I'm finding a lot of really great recipes in my mother's nice little 80 page pocket sized Crock-Pot Cook Book -- which appears to have come with the appliance she bought in the 70's. Not like the dozen recipes you get now-a-days. This one sounds really good... I have not tried it, but I think I may in the not distant future....

6 to 8 pork chops
to taste salt and pepper
2 medium sweet potatoes, peeled and sliced, (can use white potatoes if prefer)
1 large onion, sliced
1 large green bell pepper, sliced
1/2 tsp leaf oregano
1/4 tsp whole thyme
1 1 lb-can of tomatoes

Steps:

  • 1. Trim visible fat from the pork chops, season with salt and pepper and brown in skillet to remove excess fat. Drain and place in slow cooker.
  • 2. NOTE: From reading the guidelines in the slow cooker cook book, you do not have to brown the meat before adding to the pot -- a time saver -- but you will need to remove the excess grease from the pot, later, after it is cooked.
  • 3. Add remaining ingredients in order listed.
  • 4. Cover and cook on low 8 to 10 hours (High: 3 to 4 hours) Adjust seasonings to taste before serving.
  • 5. Alternatives: You can also cut the pork into 1.5-inch pieces and cube the sweet potatoes if you like
  • 6. Flavor Alternatives: You may substitute below for above spices: 1/2 Cup unsweetened orange juice 2 shallots, green ends chopped 1 tsp cumin seed 1 1/2 Tbsp fresh lime juice 2 tbsp fresh coriander, chopped

1/2 small red cabbage, thinly sliced lengthwise (6 cups)
1/2 yellow onion, thinly sliced (1 cup)
1/8 teaspoon ground allspice
4 sprigs thyme
Coarse salt and freshly ground pepper
6 slices thick-cut bacon, cut into 1/2-inch pieces (3/4 cup)
4 pork shoulder chops, each 3/4 inch thick
1 tablespoon extra-virgin olive oil
1 tablespoon unsalted butter
3/4 cup low-sodium chicken broth
1/4 cup apple-cider vinegar
Applesauce, for serving
Sour cream, for serving
Chopped fresh herbs, such as parsley and dill, for serving

Steps:

  • Place cabbage, onions, allspice, and thyme in a 5- to 6-quart slow cooker. Season with salt and pepper and toss.
  • In a large skillet over medium-high heat, cook bacon until it begins to brown and crisp up, about 5 minutes. Transfer bacon and any rendered fat to slow cooker.
  • Season pork chops with salt and pepper. Swirl oil and butter into pan over high heat. Working in two batches if necessary, cook chops, turning once and pressing down with tongs to make contact with pan, until deep golden brown, 8 to 10 minutes. Transfer to slow cooker, tucking chops into the cabbage.
  • Add chicken broth and vinegar to pan, scraping up any brown bits with a spoon. Pour sauce over pork chops. Cover and cook on low until pull-apart tender, about 3 hours. Serve with applesauce, sour cream, and a sprinkling of fresh herbs.

6 medium red potatoes (about 1 1/2 lb), cut into eighths

2 tablespoons dry white wine or chicken broth
1/4 teaspoon dried thyme leaves
1/2 teaspoon garlic powder
1/2 teaspoon Worcestershire sauce
3 tablespoons Gold Medalâ„¢ all-purpose flour
1 tablespoon diced pimientos (from 2-oz jar)
2 cups frozen sweet peas, rinsed, drained

Steps:

  • Heat 12-inch nonstick skillet over medium-high heat. Cook pork chops in skillet 2 to 4 minutes, turning once, until brown.

2 tablespoons oil
6 medium potatoes, cubed
1 medium onion, chopped
1 small cabbage, cut in thin wedges (optional)
4 carrots, diced
1/4 teaspoon salt
1/2 teaspoon pepper
2 teaspoons beef bouillon granules
1/4 cup water
14 1/2 ounces tomatoes, sliced
1/2 cup sour cream
2 tablespoons cornstarch

Steps:

  • Trim fat from chops. Coat with 2 tablespoons flour. Brown chops in oil over medium heat.
  • Place potatoes, onion and carrots in slow cooker. Sprinkle remaining flour over and toss to coat.
  • Layer over potato mixture, in order, cabbage, salt, pepper, chops, bouillon, 1/4 cup water and stewed tomatoes with juice. Do not stir.
  • Cover and cook on high 3 1/2-4 hours or on low for 7 - 8 hours
  • Optional: in small saucepan, stir sour cream and cornstarch until smooth. Measure cooking liquid and add enough water or milk to 1 1/2 cups. Stir into saucepan. Cook and stir over medium heat until thick and mixture comes to a boil. Serve with chops.

This can also be made using chicken pieces or breasts, top the sauce over potatoes, the sauce is delicious! use you favorite BBQ sauce for this, I like KC Masterpiece. For extra flavor and less cooking time you can brown the pork chops or chicken before placing in the slow cooker. Cooking time is only estimated depending on the thickness of the pork chops. Reduce the recipe by half for 4-6 pork chops, this is *very* good! ;-)

8 -10 pork chops (no less than 3/4-inch thick)
2 (12 ounce) bottles barbecue sauce
1 cup Italian salad dressing
1/2 cup brown sugar
3 tablespoons Worcestershire sauce
1 medium onion, chopped
1 -2 tablespoon fresh minced garlic (or to taste)
1/2 teaspoon black pepper
1 pinch cayenne pepper (optional)

Steps:

  • In a bowl mix BBQ sauce with Italian dressing, brown sugar, Worcestershire sauce, onion, garlic, black pepper and cayenne (if using) until well combined.
  • Place the pork chops in the slow cooker then pour the sauce over the chops, mix slightly to make certain the chops are coated with the sauce.
  • Cover and cook on HIGH setting for 3-4 hours or on LOW setting for about 6-7 hours (cooking times will vary).
