Steps:

Two 32-ounce boxes chicken stock (8 cups)
1 cup diced carrots
1 cup green lentils, rinsed
1/2 cup jarred marinated artichokes, drained
1/2 cup diced celery
1/2 cup sun-dried tomatoes in oil, drained and julienned, plus 1 tablespoon oil from the jar
1 teaspoon vegetable bouillon paste
3 sprigs fresh oregano
1 onion, diced
2 cups escarole, julienned
Zest and juice of 1 lemon
Kosher salt and freshly ground black pepper
Crusty bread, for serving

Steps:

  • Place the chicken stock, carrots, lentils, artichokes, celery, sun-dried tomatoes and tablespoon of their oil, bouillon paste, oregano and onion in a slower cooker. Cook until the lentils are tender, on high for 4 hours or low for 8 hours. Stir in the escarole, lemon zest and juice and let sit 5 to 10 minutes. Season with salt and pepper and serve with crusty bread alongside.

The sausage's flavors are reinforced by adding more garlic and pepper to the soup itself, for pops of flavor. Pleasantly firm but creamy on the inside, Beluga lentils (also known as black lentils) are worth seeking out for this hearty soup because they hold their shape when cooked, adding a lovely texture. But you can absolutely use regular green or brown lentils instead. Just know that they will fall apart, making the soup smoother. This recipe freezes well and is better after it rests in the refrigerator, so make a big batch to eat for days.

1 pound hot or sweet Italian pork sausage, loose or removed from its casing
Olive oil, if necessary
1 large red or yellow onion, chopped
Kosher salt
6 garlic cloves, chopped
1 teaspoon onion powder
1 teaspoon garlic powder
3 thyme sprigs
2 oregano sprigs, leaves only, or 1 teaspoon dried oregano
Generous pinch of red-pepper flakes
Freshly ground black pepper
3/4 cup dry white wine
1 bay leaf
2 cups dried lentils, preferably black beluga
1 (14-ounce) can whole or chopped tomatoes
8 cups chicken stock
5 ounces greens, such as baby spinach or kale, or 1 medium bunch greens, such as chard or kale, stemmed and chopped
1 tablespoon red-wine vinegar
Chopped fresh basil, for topping
Grated Parmesan, for topping

Steps:

  • In a large, dry skillet over medium-high heat, cook the sausage, breaking it up with a spatula, until it is in small, coarse pieces, and starts to brown and sizzle in its own fat, about 8 minutes. Using a slotted spoon, transfer the cooked sausage to a 5- to 8-quart slow cooker. There should be a thin layer of fat covering the bottom of the skillet. If there is much more than that, pour a bit of the fat off. If there is not enough fat to cover the bottom of the pan, add a drizzle of olive oil.
  • Add the onion to the skillet, season generously with salt, and cook, stirring occasionally, until softened and translucent, about 5 minutes. Reduce heat to medium-low, add garlic and cook until softened and fragrant, about 2 minutes. Add the onion and garlic powders, the herbs, red-pepper flakes and several generous grinds of black pepper. Stir to combine. Increase heat to medium-high, pour in the wine and stir well, scraping the bottom of the pot. Let the wine bubble until the pan is almost dry, about 3 minutes.
  • Scrape the skillet mixture into the slow cooker with the sausage. Add the bay leaf and the lentils. Add the tomatoes with their juice. If using whole, crush the tomatoes into pieces using your hands as you add them with their juice. Pour in the chicken stock. Season generously with pepper and add 1/2 teaspoon salt if you are using low-sodium stock or 1 teaspoon salt if using homemade unsalted stock. Do not add salt now if you are using fully salted stock. Stir well to combine all ingredients. Cover and cook on low until the lentils are tender, about 6 to 8 hours. (Taste the lentils to make sure they are firm but creamy on the inside; black lentils can vary in their cooking time depending on their age and the heat of your slow cooker.) The soup holds well on warm for 2 additional hours.
  • Switch the heat to high. Remove and discard the thyme sprigs. Stir in the greens and cook until wilted and tender, about 2 minutes for baby spinach, 10 minutes for kale. Stir in the vinegar. Serve in bowls, topped with chopped basil and grated Parmesan.

1 (15 ounce) can petite diced tomatoes
1 large onion, diced
1 tablespoon jarred minced garlic

1 ½ teaspoons paprika
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon salt, or more to taste
7 cups chicken broth
1 ½ pounds bone-in, skin-on chicken thighs, or more to taste

Steps:

  • Combine green lentils, tomatoes, onion, garlic, cumin, oregano, chili powder, paprika, onion powder, and salt in a slow cooker. Pour in chicken broth and stir gently to evenly distribute seasonings into the broth.
  • Settle chicken thighs into the broth, ensuring they are submerged in the liquid.
  • Set slow cooker for High heat and cook for 4 hours, chicken should be falling off the bone and lentils should be tender (if not, cook a little bit longer).
  • Use tongs and remove chicken from the soup and set on a cutting board. Pull meat off the bones with tongs and either rough chop or break apart into bite sized pieces with the tongs. Return meat to the soup. Discard bones.

1 teaspoon curry powder

Steps:

a spicy soup based on a Breville recipe in the slow cooker's sample recipes. I have modified this a bit - see which version you prefer.Originally it included 4 cloves garlic, 3 tsp minced chilli and you stirred 1/3 cup sun dried tomato pesto through at the end. I found this too hot. Even this version is fairly spicy but yummy! Next time I make it I will leave out the chilli altogether and just add sun dried tomato pesto.

