom pods down centre (not all way through) with a large sharp knife. This will help cardamom flavour to infuse in casserole. Unfortunately some of the black seeds may come out during the cooking process, so be careful not to eat them. They aren't at all harmful to your health, just a little full-on in flavour.
  • Serve with steamed green beans or broccoli.
