- In a large skillet over medium-high heat, cook ground beef and bacon; drain well and transfer to the slow cooker.
- Add onion, all beans, brown sugar, ketchup, vinegar, and mustard. Mix well, cover, and cook on HIGH for 4 hours or LOW for 8 hours. Season to taste with salt (I like 1 teaspoon).
- Preheat oven to 350 degrees. In a large skillet over medium-high heat, cook ground beef and bacon; drain well and transfer to a 2-quart casserole dish.
- Add onion, all beans, brown sugar, ketchup, vinegar, and mustard. Mix well, cover, and bake until heated through, about 45 minutes to 1 hour. Season to taste with salt (I like 1 teaspoon).
- In a large Dutch oven or stock pot over medium-high heat, cook ground beef and bacon; drain well.
- Add onion, all beans, brown sugar, ketchup, vinegar, and mustard. Bring to a simmer and cook until heated through, stirring occasionally, about 20 minutes. Season to taste with salt (I like 1 teaspoon).

These Slow Cooker Calico Beans are a fast, frugal and delicious dinner that the entire family will love! They can be cooked in the Instant Pot or the oven as well!

- In a large skillet or in the bottom of your Instant Pot using the "saute" button, cook the bacon for 2-3 minutes. Add in the beef and onion and cook until the meat is no longer pink, then drain.
- Combine the beef mixture, bacon, beans, brown sugar, ketchup, vinegar, mustard and salt in a slow cooker or in the Instant Pot.
- For the slow cooker, you can cook on high for 3-4 hours, or low for 6-8 hours.
- For the Instant Pot, you can also cook on low all day OR use the chili/stew button and cook on high pressure for 15 minutes.
- If you want to cook in the oven you can also spoon the mixture into a greased 2-qt. baking dish. Bake, uncovered, at 325° for 45-60 minutes.

SLOW-COOKER BLACK BEAN SOUP
Start your slow cooker in the morning and by dinnertime, you'll have deeply spiced black beans that just need a quick blend to become a velvety and vegan black bean soup. While not essential, a smidgen of baking soda helps the beans soften so they end up almost fudgy. Blending some of the beans with their liquid gives the soup body; for a very smooth soup, purée the whole mixture. A little vinegar and a flourish of toppings keep it from being one-note. Leftovers will thicken overnight, so thin as needed with water or turn them into refried beans.

- In a 5- to 8-quart slow cooker, combine the beans, onion, garlic, chipotle chile and sauce, cumin, bay leaves and/or oregano, and baking soda, if using. Add 6 cups of water and 1 teaspoon salt and stir to combine. Cover and cook on low until the beans are tender, 8 to 10 hours. Taste more than one bean to ensure they're all cooked through; they should also flatten without much effort when pressed between your fingers.
- Remove and compost the bay leaves. Transfer the onion, garlic and chipotle chile to a blender or food processor, along with about 2 cups of the beans and broth. (You can purée more or less of the soup, depending on desired consistency.) Blend until smooth. Pour puréed soup back into the slow cooker, stir in the vinegar, then season to taste with salt.