2 tablespoons olive oil
2 medium Spanish onions, sliced
2 garlic cloves, crushed
1 teaspoon red chili pepper flakes
6 cups tinned crushed tomatoes

1 1/2 cups red lentils
1 1/4 cups cream
1/3 cup sun-dried tomato pesto (optional)

Steps:

  • Place onion mix in slow cooker. Stir in tomatoes, stock, tomato paste, brown sugar and lentils.
  • Cover with lid and cook on LOW 6-8 hours or HIGH 4 hours.
  • Stir in cream 1/2 hour before end of cooking, replace lid and continue to cook.
  • The orginal recipe says to ladle into bowls and top with 2 tsp sundried tomato pesto. Serve hot with crusty bread.

Slow Cooker Lentil Vegetable Soup image

We have a regular Monday night get together for dinner with friends. I try to make a different soup as a starter every week. Sometimes I follow a recipe & others I just sort of throw whatever appeals in the pot. This was last nights soup & it was one of the throw things together. We all agreed that this is a make again soup. I made this in a 1.5 litre slowcooker. It will serve 8 as a starter, 4 as a main course. I used a combination of portabello & white mushrooms, as that is what I had in the fridge. You could add some cooked diced chicken during the last hour of cooking if you wanted to.

2/3 cup sliced mushrooms
2/3 cup sliced celery
2/3 cup diced bell pepper (orange & yellow)
1 teaspoon olive oil
1 teaspoon butter
1/8 teaspoon cumin
1 1/2 cups v 8 juice
1 1/2 cups chicken broth (or sub vegetable broth)
2/3 cup sliced carrot
1/2 cup dried brown lentils (sorted & rinsed)
1/8 teaspoon ground coriander
1/4 teaspoon celery salt
1/2 teaspoon dill weed
1 tablespoon soy sauce
ground pepper
1/3 cup barley (pot or pearl)
1 cup chicken broth

Steps:

  • Saute musrhooms, celery & peppers in olive oil & butter for about 5 minutes, add the 1/8 tsp cumin just before the end.
  • Add all the veggies, juice 1 1/2 cups chicken broth & seasonings to slowcooker.
  • Cook on low for 6 hours.
  • Add barley & as much of the last cup of chicken broth as needed.
  • Cook on high for 1 hour.
  • Garnish with fresh parsley when serving.

2 cups dry lentils
2 cups uncooked long grain brown rice
1 cup chopped carrots
½ cup chopped celery
½ onion, chopped
8 cups water
1 cup vegetable broth
1 teaspoon garlic powder
½ teaspoon ground black pepper
1 tablespoon salt
1 cup sliced fresh mushrooms

Steps:

  • Place the lentils, rice, carrots, celery, onion, water, broth, garlic powder, ground black pepper and salt in a slow cooker.
  • Cover and cook on low setting for 7 to 8 hours. Stir in the mushrooms 1 hour before serving.

6 cups organic vegetable broth
8 oz dried lentils, sorted, rinsed
1 container (8 oz) refrigerated prechopped celery, onion and bell pepper mix
2 teaspoons chopped fresh or 1/2 teaspoon dried oregano leaves
1/2 teaspoon freshly ground pepper
1 smoked turkey leg (8 oz)
Fat-free Greek plain yogurt, if desired
Fresh oregano sprigs, if desired

Steps:

  • Spray 3- to 4-quart slow cooker with cooking spray. In slow cooker, stir together broth, lentils, prechopped vegetables, oregano and pepper; add turkey leg.
  • Cover; cook on Low heat setting 8 to 10 hours or until lentils are tender and turkey falls off bone.
  • Remove turkey leg from slow cooker. Remove and discard skin. Shred meat; discard bone. Return meat to slow cooker; stir well. Ladle soup into 8 bowls; garnish with yogurt and oregano sprigs.

2 tablespoons butter (can substitute olive oil)
1 medium yellow onion (diced (about 1 1/2 cups diced))
3/4 cup diced carrots
2 teaspoons minced garlic
1 tablespoon curry powder
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
1 tablespoon minced fresh ginger or 1/4 teaspoon ground ginger
4 cups vegetable broth
2 tablespoons tomato paste
1 cup dried red lentils (rinsed)
2 15.5- ounce cans chickpeas (drained)
1 14- ounce can light coconut milk
Fresh cilantro and lime wedges for serving

Steps:

  • In a medium saute pan over medium-low heat, melt the butter.
  • Increase heat to medium and add the onion and carrots. Cook, stirring occasionally, until the onion has softened, about 4 minutes.
  • Add the garlic, curry powder, cayenne powder, ginger and salt. Stir and cook for another minute.
  • Add the tomato paste and pour in about a cup of the vegetable broth. Stir to get all of the bits of good stuff off of the pan, and pour the entire mixture into a 4.5 quart or larger Crock Pot.
  • Add the remaining vegetable broth, red lentils, chickpeas, and coconut milk to the Crock Pot and stir.
  • Cook on low for about 8 hours.
  • Taste and add additional salt if necessary.
  • Serve with fresh lime wedges for squeezing on top and sprigs of cilantro.

1 pound smoked ham shanks
2 cartons (32 ounces each) Progresso™ chicken broth (8 cups)
1 package (16 ounces) dried lentils (2 1/4 cups), sorted and rinsed
4 medium stalks celery, chopped (2 cups)
4 medium carrots, chopped (2 cups)
3 tablespoons chopped fresh parsley
3 cloves garlic, finely chopped
2 cups shredded fresh spinach

Steps:

  • Mix all ingredients except spinach in 5- to 6-quart slow cooker.
  • Cover and cook on Low heat setting 8 to 9 hours or until lentils are tender.
  • Remove ham from cooker; place on cutting board. Pull meat from bones, using 2 forks; discard bones and skin. Stir ham and spinach into soup. Stir well before serving.
