This Greek Lentil Soup Recipe (Fakes Soupa) is a hearty, healthy vegan soup packed with flavor from fresh herbs, tomatoes, and a generous amount of extra-virgin olive oil and red wine vinegar added at the end. Slow cooker and Instant Pot optional!

1 lb dry lentils (green or brown varieties)
5 tablespoons extra-virgin olive oil (divided)
1 large onion (chopped finely)
3 ribs celery (thinly sliced)
3 garlic cloves (finely chopped)
1/2 cup red wine
6 cups vegetable stock (water, chicken stock, or bone broth can be used also)
28 oz. canned diced tomatoes (preferably fire-roasted)
2 bay leaves
1 tablespoon fresh parsley (or 1 teaspoon dried)
1 tablespoon fresh oregano (or 1 teaspoon dried)
1 tablespoon fresh basil (or 1 teaspoon dried)
1 tablespoon fresh mint (or 1 teaspoon dried)
1 1/2 tsp. kosher salt
1/2 teaspoon black pepper
1/4 cup red wine vinegar

Steps:

  • Soak lentils in a large bowl or container covered with lots of water for 2-4 hours (or overnight). Drain and rinse well.
  • Sauté the onions and celery in a large pot over medium-high heat in 1 tablespoon of olive oil until softened and beginning to brown (about 3 minutes).
  • Add the garlic, sauté until fragrant (about 30 seconds).
  • Pour in the red wine and stir, cooking until it has reduced by about half (about 2 minutes).
  • Add the vegetable stock, tomatoes, bay leaves, herbs, salt, pepper, and soaked lentils.
  • Stir, bring to a boil, cover, and simmer on low for 30 minutes, or until lentils are tender.
  • Turn off heat and stir in the remaining 1/4 cup of extra-virgin olive oil and the red wine vinegar. Taste and adjust seasoning if necessary.
  • Serve!

4 cups water
4 cups vegetable broth
2 cups dried lentils, rinsed
2 medium carrots, chopped
1 small onion, chopped
1 celery rib, chopped
1 teaspoon dried oregano, divided
1 cup chopped fresh spinach
1/2 cup tomato sauce
1 can (2-1/4 ounces) sliced ripe olives, drained
3 tablespoons red wine vinegar
2 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon pepper
Optional: Chopped red onion, chopped parsley and lemon wedges

Steps:

  • Place the water, broth, lentils, carrots, onion, celery and 1/2 teaspoon oregano in a 5- or 6-qt. slow cooker. Cook, covered, on low 4-5 hours or until lentils are tender., Stir in the spinach, tomato sauce, olives, vinegar, garlic, salt, pepper and remaining 1/2 teaspoon oregano. Cook, covered, on low about 1 hour longer, until spinach is wilted. If desired, serve with red onion, parsley and lemon wedges.

2 cups dried brown lentils, rinsed and drained
2 cups shredded carrots (4 medium)
1 cup chopped onion (1 large)
3 (14 ounce) cans vegetable broth
2 teaspoons all purpose Greek seasoning

chopped tomato (for topping)
sour cream (for topping)

Steps:

  • Lightly coat a 3 1/2 to 5-quart slow cooker with cooking spray.

1 bag (16 oz) dried lentils (2 cups), sorted, rinsed
1 large onion, chopped (1 cup)
1 can (2 1/4 oz) sliced ripe olives, drained
2 cans (10 1/2 oz each) condensed chicken broth
4 cups water
1 cup chopped dry-pack sun-dried tomatoes
2 teaspoons grated lemon peel
1/4 cup crumbled feta cheese (1 oz)
2 medium green onions, sliced (2 tablespoons)
4 pita (pocket) breads (6 inch), each cut into 6 wedges

Steps:

  • Spray 5- to 6-quart slow cooker with cooking spray. In slow cooker, mix lentils, onion, olives, broth and water. In small bowl, soak tomatoes in warm water to cover while lentils cook.
  • Cover; cook on Low heat setting 5 to 6 hours (or on High heat setting 3 to 4 hours).
  • During last hour of cooking, drain tomatoes; stir tomatoes and lemon peel into lentils. Serve lentil mixture topped with cheese and onions. Serve with pita wedges.
