Our favorite meatloaf recipe does great in the slow cooker. Made with familiar flavorings that have stood the test of time, this meatloaf is as classic as it gets. And it's about as easy as it gets, too-just toss together the ingredients, set your loaf in a foil-lined slow cooker and forget it! Your meal will be ready in 3 to 4 hours, and you don't need to be stuck in the kitchen in the meantime. And lucky you if there are leftovers-we love using this for meatloaf sandwiches the next day!

1 1/2 lb lean (at least 80%) ground beef
1 cup milk
1 teaspoon chopped fresh sage leaves or 1/4 teaspoon dried sage leaves
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/4 teaspoon pepper
1 clove garlic, finely chopped, or 1/8 teaspoon garlic powder
1 egg
3 slices bread, torn into small pieces
1 small onion, chopped (1/4 cup)
1/2 cup ketchup

Steps:

  • Line 4 1/2- to 5-quart slow cooker with foil. Spray foil with cooking spray.
  • In large bowl, mix all ingredients except ketchup. Shape mixture into loaf, and place in center of slow cooker. Spread ketchup over top.
  • Cover; cook on Low heat setting 3 to 4 hours or until meat thermometer inserted in center of loaf reads 160°F. Remove meatloaf from slow cooker to serving platter. Cut into pieces to serve.

2 lbs 93% lean ground beef
3 slices light bread, curmbled (1 cup)
1 cup chopped onion (about 1 medium)
1/2 cup fat free egg substitute
1/4 teaspoon salt
1/4 teaspoon ground pepper
1/2 cup ketchup
1/2 cup thick & chunky salsa

Steps:

  • Coat 3 1/2-quart slow cooker with cooking spray. Tear off two lengths of aluminum foil long enough to fit in bottom of cooker and extend 3 inches over each side of cooker. Fold each foil strip lengthwise to form 2-inch-wide strips. Arrange foil strips in a cross fashion in cooker, pressing strip in bottom of cooker and extending ends over sides of cooker.
  • Combine beef and next 5 ingredients; shape mixture into a loaf the shape of the slow cooker container. Place loaf in slow cooker over foil strips. (Foil strips become "handles" to remove meat loaf from slow cooker.)Make a shallow indention on top of meat loaf. Combine ketchup and salsa (chili sauce); pour over meat loaf.
  • Cover and cook on low heat 8 hours or on high heat 3 1/2 to 4 hours. Use foil strips to lift meat loaf from cooker. Let meat loaf stand 10 minutes before serving.Yield: 8 servings/4 points.

1 1/2 Pounds ground lean skinless
turkey
1 onion, chopped
1 green bell pepper, seeded and chopped
1 egg white
3/4 cup ketchup
1/2 cup seasoned dry bread crumbs
1 tablespoon yellow mustard
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper

Steps:

  • 1. Cover a wire rack small enough to fit in the slow cooker with foil; spray the foil with nonstick spray. Combine the turkey, onion, bell pepper, egg white, 1/4 cup of the ketchup, the bread crumbs, mustard, salt and pepper in a large bowl; mix well. Transfer the turkey mixture to the rack; form into a 5x9 inch loaf. 2. Place the meatloaf and the rack in a 5-6 qt. slow cooker. Spread the top of the meatloaf with the remaining 1/2 cup ketchup. Cover and cook until the meatloaf reaches an internal temp. of 165 degrees, 3 to 4 hours on high or 6 to 8 hours on low. Transfer to a cutting board ; cut into 6 slices.
