I found this recipe online and tried it. It was really good!! My family even loved it!! =) You don't have to be on HCG to enjoy this!! =) The ingredients can also be thrown into a slow cooker on low in the morning, for a great meal at dinnertime. =)

21 ounces chicken breasts (6 pieces, 3.5 oz each)
3 tablespoons chicken broth, for sauteing the chicken in
2 teaspoons salt, plus more to taste
1 teaspoon black pepper, freshly ground, plus more to taste
1 onion, chopped
3 garlic cloves, finely chopped
1 1/2 cups chicken broth
1 (28 ounce) can tomatoes, Diced, with juice
3 tablespoons capers, drained
1 1/2 teaspoons oregano leaves, dried
1/8-1/4 cup basil leaves, coarsely chopped

Steps:

  • In a large heavy saute pan, heat the 3 tablespoons of Chicken broth over a medium-high flame. Add the chicken pieces (if doing the HCG diet, be sure there are 6 pieces weighing only 3.5 oz each) to the pan and saute just until brown, about 5 minutes per side. Add more broth as it evaporates, if needed. If all the chicken does not fit in the pan, saute in 2 batches or more.
  • Transfer the chicken to a plate and set aside. Add the onion and garlic to the same pan and saute over medium heat until the onion is tender, about 5 minutes.
  • Season with salt and pepper. Add the remaining broth and simmer until reduced by half, about 3 minutes.
  • Add the tomatoes with their juice, capers, oregano and about half of the basil. Return the chicken pieces to the pan and turn them to coat in the sauce. Bring the sauce to a simmer. Continue simmering over low-medium heat until the chicken is just cooked through.
  • Using tongs, transfer the chicken to a platter. If necessary, boil the sauce until it thickens slightly, about 3 minutes. Spoon off any excess fat from atop the sauce.
  • Spoon the sauce over the chicken, then sprinkle with the remaining basil and serve.

This was a recipe for burritos that my sister got from Weight Watchers but I've changed it around to be a stew and HCG P2 friendly. This counts as your vegetable and protein serving for the meal.

14 ounces chicken breasts, boneless, skinless
14 ounces canned tomatoes, diced (opt. with chili peppers)
1 -2 cup chicken broth, fat-free, low-sodium
1 small onion, finely chopped
1 -2 garlic, cloves
1/2 teaspoon chili powder
1/2 teaspoon table salt
1/4 teaspoon dried oregano, crushed
1/4 teaspoon black pepper, ground

Steps:

  • Place garlic, onion, tomatoes, chili powder, salt oregano and pepper in a 3-quart slow cooker; stir well. Add chicken and broth.
  • Cover and cook on low setting for 5 hours.
  • Serve and Eat. =).

3 medium potatoes (about 1 lb), cut into 1 1/2-inch cubes
2 cups baby-cut carrots
1 package (8 oz) fresh whole mushrooms, each cut in half
2 packages (20 oz each) boneless skinless chicken thighs
1/2 teaspoon salt
1 teaspoon instant chopped onion
1/4 teaspoon garlic powder
1 tablespoon tomato paste
1 jar (18 oz) roasted chicken gravy
1/2 cup dry white wine or water

Steps:

  • In 4- to 5-quart slow cooker, toss potatoes, carrots and mushrooms. Arrange chicken on vegetable mixture. Sprinkle salt, onion and garlic powder over chicken. Stir tomato paste into jar of gravy. Pour gravy mixture and wine over all.

Slow Cooker Chickpea, Red Pepper and Tomato Stew image

This easy vegan stew is inspired by romesco, the Spanish sauce made from roasted red peppers, tomatoes, almonds, garlic, olive oil and vinegar. Here, those flavors come together in a stew that pulls from the pantry, with fast prep and little waste. Instead of stock, this stew relies on the thick liquid from the canned chickpeas, sometimes called aquafaba. And the marinating oil in jarred sun-dried tomatoes is often delicious, augmented with herbs and vinegar. Give yours a little taste to make sure you like it, and then throw that in, too. (If you don't like it, make up the difference with regular olive oil.) The smoked almonds on top are key, adding necessary crunch and richness, so be generous with them. (If you would like to make this stew on the stovetop, just sauté the onion then add the remaining stew ingredients and simmer until the flavors are blended, about 30 minutes. If using a pressure cooker, you can use this pressure-cooker version of the recipe.)

Steps:

Steps:

  • In 3 1/2 to 4-quart Crock-Pot® slow cooker, combine chicken, cannellini beans, kidney beans, tomatoes, celery, carrots and garlic; mix well.
