3 pounds potatoes, peeled and thinly sliced
1 cup shredded Cheddar cheese
½ cup chopped onion
1 cup chopped cooked ham
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup water
½ teaspoon garlic powder
¼ teaspoon salt
¼ teaspoon black pepper

Steps:

  • Place sliced potatoes in slow cooker. In a medium bowl, mix together shredded cheese, onion and ham. Mix with potatoes in slow cooker. Using the same bowl, mix together condensed soup and water. Season to taste with garlic powder, salt and pepper. Pour evenly over the potato mixture.
  • Cover, and cook on High for 4 hours.

10 medium potatoes (about 3 pounds), peeled and thinly sliced
3 cups cubed fully cooked ham
2 large onions, thinly sliced
2 cups shredded cheddar cheese
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/2 teaspoon paprika
1/4 teaspoon pepper

Steps:

  • In a greased 6-qt. slow cooker, layer half of the potatoes, ham, onions and cheese. Repeat layers. Pour soup over top. Sprinkle with paprika and pepper., Cover and cook on low for 8-10 hours or until potatoes are tender.

Butter for greasing slow cooker
3 pounds red-skinned potatoes (peeled and sliced, or another variety of waxy potatoes )
1 cup chopped onion
1 cup shredded cheddar cheese
1 to 1 1/2 cups diced cooked ham
Kosher salt, to taste
Freshly ground black pepper, to taste
1 (10 3/4-ounce) can cream of mushroom soup (or cream of celery soup, undiluted)
1/2 cup water

Steps:

  • Gather the ingredients.
  • Butter the sides and bottom of the slow cooker crockery insert.
  • Add the potatoes to the slow cooker along with the chopped onion, cheese, and ham. Sprinkle with kosher salt and freshly ground black pepper, and toss to distribute.
  • In a small bowl, combine the condensed soup with the water; pour the soup mixture over the potato mixture in the slow cooker.
  • Cover, and cook on high for 4 hours, or until potatoes are tender. Gently stir just before serving.
  • Enjoy.

This is a great, easy recipe. I got it from a Relief Society Enrichment Night lesson, and have not found its equal anywhere. I have no idea where the sister who contributed the recipe got it, but it sure is great! If you add the ham, it can even be a main dish for lunch or brunch. And while no one can say it's diet food, it's comforting, filling, and a great time saver for big holiday meals.

6 cups raw potatoes, cubed, sliced or shredded
1 medium onion, cubed, sliced or minced
1 teaspoon salt
1/2 lb cooked ham, sliced or cubed (optional)
4 tablespoons butter
4 tablespoons flour
1 teaspoon salt
2 cups milk
1 1/2 cups shredded cheddar cheese

Steps:

  • Layer potatoes, onion, 1 teaspoons salt, and ham (if used) into crock pot.
  • Make a roux with butter, flour, and 1 teaspoons salt.
  • Slowly add milk, then cheese. Cook over low heat until thickened.
  • Pour over potato/ham mixture in crock pot, and gently stir.
  • Cover and cook on"Low" 6 to 7 hours or"High" 3 to 4 hours.
